Two GREAT Recipes

I wanted to put up a quick post to tell you about 2 kick ass recipes I’ve made in the past couple of days.  The first is one of Erica’s muffin recipes called Vegan Chocolate Chocolate Chip Pumpkin Muffins.IMG_3792 Just check that baby out!  I followed the recipe pretty much word for word but added about a 1/4 cup of cinnamon chips and 3/4 cup of dark chocolate chips.IMG_3791  
I also found that I needed an extra 1/4 cup of water to thin the batter out a bit.   These chocolaty delights are absolutely scrumptious!  I groaned in pleasure after each mouthful.  Try these.  NOW!!   This is the cocoa powder that I used:IMG_3712  
I found it the last time I went to Winner’s.  Yum, yum!
The second recipe I made was for dinner tonight and it was Clean Eating magazine’s Butternut Squash Lasagna.  This is what the photo in the magazine looked like:IMG_3794 And here’s mine! IMG_3798 
Who cares that it’s not as pretty when it tastes SO damn good???  Again, I followed the recipe pretty close except that I didn’t have time to make my own marinara sauce so I used a bottled tomato basil sauce.  IMG_3796 The dish was rather labour intensive….or had the potential to be, but I pre made some of the elements throughout the week in anticipation of making it tonight.  First, I roasted the b-nut squash Monday night.  Second, I sautéed the onions on Tuesday night.   Really all that was left for tonight was mixing the filling and assembly. DS was on the ice for hockey practice until 6:10 which gave me time to get home from work, put it together and cook it for the hour and a bit.  I also had a dense piece of fresh whole grain bread from the bakery with hummus on the side.IMG_3797  
I am SO satisfied right now!!!

A Few Fails Won’t Stop Me!

I had DS at the mall the other day because he was in serious need of new pants.  Poor kid had to try on 4 pairs from his drawer the other day before he found a pair that fit the length of his leg.  He grew a lot over the summer!  Anyways, while we were there I was on the hunt for a cute pair of black flats for work.  I put him to work helping me search the store to keep him amused and didn’t he find the cutest pair…in deep red!  And half price to boot!  I abandoned my search for black and bought his choice which made his day!  Check’em out:IMG_3624 IMG_3622
They’re Jessica brand from Sears and SO comfortable!  I wore them all day, even on our walks at break with no issues.  No chafing, blisters or discomfort.  I felt like I was wearing my slippers all day.  Just awesome!  I also scored on a great, warm sweater at Old Navy; $50 for $20!!  IMG_3625
This photo doesn’t do it justice.  I felt like I was wrapped in a blanket all day.  That makes me happy!
I took a few hours off work Tuesday afternoon to go watch my kids run in the city wide cross country meet.  DD has been doing this for 4 years and this was the first for DS (they can’t start until they’re in grade 3).  Although I made it and the kids did awesome, getting there and back was STRESSFUL!  First I realized on my way out that my cell phone was dead.  Fail #1.  Then I got in the Jeep and was halfway there when the gas light dinged that it was empty and I had zero time to stop.  Fail #2.  I managed to find a half decent parking spot, get out, find the kids, turn the camera on to take a gazillion  pictures and the battery is flashing that it’s almost dead.  Fail #4.  Fortunately I managed to get some great photos of both of them! DS placed 11th out of about 75 kids and was the first to cross the finish line for the school.  DD place 44th out of 100 girls and was fourth to cross the finish line for the school.  She was bummed because she wanted to place top 20, but I reminded her that every year she improves and finishing the 2km run strong means so much more than just winning.  I’m not so sure that she bought it, but she did cheer up a wee bit.  Here they are crossing the finish line:  IMG_3654 IMG_3647 
So, I don’t think that I mentioned that it poured buckets for part of the time we were there.  UGH!  DS finished first so we ate lunch in the (dry) Jeep then went back to watch DD (who had found shelter with some friends while it rained).  I offered to bring her back to the school (I pass it on my way back to work) but she opted to stay and bus it back with her friends.  DS however, was all too happy to leave with me.IMG_3649   He must’ve been freezing if school sounded more appealing than hanging out with the team!  LOL  My first train of thought was “gotta get gas…FAST!”.  Too bad I was blocked in by 4 school buses waiting to load kids. Fail #5. Oh, yes!  And it gets better because when I finally manoeuvred around said buses and got to the closest gas stations wouldn’t you know that the pumps were in the process of being ripped out?  Fail #6.  I prayed as DS watched with a very concerned look on his face as we managed to make it 10 more minutes down the road to the next station.  Holy Moly!  Seeing as my nerves were frazzled and DS was cold and Starbucks was right there, there was no choice but to make a pit stop.  I had my heart set on a grande NF pumpkin spice misto, but guess what?  They RAN OUT OF PUMPKIN SPICE.  WTF???  Fail #7.  I settled for a grande NF vanilla rooibos latte.IMG_3657
DS warmed up with a hot chocolate, whip, please.  And I finally got him back to school and myself back to work.  What a fiasco!
I have spent a few pleasurable, stress free evenings this week making a few recipes that I’ve read about on blogs.  Namely Erica’s Oatmeal Chocolate Chocolate Chip bars:IMG_3618

