I hope it's a beautiful and sunny where you are as it is here. The temps are still pretty cool, but after a pretty drab and sunless winter, I welcome the sunshine! I'm just coming off a 3 day hockey tournament weekend; the last of the season and finally have some time to post a day of eats. I took these photos last week so it's about time I get on it!<br />

I find that I've been mixing my breakfasts up quite a bit lately. If you've been reading for a while you'll remember that I ate oats every. single. morning for years. These days oats are reserved for weekend mornings. Not sure how that happened, but it did! So, so good! You know I'm crazy for coconut! LOL I try to eat some fruit in the morning, say around 10-10:30 as a light snack. These grapefruit sections in a little cup have been going down real easy the past few weeks:<br />

I love me some grapefruit but am so lazy about actually peeling one for myself! I just hate all the pith and usually can't be bothered which makes these "all the work is done for me" cups perfect! <br />

I still hit the gym on my lunch hour, but that has switched up, too. I use to be all cardio, cardio and more cardio, but<b> <a href="http://kristaskravings.blogspot.ca/2012/08/whats-been-going-down.html" target="_blank">since I injured my back last May</a> </b>I've been focusing a bit more on stretching. My time in the gym is usually split like this; 25 mins either walking on the treadmill or the elliptical, 10 mins of light weights and 15 mins of stretches. My body appreciates the variety!<br />

On this particular day I went out for lunch with my boss. On my plate was a roasted red pepper & goat cheese sandwich on GF bread with a side of the best ever sweet potato fries!<br />

Lastly, dinner! My kids love pasta so I'd say we eat it once a week for sure. I always make myself a gluten free noodle, but the sauce is the same for the four of us.<br />

These were rice noodles, but I like corn and quinoa versions, too. Parmesan cheese and lots of hot sauce are a must on any pasta dish of mine! <br />

Those are all the photos I took although I can pretty much guarantee that I also ate either an Activia yogurt or a handful of corn tortilla chips before I went to bed! <br />

Happy Valentine's Day!! I should really be posting a "red" recipe today, but I have a lovely "green" one instead!<br />

I have to say that one of my pet peeves is buying a bundle of an herb for a recipe that calls for a tablespoon or so, chopped. Nearly every time 99% of the bundle gets wilted or crunchy sitting in my fridge before I can think of a creative way to use it. Last week I made a curry dish that called for some cilantro. Determined not to let it all go to waste, I immediately separated and washed the whole lot of it and gave it a good whirl in my salad spinner.<br />

<b>BEAUTIFUL</b>! Using my method for keeping greens from the garden fresh in the summer, I wrapped the cilantro in a clean dish cloth, popped it in a baggies and popped it in the fridge. At this point I was still unsure what to do with it all! <br />

Fast forward a day or two and there I was, chugging along on the elliptical at the gym at work, watching <a href="http://www.jamieoliver.com/news-and-blogs/news/15-minute-meals/" target="_blank">Jaime Oliver</a> cook up some of his wicked 15 minute meals. And what type of condiment did he made? Why basil pesto! The light bulb shone bright above my head and I knew I would be making cilantro pesto just as soon as I got home. :)<br />

I'm sure there are many cilantro pesto recipes out there, but here's what I did:<br />

-1/2 cup of walnut pieces<br />
-3 crushed garlic cloves<br />
-1/2 freshly grated Parmesan cheese<br />
-1 tbsp of lime juice<br />
-1/2 cup of extra virgin olive oil<br />
-salt & pepper to taste<br />

*add first 5 ingredients to a food processor and pule until all is well combined<br />
*add EVOO, S&P and set food processor to low, allowing ingredients to combine until you get to your desired consistency.<br />

*Makes 1 cup<br />

I like mine a little "chunky" per se, but you get to decide what is best for your taste buds. :)<br />

I have no picture, but I used half of mine as a topping for a pork roast. It was wonderful! I actually froze the other half for a future meal. I plan to use it as a sauce with pasta and grilled chicken breast. Yum!<br />

So there you have it. I know cilantro isn't for everyone, but if you do like it, give this a try!<br />

