Eggs & Allergies

Hi, all! How’ve you been on this fine hump day? I can’t believe it’s here already! Guess that’s what having Mondays off does. I’ll take it! I finally made a great bowl of overnight oats yesterday! I think the trick for me is to keep it simple….not too many flavours.IMG_2632

  • 1/2 cup oats
  • 1 cup USAB
  • cinnamon
  • vanilla chai powder
  • 1 tbsp chia seeds
  • blueberries
  • mocha hazelnut sprinkles

Work was pretty busy, but didn’t keep me from getting my morning snack in! IMG_2633

This was AWESOME! Totally worth the $3 I paid for it. The scent was a deep coffee one and it reminded me of chocolate covered espresso beans. I love those! I’d buy this again in a heartbeat!

I brought my laptop to work again yesterday to do the Shred DVD. Two of my co workers joined in on the fun again! This is turning into a bi-weekly event that I look forward to. I think they do, too!

Lunch was a huge salad. You can see the purple carrots much better this time. I dressed it with a little Renee’s Caesar parm dressing:IMG_2634

This lunch stretched out so long that I didn’t eat my afternoon fruit! I did, however, make myself an iced coffee:IMG_2636

While at Starbucks last Friday night I taste tested their new line of Via Iced coffee and fell in love. They were selling the packages for a dollar off so I snapped one up!IMG_2635

The single serve packets are to be mixed with 2 cups of water and are lightly sweetened. I would normally take a little “milk” in my iced coffee but find that I don’t need it with this. The only downside to drinking this was that it was a little too close to dinner and ruined my appetite. DD and I had hair appointments so I knew I needed to eat something. I’m one of those lucky people who gets heartburn if I let myself get too hungry. I toasted an English muffin, spread some LC cheese, egg whites and hot sauce on top and called it dinner.IMG_2637

Sad looking, but my go-to meal none the less. You might even see it again today! ;) It was past 8pm when we got home and DS somehow roped me into playing some Wii with him. Playing with my little man is humorous because as soon as he starts to lose we have to switch games. He thinks he’s being pretty suave, too by telling me that he thinks I was having “trouble” with that one. HA!

I woke to a bright, sunny morning and spend a little too much time relishing that in bed. Needless to say, a quick breakfast was needed so I could get out the door!IMG_2640

I was talked into making a doctors appointment by my boss today because I’ve had a bothersome cough for the past couple of weeks. Guess she got tired of listening to me! On the way to the office I ate a Kardea bar:IMG_2641

Yum! One more to go before review time. In the meantime, what is your favourite Kardea bar??

So, it turns out I have the same type of asthma as DS. I can’t say I’m really surprised because I kinda had a feeling she would say that. Basically, for the both of us, it’s allergy induced. DS has a lot of trouble with his breathing (and coughing) in the spring when all the pollen is out and in the fall when the leaves fall and the mould it out and about. Now, I’ve know for a good 10yrs that I’ve got allergies to grass, ragweed, birch tree pollen, cats and dust. Just like lots of other people out there. In all those years I can honestly say that these allergies have never bothered me. To the point where I didn’t even like to admit to having them after seeing my Dad and brother suffer with horrible symptoms over the years. Well, I guess ragweed is in full swing and this is the year that I’ve started to react to it. I walked out of there with a prescription for the exact same 2 inhalers as DS has. Bummer. Even more humbling is that now I know what my poor child has been going through his whole life. Sheesh!

No gym as my appointment was over the noon hour. When I got back to my desk I pulled out the tuna salad I had packed.IMG_2642 IMG_2643

I’ve had these before and they’re pretty decent in a pinch. This was part of my efforts to clean the pantry out. IMG_2644

It was a tad spicy, but nothing I can’t handle. :) We got SUPER busy at work to the point where I left an hour late. That doesn’t happen often, but we had some balancing issues that needed to be taken care of before we could do our transfer. Then I spent a 1/2 hour waiting for my prescription to be filled. I was HUNGRY by the time I got home and just wanted to stuff my face. Enter eggs again. IMG_2645

Two slices of WW bread, toasted, hummus and farm fresh easy over eggs. Then I had a scoop (or 2) of ice cream:IMG_2646

This is a surprise flavour that I will be sharing at the beginning of next week.

Weeellll….I’ve got a few things to take care of before I tune into SYTYCD at 8. Hope nobody gets hurt this week!!

Father’s Day and “The Bomb”

Happy Monday, all! Have you had a good day? I know I have. Yesterday, too which is why I didn’t get to the computer to post. My hubby enjoyed a wonderful Father’s Day yesterday. It all started with DS making him breakfast. My hubby doesn’t particularly like his breakie in bed so he made DS a deal that breakfast could be made as soon as he woke up. First they set to work on the coffee: IMG_2134

See the blob ob butter between the toast? Yeah, my hubby had to scrape that off. Apparently DS thought he was laying cement. :) For my breakfast I made French toast with the last 2 pieces of whole grain bread, egg beaters, almond breeze, vanilla and cinnamon.IMG_2139

Next up was a trip to the farm. The kids brought my Father in law his first bag of peanuts for the year (he gets them on his b-day and Christmas, too!) and then we went to the barn to see how the babies were going along. When we got home I made big salads for DD and myself. I really didn’t get enough green stuff in this weekend. The salad had spring mix from the garden, tomatoes, avocado, carrots, mozzarella cheese and Parmesan Caesar dressing;IMG_2159

