Achy and Stiff

Let’s just begin by saying that after yesterday’s strength sesh in the gym and 2 killer Pilate’s classes I got out of bed very gingerly this morning. Oh, the pain!!! You know its bad when it hurts to sit down….and get up! LOL! At least my kids were entertained by my hobbling about this morning! IMG_0477

This breakfast was 100% pain free!

I ploughed my way through a stack of paperwork at my desk this morning. I was happy to see the back end of it! There was no delicious food in the staff kitchen like yesterday so I broke around noon and ate a Clif Bar for a snack: IMG_0478

Regardless of my aching muscles, I went to the gym at lunch. Not sure if that was smart or not, but I just did cardio so I’m thinking no harm was done. First I did a 12.5min walk at 4mph with a 7% incline, then I ran for 12.5minutes at 6pmh with a 1% incline. Lastly, I hopped on the elliptical for 20 more heart pumping minutes. And I made sure to stretch really good at the end.

Lunch was not only tasty, but filling. I brought some egg whites which I nuked and then set between a sliced Ezekiel English muffin which had a nice layer of goat’s milk brie on it: IMG_0480 IMG_0481

Later on in the day I ate a bowl of mixed fruit (cantaloupe, watermelon, pineapple, grapes and honeydew). I had been looking forward to this all day! IMG_0482
I swear there’s honeydew under there!! I’ve been buying the trays of pre cut fruit the past few weeks because I’m WAY more likely to eat it if it’s already been prepped for me. Obviously I need my very own sous chef! LOL!

Dinner came early once again as we all had to be out the door shortly after 5pm. DS had hockey practice and then right after it was to the church for his First Reconciliation. My hubby helped coach again and then stayed at the complex with DD for her swimming lesson. Tired yet??? HA! All I wanted was pancakes so I made a batch using a hungry girl recipe. I had no dairy so I used a tbsp of almond butter in place of the cottage cheese. To top them off I used PB2 and chopped hazelnuts. The pancakes also had blueberries folded in: IMG_0483

I’m glad I went ahead and made these because they were SO satisfying. I grabbed the last 2 vegan chocolate chip cookies for the road…

At hockey practice tonight all the boys had Canadian flags taped to their helmets. DS informed me they did that to show some Canadian pride! Love it. Here are a few shots he let me take!

I dragged him off the ice at 6 so he could change and head to the church. The rink and church are practically side by side which is why he got to go on the ice at all. The kids behaved well which can be tough at 8. They sang a few cute songs before meeting individually with the priest. I took a few picture’s but they’re fuzzy and he looks possessed! LOL! He really does enjoy singing and it’s a pleasure to watch him. My hubby and DD aren’t home from the pool yet so DS and I are watching Aliens in the Attic again. It’s a pretty cute movie so I don’t mind. I’m feeling really wiped out so I think it’s gonna be an early bedtime for me. Here’s to hoping I’m not so stiff in the morning!

Party Day

Seems like DS’s b-day has run 4 days long! Gotta love being a kid, eh?! Today was the last day of DS-fest with his birthday party with 7 of his friends. He had decided last month that he wanted his party to be at the local glow in the dark mini golf place. I was a little nervous because we’ve been there as guests for parties before and they always seemed like a gong show to me. But the bash went off without a hitch and the kids had a blast. But first I fuelled with a wonderful bowl of oats. IMG_0009

Nom, nom, nom! And before I forget, I enjoyed a mug of Bellagio hot chocolate last night while watching “the Reader”. IMG_0007

Anybody seen this movie? What did you think of it? My hubby went to watch a hockey game so I took the opportunity to watch it. It wasn’t terrible or anything like that….I just have a gut feeling that the book is MUCH better. Actually, I think I’m going to see if I can borrow it from the library.

Party time was from 12-2. The kids golfed and played some arcade games before diving into 3 boxes of pizza. I planned ahead with my lunch a packed a WW bagel stuffed with a LC cheese wedge, ham, lettuce and mango wasabi sauce: IMG_0010

I couldn’t resist these bags when I saw them at the dollar store. I’m such a dweeb! :) HA! I also snacked a some dried apricots and nuts as we were walking out the door. IMG_0013

We were home and settled in by 3pm for some serious down time. I didn’t have to worry about cooking dinner because we had lots of leftovers to use up. I spent my time reading some magazine’s, reading some blogs, watching a few cooking shows and enjoying a pineapple flax muffin with a little chocolate honey spread on. IMG_0046

When we finally got around to supper I made the exact same as last night. Half a kabocha with some tomato sauce and Allegro cheese. IMG_0047

Who even needs lasagna? To me this tasted like the real deal! We went to my parents for a visit tonight where I munched on 2 chocolate chip cookies and sipped a tea. We were discussing how it’s just not fair that the weekend is only 2 days. We’re of the same opinion that it should be at least 3 days long. Yes? LOL! I wish.

Straight and Sleek

I came SO close to calling in sick today, but then my responsible side took over and told me to suck it up. My belligerent side decided to make naughty oats, then! 100_6253

-2/3 cup brewed coffee (from my hub’s morning pot)
-1/3 cup PC 5 Gain cereal
-carob chips

Take that, conscience!! Yum, yum, yum…na, na, na! This surely kick started my day.

