A Sick Chick

I was up extra early today in order to get to the rink on time to pick my boy up from hockey practice. It was like leaving the house in the middle of the night! I grabbed 2 strawberry pumpkin coconut bites for the road. Too dark for pictures! We were home before 8am so I ate my breakfast then; 100_6808

  • 1 cup water
  • 1/3 cup sunrise blend with quinoa
  • cinnamon
  • pumpkin puree
  • chocolate honey/macadamia butter

DD was still ill so I called us in sick and then tried to get a doctor’s appointment for her. They couldn’t see her until tomorrow so I opted to take her to the walk in clinic and I’m sure glad I did. 100_6809

Ends up she has a throat/ear infection and needed antibiotics. I can’t imagine how much worse she would’ve felt had I waited another day. We made it back home by 10am and she spent the rest of the day laying down watching movies.

The post man did drop off a sweet treat for me! Allie’s Aprican Balls that my BSI recipe won! 100_6812

I was a little nervous that they would be spoiled since they took a bit to get here, but once I was saw ingredient list and how they were wrapped, I knew they’d be OK.

I tried a twist on the kids toad in a hole from yesterday for my lunch today. The urge came from a McMuffin that one of the hockey Dad’s gave me this morning. I didn’t get much more than a bite before my lovely son claimed it! Instead of bread I used a bagel and plopped an egg white into each hole. Unfortunately, the bagel hole wasn’t quite big enough so the egg white didn’t stay put! Meh…tasted just as good! I topped them off with some goat’s milk mozz. Two of Allie’s treats also made it on the plate. 100_6813

The aprican balls were very good. I may have gone back for 2 more, but only I know for sure! :D

I spent most of the afternoon on the computer leaving the house again only to go pick up my new glasses(!!) and DS. I promise some photos of the new eyes when I don’t look so worn out! Sitting around all day can sure make a girl feel frumpy! I did spend some time outside raking leaves and playing with KC. He’s so full of energy in the cooler weather!

Dinner was a big serving of steamed broccoli, a Yves veggie burger with a LC cheese wedge, dijonnaise, ketchup and romaine and some jade grain blend that I had bought a few weeks ago at the bulk barn; 100_6815

The grain blend was very good. This isn’t such a great picture of it but I have some packed for my lunch tomorrow and I’m anticipating better lightening for then. It’s got a very pretty green hue to it. Dessert was another piece of strawberry peach rhubarb pie. I didn’t bother with a photo tonight, though.

Not sure if I’ll be going to work tomorrow. It will depend on if DD still has a fever or not. As much as I’d like to stay home, I’d much prefer DD feeling healthy again! Tonight will be an early night seeing as I was up with the chickens this morning. Hope you all have a great Monday night!

A Bit of This and A Bit of That

**EDITED TO ADD....I had this post ready to go at 7pm but had trouble uploading my photos again. I seem to have fixed the problem now....at 10pm!!**

DD was not feeling well today so I ended up with unexpected time on my hands. Not a bad thing at all! The first thing I did when I got out of bed was bake up a batch of mini muffins. I’m calling them Strawberry Pumpkin Coconut Bites.

  • 1 cup WW flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1/2 cup pumpkin puree (not pumpkin pie filling!)
  • 1/4 cup agave
  • 1 egg white
  • 1/3 cup strawberry yogurt
  • 1/3 cup unsweetened coconut
  1. Combine dry ingredients
  2. Combine wet ingredients (except coconut)
  3. Combine wet into dry
  4. Stir in coconut
  5. Divide batter into a 24 cup mini muffin tin
  6. Bake for 15 mins at 350*

Each bite has 38 calories, .5 g; fat, .8 fibre and 1.1g protein

Once those were in the oven I turned my attention to breakfast for the kids. I was excited to surprise them with something I’ve been seeing on some blogs that brought me way back to my own childhood…..eggs in a basket. Or as my Mom called them, toads in the hole. 100_6777

I can’t believe I’ve been a Mom for over 10 years and have never made this meal for my kids. They were both a little confused at first…LOL…but quickly clued in to what was on their plates. Boy, did the compliments ever pour in! DS in particular was most impressed. 100_6779

I must admit that their enthusiasm was a treat. Next up was my turn to eat. 100_6783

  • 1 cup USAB
  • 1/3 cup kamut flakes
  • cinnamon

The boys went out to the farm without us so DD didn’t infect anybody. She started late yesterday with fever, chills, cough & sore throat. You can be sure that I’ve been keeping a close eye on her today. She seems to be responding well to Advil but it becomes obvious when that starts to wear off. Hopefully she’ll be back up to snuff after another good sleep tonight.