We had planned a nice dinner out, but one birthday meal turned into 3! It's all good. We don't eat out often and all the meals were thoroughly enjoyed. It all started with lunch on Saturday. Sarah was in a volleyball tournament and we had gone to watch one of her games, which wound up starting abut a 1/2 hour late. This got us to the mall to have Noah's skates sharpened for an afternoon game over the lunch hour. While we waited for the skates we hit up Thai Express for some <b>shrimp Pad Thai</b>:<br />

At any given time I have 3-4 laying around the house for me to read. One of my favourites is <b><a href="http://www.chatelaine.com/" target="_blank">Chatelaine</a></b> and it was this magazine that I was reading the other night when I came across a recipe for <b><a href="http://www.chatelaine.com/recipe/stovetop-cooking-method/sweet-condensed-milk/" target="_blank">homemade condensed milk</a></b>. <br />

These were a big hit. Fluffy clouds of coconutty goodness. I never realized how easy it was to make macaroons! LOL One of the other ideas for the condensed milk was to mix it with equal amounts of water and freeze it in ice cube trays and use it in iced coffee. That would be a good summer time treat! <br />

Let's get started! The first thing I do in the shower is wash my hair because I like to let the shampoo sit while I do my face, shave, exfoliate, etc.. This is done every other day or my hair gets too "poofy". I also alternate between 2 awesome shampoo's! <br />

The Moroccan Oil shampoo is super moisturizing and really helps with a my frizz. However, it does not come cheap and I have to purchase it through a specialty store which is why I alternate it with the Garnier Fructis Fall Fight. This drug store find is MUCH easier on the wallet, smells wonderful and has truly helped with the amount of hair I lose after each shower. I noticed a difference within a week of using it.<br />
<br />
Next up is my face. I've always used an exfoliator in the morning and my hands down favourite is <a href="http://www.aveeno.ca/" target="_blank">Aveeno Fresh Essentials Daily Scrub</a>:<br />

After I exfoliate, I use another coconut scented product; <a href="http://www.bathandbodyworks.com/" target="_blank">Bath & Body Works</a> <b>Coconut Lime Breeze</b>. <br />

This brand of body butter leaves my skin super soft all day long. And the final step, just before I apply my make up, is to use <b>Garnier Skin Renew</b>.<br />

<b>Ingredients:</b><br />

12 slices (1 loaf) Sun-Maid cinnamon swirl raisin bread<br />
2 Tbsp melted butter<br />
3 cups 1/4 inch diced tart apples (2-3 medium apples)<br />
3 tbsp granulated sugar<br />
1/2 tsp grated fresh ginger<br />
1/4 cup packed brown sugar<br />
2 tbsp cold butter, cut in pieces<br />
vanilla ice cream<br />

<b>Directions:</b><br />
<br />
Preheat oven to 325*F (160*C). Brush 12 muffin cups with melted butter. Press one slice of bread into each muffin cup.<br />
Combine diced apple, sugar & ginger. Divide evenly between bread cups, mounding the top.<br />
Blend together brown sugar & butter with a fork. Crumble over apples.<br />
Bake until apples begin to soften and the bread is toasted, about 25 min.<br />
Serve each apple cupcake warm or cooled topped with 1 scoop of vanilla ice cream.<br />

After many years of going back and forth, I finally went out and got the tattoo that I've wanted to represent my family. It took a long time for me to settle on what....and where....I wanted this tattoo. I always knew that when the right idea hit, I would commit asap. And that's exactly what happened. <br />

When I went into the tattoo "shop", all I knew was that I wanted 3 butterflies showing some type of movement. The artist and I worked together to come up with what you see. Here's the story behind it...<br />
<br />
It all starts with the lily, which was the main flower in our wedding and represents Jason & myself. The 3 butterflies are the kids and are done in their birthstone colours. So the blue butterfly represents Braeden, who was born sleeping on Dec 2, 1996. The green butterfly is Sarah, born in May and the red butterfly is for Noah, born in January.<br />
<br />
Did it hurt? Some areas were definitely tender, but as a whole, not too bad! It took the better part of 3 hours, but the time went by super quick! And I am thrilled with the end result! <br />

checking every so often that the liquid hasn't dried up. Add more fluid if

pepper pieces, S & P and basil. Cover & cook for another 15 minutes.