It was quite cool out this morning, although the sun was shining brightly. When my co-worker and I got back from our 10am walk around the block, I warmed up with a vanilla cappuccino; 100_6254

I know! The treats kept on appearing this morning! And it didn’t stop there! I finally broke into my Maple Nut Clif Bar before hitting the gym! 100_6255

I must say, I think all that sugar rally gave me the energy I so needed while at the gym today. I powered through a great 30 minute run and some strength training!

I fiddled with the speed a bit while running. I started out at 6.2 and when I still felt good at the 1.5 mile mark, I bumped it up to 6.4. At mile 2 things were still good so I upped it to 6.6 for the remainder of the time. It ended up that my fastest mile was 9:06. :D For strength I did the following;

-3 sets of 20 squats on the bosu
-2 sets of 15 (each leg) lunges with 7lb weights
-3 sets of 15 tricep dips
-2 sets 15 (each arm) tricep curls

I really have to stop packing my lunch as soon as I finish eating dinner. I’m finding that my lunches are pretty blah lately and I’m betting on the reason being that I’m full when I make it so I just throw something in a container and call it a day. Take today for example. While cleaning up after dinner last I combined some leftover TJ’s harvest grain blend with peas and poured a cup or so of chicken stock on top and called it lunch. 100_6256

This was good, but I certainly wasn’t “feeling” it, if you know what I mean. As I was walking to the staff kitchen, I was really hoping to round the bend and see a tray of fresh fruit left from a meeting sitting there. No such luck, but that’s what I really felt like!

At least I had a beautiful Ginger Gold apple to nosh on later in the day! 100_6257

Speaking of apples, here’s the recipe for the Skor/apple dip that my co-worker made for the get together the other day. I had a few requests for it!

1 container light cream cheese (softened)3-4 heaping tbsp of cool whip (light)
3 skor chocolate bars
1 container caramel sauce

Whip cream cheese and cool whip together and put in bottom of dish. Chop skor chocolate bars (save a few pieces for top) and place on top of cream cheese mixture. Cover the cream cheese, skor chocolate bar mixture with the caramel sauce. Sprinkle the few pieces of skor chocolate bars on top. Enjoy with a variety of fruit (apples taste the best)!

The fam had sausages for supper which I don’t care for so I made a toasted Arnold Thin with whipped cottage cheese, sabra hummus and a 1/4 cup of egg beaters. On the side was steamed cauliflower with some Ted Readers peach bourbon sauce on top; 100_6258

After dinner we all piled into the Jeep to go to our hair appointments. DS was the only one not getting a cut because he has no hair! :) I decided to get my hair straightened tonight. I get my hair trimmed and thinned out every 8 weeks and this is the only time I straighten it because my stylist has one wicked ass hot iron. It takes me 45 minutes to do it at home. Her? Ten. No brainer! Anywho, I had DD take a shot of the final product for ya to see;

Smooth and sleek! Well, I’m off to get lunches together and sit down with a few new magazine’s that came in the mail today. It’s FRIDAY tomorrow!! ;)

Gonna Make You Smile!

Hi everybody! I’m a little late getting this post started as we were out picking up our new wheels and then showing them off out at the farm. I’ve got about 20 minutes before SYTYCD is on, so here we go!

Breakfast was a little different this morning! 100_5140

This here is a combination of the following;

  • 2 Weetabix biscuits
  • 1/2 cup USVAB
  • splash mocha almond fudge coffee creamer
  • 1/2 pint raspberries
  • walnut pieces

I warmed the whole lot in the microwave for 1 minutes and then stirred it all up. What a fantastic concoction! 100_5136

No gym for me today because I had to run some errands over the lunch hour in order to be able to pick the Jeep up. Here are the snacks I munched on randomly throughout the day; 100_5144

  • red leaf lettuce

  • Swiss cheese cubes
  • honey Dijon dressing

While I was out at lunch I stopped by the health food store as I was in the area and picked up a few new goodies to try out; 100_5153

I tried a small piece of the chocolate after dinner and it was fabulous! There was a real distinct espresso flavour that came through. My Dad would LOVE it! The tea will be finding it’s way into my travel mug in the morning and those tasty sounding caramel apple chips are destined for a meeting with my oats first thing! :)

We picked up the jeep before the kids! :) Can you believe I didn’t get a chance to get any picture’s yet? By the time we got home, there wasn’t enough light for a good photo. I promise to post some tomorrow.

Dinner was a quick affair consisting of a toasted WW bun with a Gardenburger tomato basil patty, jalapeno Sabra hummus, pepper jack cheese, ketchup, Dijon and some lettuce. On the side was some pan cooked zucchini from the garden!!! 100_5154

I decided to pick the 3 that I did because the cooler temps had done a number on their growth pattern and I knew they’d rot sooner rather than later. 100_5151

See what I mean? They tasted great, though! There a lots more on the plants that seem to be growing just fine.

As I mentioned, we drove it out to the farm which is about 20 minutes away. DD was able to feed Lacey again and I did film it with the camera, now I my husband just has to figure out how to convert it so I can upload it! I took a picture, though…100_5158
