It's Recital Time!

The day started out so promising, but it was pouring again by 2pm. BOO!! I booked tomorrow and Monday off work so I hope I get some sunshine in there. I had one of my favourite oat combos for breakfast today. Stayed tuned for tomorrow's morning eats as I have something other than oats planned!
-1 cup water
-1/3 cup Quaker oats
-cinnamon, vanilla, salt -banana
-PB2
-carob chips
Ah, heaven! I used up the last of my PB2 so as soon as I got to work I logged on to The Low Carb Grocery to order more. I was ecstatic to see that they now carry the chocolate PB2! You bet I ordered one of each! I also stocked up on Shiritaki noodles and a few other things that I'll share with you when the order arrives. **To all my Canadian readers....if you want to try PB2, this store ships across the country for pretty decent rates!**

Work plodded along. I decided it was time to post my date picture again. :)
This bucket that I bought is almost gone. Mind you, it's lasted me a few months. I'm not going to buy any for a while once this is gone to try to get myself out of the habit of eating them most days of the week. I think too much of a good thing can be....well, too much.

I ran into a bit of a dilemma over the lunch hour. DD needed new nylons for the recital tonight that I forgot about, but I wanted to hit up the gym. Solution? I skipped morning break, hit the gym a little earlier for a 35 minute run then ran to Zellers (like Target) to pick up the tights. Luckily for me, the store is fairly close to my work. The plan worked out beautifully...

The half hour went by wicked fast because I chatted the whole time with a co worker who was on the elliptical. Between the 2 of us there was a lot of heavy breathing going on! *wink* On my way to the store I ate a banana rhubarb muffin;
Lunch was pretty good for a microwave meal! I combined this Lean Cuisine Oriental Ginger Beef Stir Fry...
with some steamed broccoli to bulk it up...
Lunch was served. And yummalicious. A lady I work with was 100% impressed with the fact that I added broccoli to the mix. It's a foreign thought to me that people wouldn't do this, but I suppose that's a bit of tunnel vision on my part!

I scored some melon and grapes from the staff kitchen that were leftover from a meeting, too;
Most days when I download my picture's to the computer I find some funny ones that the kids have taken "behind my back". I don't mind this....I actually find it pretty hilarious. DS would have to be the biggest culprit. Here are a few pictures that I found today...

Dinner was a quickie again tonight. I had a BBQ'd Yves Veggie dog on a WW wrap with smashed LC and avocado. There was also some peach bruschetta going on there;
All wrapped up with a side of fruit;
Dessert saw me eating some of this Caramilk treat the the boys bought me;

Now I must jet as it's time to get the girl prepped and ready for show time. She has to be at the theatre for 6:45 and the show starts at 7:30. I love going to the recitals....they're a ton of fun! Have a great evening!

Rainy Wednesday

Whoa, it was a wet one today! The skies sure did open up, but the weekend is looking good and that’s all that matters. A bonus to all this rain is that my veggies and flowers will get the drink they need to give them a good strong start (and I don’t have to stand there with the hose at night)!
-1 cup water

Have I mentioned before how much I love kamut flakes???

Boy, did I ever get busy with rhubarb last night…and I didn’t even bake anything! I stood at the counter for an hour and a half cleaning and dicing it. I ended up with 3 six cup freezer bags full and there’s probably another 10 cups that I left in the fridge that I set aside for future “projects”. I also found a wooden tea box that I forgot we had and decided that it was time to put it back into use! It was bought filled with TAZO tea and now it’s a home for all my STASH tea, as well as some Tim Horton’s Chai and a few TAZO stragglers.
Now my tea is much handier than when it was all in individual boxes. And it looks nice, too!

I ate my dates before the gym today…
I did a longer run today and felt really good. I started out at 5.6mph and bumped it up by 1 every 5 minutes until I got to 6.2mph. That’s the fastest I’ve gone since my ankle issues. I was running a 9.13 minute mile before and it is my goal to get back up to that….slowly. I also did 5 minutes of balance work on the BOSU that I learned at physio last night. Great for the ankle and my core!