as needed so they stand straight. Fill with about 1/2 a cup of lentil/rice

Happy first of November! Not sure what the weather is like where you are, but we've had rain for the past 9 days straight. Whenever I feel like complaining about that I remind myself that we're fortunate where I live that we only got the "tail end" of Hurricane Sandy. My heart goes out to all who has suffered serious losses....<br />

The culmination of dark skies and damp temps have had me craving comfort foods something serious. Usually I pull something out of the freezer for dinner in the morning but forgot to yesterday with the chaos of getting costumes & make up on for the kids. All day at work I was mentally going through my food stock trying for figure out what to make for dinner that was fairly quick, yet hardy. My mind kept going back to the potatoes I hadn't used yet and before I knew it, a recipe was brewing in my head!<br />

Now, I'm positive I'm not the first person to come up with a potato soup recipe like this, but I thought I'd share how I made it seeing as it was a HUGE hit with the fam! In fact, there was barely a cup leftover when all was said and done. That, my friends, is a successful meal at my house! :)<br />

* 1/2 cup of chopped chives<br />

<u>Directions</u><br />
<u><br /></u>
1. In a large pot, cook bacon until crisp. Remove with a slotted spoon and drain on a paper towel. Set aside.<br />
<br />
2. Add onion & garlic to bacon drippings and cook until softened, about 5-7 minutes.<br />
<br />
3. Add the potatoes, thyme, chili powder, salt & pepper. Cook for 10 mins letting the potatoes brown slightly.<br />
<br />
4. Add the broth. It should cover your potatoes. Let boil, reduce heat and cook until soft.<br />
<br />
5. Hit up the mixture with an immersion blender until smooth, or, if you prefer, a bit chunky. Add some water if you find it's too thick.<br />
<br />
6. Stir the milk in and bring back to temperature. Don't let it boil as the milk may separate on you.<br />
<br />
7. Serve with bacon pieces, cheddar cheese & chives.<br />

Just a fun little post about 5 random things going on right now......<br />
<br />
1) There are NO extra curricular activities happening today! No hockey games/practice, no volleyball, no dance....I'm looking forward to the work day being over so we can enjoy a family pizza & movie night!<br />
<br />
2) I made Brie and smoked raspberry chipotle stuffed chicken breasts last night. They turned out amazing but UGLY (!!) so I didn't take any photos! LOL I simply cut a slit through the bone in/skin on breast and filled it up with some smoked raspberry chipotle sauce and a thick slice of Brie. I baked them covered for 45 mins, uncovered for 15 mins and then they got a quick hit under the broiler to toast them up. <br />
<br />
3) While the chicken baked we got ALL the leaves in the front yard raked up. Holy smokes, were there ever a lot more piled up then I originally thought! However, it was a gorgeous day and they're calling for rain and cold for the next 5 days straight so it was the perfect time to get it done.<br />
<br />
4) Jason and I are completely obsessed with Starbucks Caramel Apple Spice drink this season. It's actually bordering on ridiculous. Our only saving grace is that there is not a Starbucks too close to our house! ;)<br />
<br />
5) It's currently raining pretty hard outside and the temps have dropped since this morning. In order to stay on the positive side of the fence, I keep reminding myself that it could very well be snow. "Snow", by the way, is a swear word in my eyes! LOL<br />
<br />

Meet Spooky! I found this little fur ball living under my parents neighbours deck with her Mom. Over the course of a week or so MY Mom noticed that HER Mom wasn't coming around too much anymore and with the nights becoming cooler and cooler, she took her into the back porch. Thus started a life of luxury for the little miss as my parents soon decided she was way too cute to go to the local shelter and gave her a forever home.<br />

Sarah decided not to run this year; she's involved in volleyball and dance, however Noah finished 6th out of 105 kids running for our city's school districts! ROCK STAR!<br />

We went on a road trip to <a href="http://tourism.kingstoncanada.com/en/" target="_blank">Kingston</a> this past weekend for a hockey tournament. It's about a 3-3.5hr drive east of where I live. The further east we got, the prettier the leaves!<br />

As for the hockey part....the boys played phenomenal! They were in first place going into the semi's and lost in a heartbreaker. It was tied 1-1 after 5 mins of overtime and they ended up losing in a shoot out. It was an extremely exciting, yet stressful game! Noah won "Player of the Game" for the first game they played. He was quite proud!<br />

