What’s For Dinner?

I finally spent some time downloading all my pictures and realized I had quite a few dinner photos on there so I thought I’d do a post focusing on what’s been on my dinners plate lately.  Here we go!
I tired my hand at a quick Kung Pao Chicken recipe that I found in a magazine (I think it was Chatelaine).IMG_5342   From what I remember, this dish came together super fast!  I opted to sub out the chicken for tofu seeing as I had a block in the fridge.  And I served it over pasta for greater kid appeal.  :)IMG_5343 The next day I mixed peas and corn into the leftovers and took them to work.IMG_5350  One night DD was away for dinner so the boys and I has cheese waffles (I just used a basic Bisquick mix and added 1 cup of grated marble cheese), eggs and broccoli:IMG_5408 And from my Clean Eating Magazine, I made cornmeal crusted sole fillets,  paired with corn and roasted sweet potatoes!IMG_5410 The day after I did groceries last week I made a massive stir fry.  As well as chicken, there was broccoli, red onion, green onions, snow peas, bell peppers and mushrooms.  I made a simple sauce with soy sauce, hoisin, dry sherry, OJ, ginger and garlic:IMG_5449 And there was also Mu Shu Pork with a side of basmati rice:IMG_5466 We had pasta for dinner the other night with one of my favourite, quick sauces; tuna.  Simply sauté onion and garlic in olive oil, add 2 cans of tuna, a can of diced tomatoes, a small can of tomato sauce, capers and parsley.  Bring to a simmer and you’re good to go.  This time I also added 2 small, diced zucchini:IMG_5469 And the last 2 meals?  Curried chickpeas with rice and roasted chicken breast, mixed veggies and rice: IMG_5471 IMG_5484

Krista-Fest 2011

Hi!  How has everyone been holding up the past week?  I’ve been great!  I’ve been sitting here wondering where to start with this post, so I thought I’d go with my birthday!  Yes, March 16 saw me one year older.  And I love it!  I truly wouldn’t want to be any other age than 37 right now.  I look back to 17 and I was in a crap relationship and had zero self esteem, I look back to 27 and was Mom to a 3yr old and 2mth old, which was wonderful, but I love their ages now.  Yes, 37 is GOOD!  :)  And I was SPOLIED!!  My hubby bought me this beautiful necklace:IMG_5375  And the fam took me out for dinner to Milestone’s and a movie; Mars Needs Moms (my choice) the weekend before.  For dinner we started with balsamic bruschetta;IMG_5392 then I had a chicken masala dish over jasmine rice:IMG_5393 and my hubby had a seafood meal, also served over rice:IMG_5394 .  The food was just OK, but it was great to be out all together.  Here’s me and my girl!IMG_5388   The movie was really cute and projected an amazing message to kids.  Lord knows I got an extra tight hug before the kids went to bed that night!  On the actual day of my birthday DS had a soccer tournament, but I’ll get to that in another post.  Between the 2 morning games a group of us went out for breakfast to a popular breakfast joint here in town.  I was feeling a Belgian waffle so I went that route.  This baby came with custard, whip cream and fruit (which I had on the side) IMG_5418 IMG_5419
I got through a good three quarters of that beast before I waved my white flag!  T’was delicious!  My hubby’s plate was pretty impressive. Check it out…IMG_5420    That evening my hubby made us a great Buffalo Chicken Salad from a recipe he found in my Clean Eating magazine:IMG_5426
I think he did a fabulous job!  This is what our plates looked like:IMG_5428 IMG_5427  And of course there was cake!IMG_5429  Last night was a b-day dinner at my parents house. Chuckle chuckle!!  Mom made lasagna which I always pass on…too heavy…but I did enjoy the rest of the meal; asparagus, sweet potatoes, steak, pork tenderloin and lentil salad!IMG_5460 And my sista made me a gigantic chocolate cake!!!IMG_5461 IMG_5464 Krista-fest ended at lunch today.  My boss always takes us gals out for a birthday lunch and today was the day.  We went to my newest favourite joint, a little cafe called The Red Brick Cafe.  My hubby and I discovered this place a few weeks back and haven’t been able to get enough of the place since.  We’ve only been there for coffee and dessert so I was excited to try lunch.  I went with a 1/2 portabello/goat cheese panini and veggies’ with hummus:IMG_5465 
Doesn’t that look like a picture from a magazine???  I’m so proud.  HAHA  It was a great lunch and I’m very lucky to have so many people to celebrate with.  I’m such a spoiled brat!  LOL
So thank you for reading all about my week long birthday celebration!  :)  I’m hoping to get a food recap posted tomorrow or Wednesday.  Now that hockey is done I have some free time on my hands.  Yipee!!!!