So refreshing! The only sucky thing was that I forgot my fork and had to eat it with a spoon. Not easy or fun. I already put a fork in my bag so I don’t forget it again tomorrow. Lunch dessert was a rhubarb square;
Much easier to eat with a spoon! And later on in the day I munched on some of this watermelon;
Somebody left some STASH tea bags in the kitchen at the office this aft. Are they crazy? There were 2 flavours and I grabbed a few of each…duh!
The fam had sausages for supper tonight so I pulled out a Lean Cuisine cannelloni meal for myself. I served it up with a good 2 cups of steamed frozen veggies;
This was GOOD! I really enjoyed this entree and it was the perfect size. For dessert, I had some of this....
It's called "Rhubarb Rumble". It was simple to make and I had all the ingredients on hand. I changed it up a wee bit so here's my version;

-3 cups chopped rhubarb
-1 pkg orange jello powder
-1.5 cups skim milk
-1 pkg of Kraft SF, FF cheesecake flavoured pudding


I completely omitted the crust, dishing up 1/2 cup servings into 6 bowls. I followed all the directions for making it. I'm not 100% sure what I think about this yet. Mind you, it's suppose to sit in the fridge until it sets up so my serving was still pretty runny. I had a scoop of Cool Whip Free on top to make it purdy and all. I'll save my "for real" review until I try it tomorrow! Just an FYI...I ran my version through Spark People's recipe calculator and came up with 59 cal, 0.3g fat and 1.2g fibre. It's a lightweight!!!

Well, lovelies, I'm of to the pool for the kidlet's swimming lessons. You can be sure that I'll be watching SYTYCD when I get back!! Enjoy the night!

A Short Work Day

There was another pile of snow out there when I got out of bed this morning! Actually, when I’m all warm and toasty inside, it looks very pretty!

I bought this new creamy coconut spread last night at Market Fresh and it is to die for.

It’s really creamy with loads of shredded coconut blended in. It made by a company called “Reserva De Minas Natural Foods”. I’ve never heard of this place before, but they are most definitely on my radar now! If your guys ever come across this brand, you must give it a try!


A tablespoon of this delight is only 60 calories, to boot!!

You just know it went into my breakfast today!!! :)

-1 cup water
-1/4 cup Bob’s Redmill 10 grain cereal
-1 Tbsp creamy coconut yumminess


Dinner last night was a Lean Cuisine meal. I had ½ an hour to get home, get organized, eat, and out the door and this Asian Citrus Wild Salmon did the trick!


Skating lessons went very well last night. I picked up a wicked new latte flavour at 7-11 on the way. Blueberry Tea Latte!


OMG…..I loved it! Too tasty. If you’re near a 7-11, go buy yourself one! By the time skating was over, groceries were done and put away and lunches were made, it was pert near 9pm. I grabbed a z-bar and sat down to watch Law and Order:SVU. After that, I was off to dreamland!

Back to today! I made my through this bowl of fruit through out the day. A little in the morning, a little in the afternoon. I was so glad to have some fresh fruit in the house again!

Because I worked so much the first 3 days of the week, I decided to use some of my lieu time and took this afternoon off work. My hubby was home today as his place of employment is down to a 4 day work week due to the economy. Blah. It's rare for us to get any time alone so we took the opportunity today to go out for lunch while the kids were at school. We both felt like Thai, so Thai it was!

Tea, anyone??

Hehe! You can see our reflections in the teapot! Gotta love the retro tables! I started with fresh shrimp rolls. I adore shrimp rolls. They have such a burst of wonderful flavour thanks to the mint leaves. Whenever we go for Thai, I always start with an order of these. At the top of the photo, you'll see my hubby's fried shrimp rolls.

I picked another favourite for my main dish...Mango salad! This time, I added shrimp for some protein.


Awesome. There is just no other words to describe this! I almost finished the whole plate, but some ended up coming home with me.

From there we ran a few errands and then it was time to grab the kids from school. I had to make a trip to Best Buy (which is a 1/2 hour away) because my USB cable for my camera decided it didn't want to fit all the way in it's little slot anymore. After waiting 45 minutes for them while they "tried" to find another cable, I was told that the camera would have to be sent out for repair. UGH! Thank God I bought the warranty on it so it won't cost me anything except the loss of my camera for 3-4 weeks. BOHOO! I guess that is my warning to all of you that you are about to see some crappy food picture's because I'm back to using old Bessy for a few weeks. At least she works!

It was 5:30 by the time we finally got home so I whipped out this meal by Archer Farms that I picked up while at Target before the holiday's.

with a side a veggies.

Two (blurry) medjool dates stuffed with almond butter rounded out the meal for me.



My hubby's birthday is Monday and he's requested lasagna, caesar salad and Caramel Pecan cheesecake for his special dinner. We'll be celebrating tomorrow night so after I publish this post, I'm going to get the cheesecake and sauce made. I'll tackle the lasagna first thing tomorrow morning so that it's ready to pop in the oven when we get home from the charity hockey game. While the cheesecake is in the oven, I plan to do some form of cardio for at least a 1/2 hour....probably in the form of a Wii game.