The kids have been sitting on their rumps while we've been at work so the first thing we tackled was a family hike. At 13, Sarah been a bit of a challenge to get out, but once she was there she cheered up. Teenagers!!<br />

And it wouldn't be summer without a trip to <a href="http://www.canadaswonderland.com/" target="_blank">Canada's Wonderland</a>! Now, I wasn't able to go on most of the rides, but I did manage a few. I've loved this place since I was a kid. We'll be heading back sometime this week because we have season passes and they have a great water park that the kids love.<br />

Just look at all that fabulous meat & produce!!! I was in heaven, to be sure. We came home with some bacon wrapped beef tenderloin, fresh snapper, sausages, peaches, kale, jam, Schwarma marinade and some of those fresh ravioli from the first picture. They're stuffed with crab & ricotta, btw...<br />

Bye for now!!Kristahttp://www.blogger.com/profile/14597868827300760281noreply@blogger.com3tag:blogger.com,1999:blog-2669101668607774803.post-30220232105002287322012-08-04T16:58:00.001-04:002012-08-04T16:58:29.947-04:00What’s Been Going Down<p>Hello?  I wonder if anyone is still out there seeing as I’ve been gone so long!  I did want to pop in with a bit of an explanation for my absence.  Although I’ve still been reading blogs and trying to comment as much as possible, <a href="http://www.kristaskravings.blogspot.com" target="_blank">Krista’s Kraving’s</a> has fallen by the wayside. :(  Since the end of May I’ve been struggling with some back/neck issues that have made me pretty uncomfortable.  Especially when sitting at the computer for long(er) periods of time.  When this first started I didn’t really know what was going on with me.   My arms were going numb, my upper legs were weak, I pretty much always felt off balance, almost passed out a few times and just going up the stairs was enough to exhaust me.  I ended up at the ER once scared out of my mind (which didn’t help any).   Needless to say, anxiety set in pretty bad.   After an MRI of my brain to check for lesions (which came back clear, AMEN!) and LOTS of blood work (which tested for things like Lupus, rheumatiod  arthritis, thyroid, Lyme Disease to name a few) we discovered that 1) my vitamin B12 was low and 2) the muscles in my back and neck were tight to the point of pretty much constant spasms.  The end of May into the first part of June was a really dark time for me mentally.  And to add to the stress, in the last 3 weeks of June we lost 3 friends and the saddest of all, my father in law.  It got to the point where too much was being piled on and I could feel myself hitting my breaking point.  In the last month or so, intense physio 2 times a week and ART (active release massage therapy) once a week have been a TREMENDOUS help and I finally feel like I’m coming back to myself.  For a while there it was all I could do to get through the day.  Never mind cooking, baking, blogging, etc!  I’m slowly getting back into my “normal” routine which feels SO good!  Although I’m restricted somewhat when it comes to activity, I’ve been walking a lot and this past week was able to tour around <a href="http://www.canadaswonderland.com/" target="_blank">Canada’s Wonderland</a> and the beach with the fam.  It really is amazing just how much our muscles control our bodies….and not just in movement.  I’ve learned that they can play a roll in causing anxiety, over active bladder, heart burn, jaw pain, racing heart and so much more.   Crazy stuff, I tell ya!</p> <p>Anyways!  Sorry for the ramble….but at least now you know what I’ve been up to, right?  I also want to put out there that I do quite often update my Krista’s Kraving’s <a href="https://www.facebook.com/kristaskravings" target="_blank">Facebook page</a>.  I’d love to see you over on that side of the world, too!</p> <p>Bye for now!</p> Kristahttp://www.blogger.com/profile/14597868827300760281noreply@blogger.com7tag:blogger.com,1999:blog-2669101668607774803.post-7329846973329263852012-05-10T14:13:00.000-04:002012-05-10T14:13:54.554-04:00Paula Deen's Turkey & Black Bean BurgersIf you've been reading<b> Krista's Kravings</b> for a while you'll know that I hit the gym at the office each day on my lunch hour. And although my fellow gym buddies think it's slightly odd to watch the <a href="http://www.foodnetwork.ca/" target="_blank">Food Network</a> while working out, it's my favourite kind of TV to watch! I can't tell you how many dinner ideas have been born while watching Jamie, Giada, Rachael,Paula, etc. So as it happened, last Monday before leaving for work I pulled some ground turkey out of the freezer for dinner. I really had no idea what I was going to make with it, but figured inspiration would hit at some point through the day. Off I went to the gym at lunch, hopped on the elliptical, turned the TV on and there's Paula and Bobby getting ready to make <a href="http://www.foodnetwork.com/recipes/paula-deen/turkey-black-bean-burgers-with-corny-salsa-recipe/index.html" target="_blank">turkey & black bean burgers</a>! BAZINGA! (As Sheldon would say) Dinner was born.<br />