The afternoon was mostly spent lounging on the deck. I don’t do so well at lounging for long so I got up and made some muffins using this recipe. I made a few substitutions, but the main one was fresh blueberries for raisins. There is a photo further along in the post! While they were baking I cleaned up and enjoyed a slice of juicy watermelon:IMG_2161
Soon enough it was time to head over to my parents place for Father’s Day dinner. There were grilled zucchini, sweet potato fries, salad, buns, sausages and steak. Here’s my plate with an empty spot because I was sharing a steak with my sis and was waiting for her to cut it.IMG_2165

I also ate one brownie.IMG_2167 Yes, I can’t believe it….only one!! We sat out until 8pm enjoying the gorgeous evening, but alas, we had to get the kids home to bed. Much to their displeasure of course! I got a great photo of my Dad with the kids, though!IMG_2163
Because they’re both sitting ahead of him, he looks like a munchkin!! LOL! Once settled at home I parked it on the couch to watch the MMVA’s while sipping on a mug of David’s Tea:IMG_2172
Sleep was not my friend last night. I tossed and turned most of the night and true to form had a helluva time getting out of bed this morning. Ugh. I’ve never been a morning person! My shower did a good job of shaking the cobwebs loose and by the time I was dressed and had my face on I was ready for some eats. I made the same bowl for breakfast that I attempted last Friday only this one didn’t blow over in the microwave! I had to keep a close eye on it, though because it sure tried too! HA!IMG_2174

Worked whipped by so fast today! I love that. A one point I looked at the clock and it was already 11:20! SNACK TIME! I brought one of the blueberry muffins that I baked yesterday:IMG_2162
What a treat! Dense and flavourful with burst of blueberry goodness. My kind of muffin! I did an interval session on the treadmill today. It worked out to 2 minutes of walking on an incline of 7% with the speed at 4mph and 2 minutes of running with a .5% incline with a speed of 6mph. T’was a sweaty one!!

Dinner was chicken done on the BBQ, grilled zucchini and steamed broccoli. The broc had some sweet onion salad dressing drizzled on top!IMG_2177

Tasty dinner! Mom, DD and I went to a blow out clothing sale after dinner (I ended up coming out with only a tank top!!) but before leaving I had a palmful of mint chocolate chips to curb my sweet tooth.IMG_2178

We were a bit early picking Mom up so I made a pit stop at the health food store because I received a coupon in the mail for a free loaf of Silver Hills bread that I wanted to use. You’ll have to come back tomorrow to see which one I bought, though! Hehe! I will show you a funky chocolate bar that I scooped up, though!IMG_2179 IMG_2180

Interesting, no? Can’t wait to try it tomorrow! I dropped Mom off to change and then she walked to my place and we borrowed KC and went for a 3 mile walk. I didn’t get back in until 9:15pm! I love warm summer nights!

I can’t remember now if it was Friday or Saturday night, but I gave the famous “chocolate cherry bomb” a go!IMG_2132

Into my MB went approx a 1/4 cup Greek yogurt, 1 cup USVAB, 10 frozen cherries and 1 scoop of cocoa Camino dark chocolate powder. It. Was. Wonderful!

Home Reno Bug

How was your day? It was wet again here. The grass and weeds like the rain, at least! I’m kinda getting tired of it! Being stuck inside more often than not lately I’ve been pondering some more home renos seeing as I’m so pleased with how our bathroom turned out. Namely, I’d like to rip the carpet out of the rec room and put down hardwood. It’s much easier to clean with 3 cats! I’d also like to replace the vanity in the downstairs bathroom because the sink that’s there now is a pedestal one and there’s no storage space for unsightly items such as toilet paper. *wink* Not sure if I’ll get my hubby on board with these grand plans, though! I also want to mention that I’ve once again been given an opportunity to review a new product with you through CSN Stores! I can’t wait!

Breakfast was Jessica inspired today!IMG_2075
Dorset cereal, USVAB, strawberries & blueberries. Delicious! The only problem was that I started getting hungry sooner than usual. I think upping the amount of cereal will take care of that.

I decided not to go to the gym today. My shoulders are really tight from Pilates and I just felt like chilling at home. It’s nice that I have that option. I also treated myself to the weekly staff lunch. Once a week we have the opportunity to order lunch in. The caterer sets the “menu” and it is always $6.00 which includes the entrée and a dessert. I’ve done this twice before but it’s been some time since the options caught my eye. When they posted a veggie wrap, chicken rice soup and a triple chocolate cookie, I was all over it!IMG_2078

The only thing that would have made it a smidge better was brown rice instead of white. The wrap was jammed packed with veggies and goat cheese:IMG_2080
I didn’t care at all for the pasty white wrap that stuck to my teeth so I chucked it and just ate the delicious filling.IMG_2082 I’m pretty sure I don’t have to say how much I liked the cookie!!IMG_2077
I actually ate it late in the afternoon. ;)

Dinner was 1-2-3 tonight as it was cooking all day in my crock pot. I had some cubed pork tenderloin that I prepped Monday night for this meal knowing that it was to be a rainy day. Along with the pork I added a can of tomato sauce, chickpeas, flava beans, potatoes and garlic. When I went home at lunch the house smelled like a restaurant! I had bought some Pillsbury biscuits over the weekend with a coupon I had so I made those for us to clean our bowls with! IMG_2084 IMG_2083

My portion was served over a bed of cole slaw mix to bulk it up. This was superb. The meat fell apart with a fork and the sauce was rich and flavourful. Truly the perfect rainy day comfort meal. I also ate an almond quinoa muffin as a sweet end, but figured I’d save you having to look at another picture. ;)

It’s 8:30 and DD and I just rolled in from swimming lessons. I’ve made a vanilla chai to sip while watching SYTYCD and have some sweet cherries ready in case I feel like snacking.