I spent the morning finishing up the laundry, vacuuming the house and raking the front lawn of the never ending leaves. It was sure a nice day for it. I wasn’t back in the house long before the guys came home and it was time for lunch. I made a small stir fry with a yellow and red bella pepper, some tofu and a few tablespoons of Memories of Damascus sauce. That was then wrapped up into a flat out wrap with some goat’s milk mozz; 100_6788

I was still feeling peckish so I ate a small bowl of dry Nature’s Path Flax Maple Crunch cereal; 100_6789

I spent most of the afternoon watching Mystery Diagnosis and playing on the net. DS and I did wander out to take KC for a nice walk. The fresh air felt nice for sure.

For dinner I roasted up a turkey breast, a butternut squash, sweet potato and steamed some green beans; 100_6804

Dessert was a piece of strawberry rhubarb peach pie that the boys picked up from Knapps this morning. 100_6806

There’s a good line up of TV tonight. The Amazing Race AND the season finale of SYTYCD Canada. This means I’m choosing to stay up until 11pm when I need to get up extra early tomorrow for DS’s hockey practice. Not smart, I know, but I’ve never been one to listen to reason! :D

A Condensed 2 Day Recap

Hi everyone! The past 2 days have been jam packed with many different happenings so I’ll be brief with the typing and let the pictures tell most of the story.

Friday’s super b-fast; 100_6731

My pre gym snack amidst much keypunching was this Maple Nut Clif Bar….which happens to be my favourite! 100_6732

Still loving this! I’m thinking it was my last serving that I had stashed in the freezer so I’ll need to make more soon. I saved my nuts for just before it was time to go home because I knew dinner was going to be L-A-T-E;

I got my butt out of work at 4 on the dot, went home to pick up the fam and we hit the road for an out of town hockey game. Traffic was better than we expected and we arrived at the rink in 1hr 20 mins which is about as long as it usually takes to get there. The fam snacked on PB sandwiches on the drive, but I waited until the game started at 6:30 to dig into my own stash; 100_6735

I devoured my super sweet honey crisp apple, but brought the goat’s milk mozz back home. The boys lost….badly. Like 10-1 badly. YIKES! Although there were some good moments, they just seemed wiped out right from the start. Oh, well! :/

We stopped at Mr. Sub on our way out of town for some eats. I got a “big” or foot long veggie on whole wheat with honey mustard. 100_6748

About the only veg I didn’t get was onions (too late for those) and mushroom because they looked fresh out of a can. It’s been a long time since I’ve eaten a sub this big and it was certainly more then enough! When we got back into town my hubby stopped at Tim Horton’s. The kids had ordered cookies and they gave us one extra so I did my duty and ate it up! 100_6749

Mmm, Mmm, good! After that it was home, bed. Night night!

I rolled out of bed shortly after 8 this morning and took a much needed hot shower. I think these cold benches at the rink are going to do my lower back in. I found my Bob’s Redmill 7 grain cereal in the back of the cupboard so that made it into my breakfast bowl today; 100_6752

  • 1/4 cup Bob’s Redmill 7 Grain cereal

  • raisins
  • almond butter
  • chopped peanuts

Can you guess what came next? Yup…HOCKEY! :D This game was in town, though so no hectic highway driving. The boys lost again today…5-1….but played 100% better than last night. DS’s line scored the lone goal with him having an assist. Here he is pre-game, mouth guard and all; 100_6753

Once we were home, and he was showered, we grabbed some lunch. I had the rest of my goat’s milk yogurt (about 3/4 of a cup) with some cranberry sauce and some Nature’s Path Gluten free Maple crunch cereal;

The cereal was very, very good! It was light and airy, but most of all, full of great maple flavour. Definitely in danger of been eaten by the handful if left in plain sight! This cereal gets a 2 thumbs up from me.

HEHE! We hit the mall after eating to get the kids Hallowe’en costumes and DS some pants as all his became “floods” over the summer. DS decided to be Bumble Bee the Transformer and DD went with a mask that she plans to pair with some odds and ends from previous years costumes. I won’t let on which mask she picked, but it’s one of these 3!! 100_6765 100_6761 100_6762

I had a small snack around 4 to tide me over as I met up with my sis for some dinner eats (read on for the deets!) I toasted up an English muffin and topped it with some pomegranate jelly and last night’s mozz slices. That went in the microwave to get all warm; 100_6767

Mmmm…gooey! The jelly and cheese were a great contrast of flavours. I’ll be pairing them up again soon!