I pretty much followed the recipe where the "main" ingredients are concerned. I mashed 1/2 a can of kidney beans in a bowl then added the ground turkey, crushed tortilla chips and chili powder, oregano, S&P. I divided the mixture into 4 even portions (these were pretty big so next time I'll make 6) and formed them into patties. I actually let them rest, covered for about an hour, because I had to take Sarah to dance class. I don't think this really makes a difference, though! To prepare them I simply sprayed a pan was a light mist of EVOO and cooked them over low heat for 5-6 minutes a side. I served mine up on toasted GF bread with marbled cheddar, tomato, lettuce and Dijon mustard.<br />

These were GREAT! Even picky Mr. Noah gobbled his up! He made me laugh at one point when he noticed the beans. He says "Hmmm potato!" LOL Whatever he thinks as long as he eats, I say!<br />

How was everyone's weekend? Mine was busy yet FUN! On Saturday Noah's soccer team was in a local tournament which had them competing in 2 games. They tied & won respectively. He also had a ball hockey game and a hockey try out. At the end of the day, as I was running him a nice bath, he informed me that every bone in his body hurt. I reminded him that we tried to talk him out of one of the hockey time slots but he insisted on playing. He then looks at me all matter of fact and says that just because he is sore doesn't mean that he was complaining. HA! His soccer team also played a game Sunday morning but lost so they were put out of the tourney. Bummer for the boys, but that meant I had the rest of the day to chill....as did he! Moving on now to the meaning behind the title.....A few months back I was watching <b>Jamie Oliver</b> on the Food Network was I was huffing it on the elliptical. One of the side dishes he made was a simple, quick <a href="http://www.foodnetwork.ca/recipes/superfast-beef-hash-jacket-potatoes-goddess-salad-lovely-butter-beans--bacon/recipe.html?dishID=11977" target="_blank">"baked" bean</a> recipe. I've made this many times since, especially when I'm in need of a change from rice/quinoa/mac n cheese (that last one is for the fam). On Friday I finally remembered to get my camera out and photograph the process! So; here's how I make it! (You can just click on the link to see the original....remember; this is NOT my recipe!)</div>

1) Saute 4 slices of bacon. I normally use reduced salt bacon because that's what I buy for regular use....as in bacon & eggs. Cook the bacon until it's just about crisp. At this point it's up to you if you drain off the drippings or not. Add 2 chopped tomatoes to the pan and stir it up...</div>

I let this cook down for about 5 minutes before adding a 19oz can of white kidney beans, liquid and all. I'm sure you could use whatever bean you'd like here. Note that I'm not using the "butter beans" that Jamie uses...</div>

Let simmer over low heat for 15-20 minutes. The bean liquid will turn into a delicious thick & flavourful sauce. This batch was paired with BBQ steak, but in my opinion, the beans stole the show!</div>

You can see here how the sauce really thickens up quite a bit. As far a spices go, I usually just add some pepper and chili powder, but it's easy enough to play around with the flavours you like.</div>

I've only had this a few days and have been using it on my hands at night. They're already soft! The reason this cream has seen hand action only is because I'm still using my next favourite product on the rest of my body:</div>

I bought this "scuba gear" at the Dollar Store. The kids (and Jason) used it almost every day. It was by far the best $4.00 I spent on item for the trip! LOL<br />

I'm hoping to get back to blogging soon. I miss posting, but have still been keeping up with all my favourite bloggers! Truth be told, my life just isn't that interesting right now. Working and driving the kids around doesn't really make for exciting reading material, ya know? Noah's hockey season,which is a huge time commitment, is pretty much over until September so I anticipate more free time to dedicate to Krista's Kraving's. Hope you'll all still be there when I get back on track!!<br />