Two GREAT Recipes

I wanted to put up a quick post to tell you about 2 kick ass recipes I’ve made in the past couple of days.  The first is one of Erica’s muffin recipes called Vegan Chocolate Chocolate Chip Pumpkin Muffins.IMG_3792 Just check that baby out!  I followed the recipe pretty much word for word but added about a 1/4 cup of cinnamon chips and 3/4 cup of dark chocolate chips.IMG_3791  
I also found that I needed an extra 1/4 cup of water to thin the batter out a bit.   These chocolaty delights are absolutely scrumptious!  I groaned in pleasure after each mouthful.  Try these.  NOW!!   This is the cocoa powder that I used:IMG_3712  
I found it the last time I went to Winner’s.  Yum, yum!
The second recipe I made was for dinner tonight and it was Clean Eating magazine’s Butternut Squash Lasagna.  This is what the photo in the magazine looked like:IMG_3794 And here’s mine! IMG_3798 
Who cares that it’s not as pretty when it tastes SO damn good???  Again, I followed the recipe pretty close except that I didn’t have time to make my own marinara sauce so I used a bottled tomato basil sauce.  IMG_3796 The dish was rather labour intensive….or had the potential to be, but I pre made some of the elements throughout the week in anticipation of making it tonight.  First, I roasted the b-nut squash Monday night.  Second, I sautéed the onions on Tuesday night.   Really all that was left for tonight was mixing the filling and assembly. DS was on the ice for hockey practice until 6:10 which gave me time to get home from work, put it together and cook it for the hour and a bit.  I also had a dense piece of fresh whole grain bread from the bakery with hummus on the side.IMG_3797  
I am SO satisfied right now!!!