So, Lisa and I met up at a raw food cafe that we heard about in our city called WOW Wild Organic Way. 100_6769

It’s just a wee place that’s only open Thursday to Saturday with a small menu. None of that turned us off, though! I actually liked that there wasn’t a HUGE selection to choose from because it made our decision easier. We both went with the “tasty tacos” which included a sun dried tomato paste and guacamole. There was more on there that I can’t quite remember now! The side salad had the most delicate tasting cashew dressing on it! I could’ve eaten a whole plate of that alone. 100_6772

For dessert I choose to get 2 chocolate macaroons and 2 hemp balls; 100_6774

The macaroons were an intense chocolate flavour and the hemp balls were to die for. Lisa though they tasted like cookies & cream ice cream and they reminded me of a really good quality vanilla ice cream. Li got the berry bliss cheesecake which she really liked so I decided to bring a piece home for my hubby. Here’s his de-constructed; 100_6776

He shared a few bites with me and Mom and while they weren’t over the moon about it, I thought it was pretty darn good. All in all I had a great experience at WOW and would love to go back again sometime.

And that wraps up this post. I’m just now snuggling in to catch up on some blog reading while my hubby watches hockey. I hope everybody has had a fantastic weekend so far!!

Wish I was Doing Yoga

The day started out mild and sunny and ended up wet and cold. Urgh. Tis the season, I suppose! 100_6715

As you can see, it’s now dark enough in the morning to warrant the flash. Bugger. Still looks pretty, though, eh?!

I was a little miffed to find out today that for the next 10 weeks on Thursday’s the gym will be “closed”. There’s a yoga class going on in the upper level which I did know about but can’t participate in because the department I’m in rotates lunch hours. Initially, we were going to be able to use the lower level where the cardio machines are, but the committee changed their minds. I ate this Kashi bar while I mulled over what to do during my lunch hour; 100_6717

I decided to make a trip to the bank to get some American moola while the exchange rate is still pretty good seeing as I’ll be doing some State side shopping in November. Then I dropped my prescription off and went home to throw some food into the crock pot. Productive, no?

Lunch was the leftover tofu and kabocha squash from last night. **WARNING** ugly food photo ahead!! 100_6718

Ya just can’t make something like this look pretty, but it sure tasted good! As you can probably tell by the dimness, the clouds had rolled in.

I wore my new trial contact lenses to work today. I’ve been using the Acuvue for a few years, but can’t wear them to work because I get a major headache by noon from looking at the computer so much. My Dr. is having me try the Acuvue Oasys and they worked out OK. No headache, but the screen was still a bit on the blurry side. I’ll wear them again tomorrow and see if it gets any better. I’m hoping my eyes just need to adjust. Anybody have any tips for me??

When I got home from work I had a present waiting for me! Nature’s Path sent me their new gluten free cereals to try! 100_6720

Back to my crock pot dinner. Into the insert I tossed a smallish pork tenderloin, chopped, 1 cup dry kasha, 2 red bell peppers, 2 chopped carrots, 1 can tomato sauce, 1 can each of chickpeas & kidney beans and a can of mini corn cobs. Seasonings included oregano, coriander, chili powder, cumin, salt and pepper. I didn’t measure, just gave each a good shake or 2. I set it on high and washed my hands of it until dinner time. The fam had theirs over pasta, I ate mine With some Goat’s milk yogurt. 100_6727

I had used one of my POM coupons the other day to buy some POM iced tea. I drank some of that with my dinner; 100_6722

It was refreshing and a bit tart. My kids really enjoyed it, too! Dessert was some grapes that I shared with DS… 100_6729

I just got home from a meeting at the school and plan on snacking on some yogurt with cranberry sauce while watching the rest of CSI. And then it’s time for Vampire Diaries! You may not see me around tomorrow. DS has an out of town game that we have to leave right after work for and I’m not expecting that we’ll be home before 9:30pm. A Tired Blogger

Phew! It’s 8:30 and I finally made it to the couch. Hehe! DS had hockey practice from 5:30-6:30 and then both the kids were in the pool at 7pm. Thankfully the rink and pool were in the same facility…and close to the house!

Purr-fect start to the day!

The gym kicked my ass today. I was so not feeling it! I managed 40 minutes on the elliptical, but it felt like 400. Ugh…

These pack a serious crunch! The girl in the cell cubicle next to me must’ve been wondering what I was crunching on!! Much later in the day I ate most of these raspberries; 100_6711

It was one of those situations where it was eat’em or throw’em out. There were a few that ended up in the trash….

We ate a very early dinner. 5pm to be exact! I just heated up a store bought pizza for the fam and for myself I baked up some tofu and served it on a toasted WW Arnold Thin with goat’s cheese mozzarella & sliced cucumber. There was also some kabocha on my plate, but I didn’t end up eating it. 100_6712

The sandwich was awesome!! There was such great texture to it….creamy, crunchy, chewy….mmm…..

Next was hockey, pool then home, snack time and blogging! I made a coconut chai tea and an English muffin with some almond butter and pumpkin butter;

Crappy picture, tasty snack! I just finished that up before starting this post. I do have to apologize for the quickness of this entry, but I am exhausted and have plans to hit the hay shortly. On that note…