Holy yum to both recipes and kudos to the girls for creating such delights!  A word of warning if you try the chickpea one; be prepared to eat the whole batch!!!  :) I even busted out one of my own fall recipes; Banana Cranberry Pumpkin Cake!IMG_3669   IMG_3671

Feelings

I guess I fell off blog earth for a bit there, huh?  I’ve been SUPER busy the past week which has had me going through a plethora of feelings.  I’ve spent part of the time feeling like this:IMG_3604
Our city (approx 100, 000 people) has been cramming 3 years worth of road construction into one season so you can imagine the mess the roads are in.  Trying to get DS anywhere for soccer and hockey, DD to dance and myself to work has been an extreme act of patience….and I don’t have much to start with!  I read in the paper yesterday that the reason for this disaster they’ve made is that the city received government funding for road repairs which needs to be accounted for by March 2011 or the grant is lost.  Sheesh!  I try to keep reminding myself that the roads will be better when this is over, not to mention all the people who are being kept employed.  Happy thoughts, happy thoughts!
I’ve also been feeling very cold sitting at DS’s soccer try outs!IMG_3610
It was only 5*C this morning at 10:30!!  At least it wasn’t raining today, unlike yesterday!  And at least I have multiple, warm layers on.  Unlike my poor son who is in shorts!IMG_3612 IMG_3611
Brrr!  Try outs are now over and we will know next week which team he will play on next summer.  There will be some indoor soccer over the winter with INDOOR being the key word here.  LOL  Oh!  I can’t forget that I was also cold (just not quite so much) at Friday’s hockey practice and Saturday’s hockey game.IMG_3594
I’m skipping practice today on the pretense of staying home to do some housework.  Really, I’ll be spending on a fraction of the time on chores, the rest on blogging!  Shhh!!  Seriously, though….my house is in shambles.  And I have a beautiful pork roast just waiting to hit the oven with some onions, carrots and parsnips.  YUM!
As you can probably guess from my fist photo, DD and I spent some time perusing  potential Halloween costumes.  DD has never been into “girly” costumes.  She’s always gone for the gory, scarier options.  Here are some she tried on yesterday:IMG_3601 IMG_3603 IMG_3599 IMG_3600

HA!  The theme my department at work is going with this year is construction workers.  We decided it would be fitting seeing as the roads are all ripped up in front of the building.  I’ve been put in charge of making up a check off list so that everyone brings something in.  So far I’ve got caution tape, pylons, hard hats, vests….  What am I missing?

Quick, simple, delish.
Well, I’d better get a move on with vacuuming.  *sigh*  Gotta get to it now, though because we’re going to my parents after dinner and then the Amazing Race  and The Glades is on!  What are you up to tonight??
