My Muffin Creation

Last night my hubby and I watched Law Abiding Citizen. What an intense movie. Eeek! I felt like something like cool, but also chocolaty for a snack during the movie so I sliced a navel orange and made a Cocoa Camino dark hot chocolate: IMG_0659

I had some trouble falling asleep last night because I was throwing ideas around in my head for a good recipe to use up some of the avocados I bought at a reduced price last night. Then I had trouble sleeping because I just wanted to get out of bed to make what I thought of. You know you’re a food blogger when….:) Anyways, below is my recipe for what I think are the BEST damn muffins ever. I reasoned that any recipe calling for mashed banana could be done using mashed avocado instead. It was a risk….the muffins could’ve bombed in a bad way….but it all came together just like I had imagined it would. Check it out: IMG_0667

Dark Chocolate Chip Avocado Muffins

Makes 12 dozen

  • 1 cup WW flour
  • 1/2 cup sucanat
  • 2.5 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup oats
  • 1/4 cup Egg Beaters (or 1 egg, beaten)
  • 1/2 cup unsweetened Almond Breeze (or dairy of choice)
  • 2 ripe avocados
  • 1/2 cup dark chocolate chips IMG_0666
  1. Heat oven to 400*
  2. Combine flour, sucanat, baking powder, baking soda & salt
  3. Stir oats in
  4. Put avocados, egg & milk into food processor or Magic Bullet and pulse until smooth
  5. Add to dry ingredients
  6. Stir in chocolate chips
  7. Fill greased muffin tins 1/2 way and bake for 20 minutes

Look at that!! My hubby sucked back 2 before I told him about the avocado (which he supposedly hates) and he loved them. DD had a friend over and they each enjoyed one, too. Aside from a slight green hue, you’d never know that there’s avocado in them because you can’t taste them at all. ***Note***I used the Sucanat for the first time in this recipe and I gotta tell you that it scared the heck out of me. To be quite honest, it smelled like ass and before the muffins were cooked, it tasted bad, too. I was so relieved that everything turned out OK because I thought the whole recipe was gonna be crap because of it. Please share with me your feelings on Sucanat!

After all the muffin excitement, I did eat a fabulous breakfast. IMG_0664

This is a batch of Hungry Girls newest pancake recipe and it was awesome! Just before baking them off you stir in 2 tbsp of warm jam. The recipe called for strawberry, but I used this Crofter’s Superfruit blueberry:

I saved the fresh berries for the top with a drizzle of maple syrup. IMG_0663

The kids both had friend over until 2pm so I took advantage of them being distracted and gave the kitchen a good scrub down. Lunch was light as the pancakes really filled me up. I ate a muffin (of course) and some blueberry cottage cheese with Bare Naked granola on top: IMG_0670

I was a little peeved about the cottage cheese because I thought I picked up plain. This was really sweet. Meh…c’est la vie.

Once our little visitors left, we ran out for a few hours to run errands. Once back home I whipped up a quick, yet great, dinner….subs! My hubby and the kids had meatball subs which DS declared better than Subway and Caesar salad on the side: IMG_0674

I had a huge monster packed with baby spinach, arugula, red pepper, roasted red pepper, kalamata olives, turkey pepperoni, hot pepper rings, a LC cheese wedge and honey Dijon dressing. IMG_0676 I also had a side salad but was too stuffed to eat it. IMG_0675

Please take note of the bread I used for our subs. Doesn’t it look great??? I will be doing a full review in a few days!

We bought “Where The Wild Things Are” today so we’ll be watching that in a bit. Other than that, my day is pretty much accounted for! What did you do today?

  3. Hey girl! Gosh, have I missed your posts! Great job on the muffin recipe! I love avocado...so delicious! I had oodles of them this week (more on that to come!) Hope the rest of your weekend is just as fabulous. Tomorrow is going to be a HUGE catch up day for me. I'm so behind on blogs & laundry=yikes!

  4. I do that ALL the time with recipes--toss and turn, then I have to get up to write it down--oh the joys of foodies :-) Glad they were a success! Avacados are SO rich in nutrients--love it!

  7. Wow the muffins look great, love the avocado add in there!! Too funny your hubby doesnt like avocados, glad he loved the muffins, but Im sure the avocado taste was not strong in those!

    Oh I want to see Where The Wild Things Are, I think Im going to buy that too!!

  9. Krista! This recipe looks fab!!! I'm pretty sure I paused at the cross sectional photo for a good 30 seconds as I imagined just how amazing they tasted with the avocado!

    I can totally relate--no room for real/savory food but there's DEFINITELY room for a sweet :)

  16. Is there anything avocado can't do? it's definitely a current obsession of mine. I will have to try it out in muffins - I'm all about using it in my smoothies right now :)