Operation Beautiful and A BBQ

Hi lovelies!  Well, here we are at Monday already and I’m back to work tomorrow so I guess vacation is over.  That makes me sad!   We didn’t do as many day trips this year as we usually do, but LOTS of R&R was enjoyed and I truly savoured every bit of it.  Maybe now I’ll get back to some regular posting! 
Friday was a bum day but in a good way.  We made a trip to Costco and I had groceries to do.  Other than that I just chilled.  Breakfast was a new (to me) hot cereal that I bought at Wegman’s: IMG_2974 IMG_2975
Funnily enough, after eating this I read an blurb about it in Prevention magazineIMG_2977 For me, raisins just seem to go well with the flavour of chai so as you can see I added some.  There was also a drizzle of cream.IMG_2976 Lunch was some leftovers thrown in a bowl; steamed broc, a little bit of chicken and cuke slices with roasted red pepper dressing and a bagel thin LC cheese on the side:IMG_2981 Googly eyes!!!  LOL  I bought the LC in the US, but I think I can find this flavour here in “green” packaging.  IMG_2978
We enjoyed dinner outside again!  Grilled pork chops (from Costco…they were so thick that my hubby cut them in half cross wise and we froze the rest), grilled zucchini and a side of cantaloupe.IMG_2983
There were cherries, too, enjoyed while reading the newest edition of Clean Eating magazine. IMG_2984 IMG_2982
I spent the rest of the evening getting food ready for our deck “christening” BBQ!  More on that in a wee bit….when darkness fell we started a fire in the fire pit and sat around chatting about our vacay.  The kids have really been enjoying the later nights!IMG_2989
I had one of DS, too, but I think the little bugger deleted it because it’s not on the camera anymore!  Grrr…
I hit the kitchen as soon as I got out of bed Saturday to finish chopping, mixing and blending.  I finally sat down about 9ish for some eats.  I’ve really been enjoying the bagel thins so I toasted one and topped it off with almond butter and homemade zucchini jam (recipe to come);IMG_2992 Coffee was also a must!IMG_2991
Early in the afternoon DD and I went to the mall in hunt of the new Operation Beautiful book!  I went online and saw that the Canadian release date is August 10, but I was determined so I went to the bookstore and inquired about it,  turns out there were 2 in back, one of which ended up in my greedy hands!!!IMG_2995
Excited much?  LOL  Before I could get it home I HAD to stop to get a picture of me, the book and “Canada”!!IMG_2998
I just noticed that although I randomly picked this sign…AKA, it was the first one we drove by…..it’s actually very fitting as it was taken at the “Food Research Centre”!  HAHA!  I’m just about done reading it and so far I think it’s fantastic!  Caitlin did an awesome job!  The real reason I wanted this book kicking around the house, though, was so that it would fall into these hands…IMG_3002
BINGO!  She actually sat down with it as soon as we got home and I know that some of the notes in there spoke to her because she read a few to me.  She really liked how creative some people were.  We’ve decided to make sure we have post it notes on all all the time so we can leave messages together.   While she read that I ate a late lunch.  IMG_3000

By 4pm I was putting the finishing touches on dinner.  I made a HUGE Caesar salad (of which there were no leftovers!!):IMG_3005
A Hungry Girl recipe called “I Can’t Believe its Not Potato Salad” salad;IMG_3006 I’ve made this one a few times before and it never fails to be a hit.  It’s in the second cookbook; 200 Under 200.  I also made a quick quinoa salad by combining 1 cup cooked quinoa, 1 each red and orange bell pepper, 1/2 cup chopped red onion, 1/2 cup chopped feta, 1/4 cup walnut pieces and to dress it was a mix (I didn’t really measure) of olive oil, white balsamic vinegar, chilli powder, honey, salt & pepper:IMG_3007
My hubby grilled burgers and sausages and some Yves veggie burgers for me.  The next picture shows everything all together, but part of it is in shadow…oops!IMG_3004
I loaded my plate with a burger, quinoa salad and “potato” salad:  IMG_3010 TOOT TOOT!  All aboard the delicious train!!!  LOL  For dessert I made a orange creamsicle cake (recipe to come, too!)

Again, this is something I’ve made before just like this and with different variations.  I haven’t met someone yet that didn’t like it as it’s the perfectly light end to a meal.  Here’s a closer look…IMG_3012

Katie eats these so I knew they would be good!  All in all, everybody had a great time and really enjoyed the ambiance of our new outdoor space!!IMG_3014

It was a late end and DS had an 8am soccer practice that we had to get up for.  Not fun, my friends, not fun.  Long gone are the days that I can survive on 5hrs sleep!  I won’t go through all my eats for yesterday because most of it was leftovers!  Imagine that, eh?  I did enjoy a package of Nature’s Path Apple Cinnamon porridge with a few walnuts before we left for the field:IMG_3015

Oh, yes they did!  I haven’t tried it yet, but I’m sure it’s da bomb.  How could it not be???  Lunch and dinner were odds and ends of the BBQ so I won’t post them again. 
I had meant to get this out last night but the kids were invited across the street for a swim so that became my priority.  I’ll be leaving today’s “fun” for tomorrow’s post so this doesn't get any longer.  Plus, I want to quickly do a post with the zucchini jam and cake recipes for you.
