Can It Be The End?

I sitting here in disbelief that the weekend is already over. Where did it go? I can’t believe that in 12 short hours I’ll be back at my desk. Jeez….

I got a little funky with my breakfast this morning. I’ve seen the addition of pretzels and chocolate to oats on a few blogs so I decided to give it a whirl; 100_5938

  • 1 cup water
  • 1/3 cup oat bran
  • 1 tbsp carob powder
  • walnut & pretzel pieces

100_5937

I was pretty jazzed to try this but was let down by the fact that the pretzels got soggy asap. Ewww. I picked around said mushiness and the rest of the bowl was great.

I behaved myself with the cookie plate out at the farm this morning. I promised myself 2…not 4 like last week…and stuck to my guns. I even remembered to take a picture of the variety this week! 100_5939

Really, they’re all my favourite, but I chose a maple & a chocolate striped one. Maybe I’ll go for the other 2 next time!

We didn’t get home until shortly after 1pm and I was good and ready for some lunch by then. I polished off a good portion of my NF plain Chobani with a 1/2 cup of TJ’s blueberry muesli and extra fresh blueberries; 100_5941

Hit. The. Spot!

I read my book for an hour while I let my lunch settle and then I hopped on the treadmill to pump out one of Gina’s (Fitnessista) killer treadmill workouts. It was an hour long, interval one and kicked my bootie! I was sure to do 5 minutes of really good stretching to try to eliminate any soreness in the morning.

I had just enough time to clean up before I had to get started on dinner. I had pulled out a pork tenderloin and once again turned to my Clean Eating magazine for inspiration. Here’s what I picked;

100_5944

This was super easy and delicious! I didn’t make the potatoes because I have none. Instead, I paired the meat up with baked beans and steamed veggies. Again, here is what the meal looked like in the magazine; 100_5943

And my version; 100_5946 100_5947

Another winner! I didn’t have a sweet end because I knew there would be cookies at Mom’s. Again, I only ate 2. MUCH better than the 7 or so from last Sunday!

I just finished snacking on 3 mini blueberry muffins spread with a little macadamia nut butter. No picture because the one I took looked awful! I plan on hitting the hay soon tonight because I never seem to sleep well on Sunday night’s. On that note….

Bye for now!!

Who Put That Goal Post There?

I had a bit of trouble falling asleep last night so it was a good thing that I had planned to head into work a bit late this morning so that I could drive the kids to their first day of Italian school. I also made a nice chocolaty bowl of goodness to get me going!100_4900
  • 1/3 cup water & USAB
  • 1/3 cup sunrise blend w/ quinoa flakes
  • banana
  • 1 tbsp carob powder
  • cinnamon
  • pecan pieces
  • sprinkle of Enjoy Life granola100_4899

I am totally digging this carob powder business! :)

I bought a 4 pack of gum yesterday and was tickled pink when I opened the first sleeve this morning to find little maple leaves on each piece;100_4905

GO Vancouver 2010!!! Doesn’t that look pretty cool? I know; it doesn’t take much to get me excited.

I snacked on a few mini Breton crackers before heading off to the gym;100_4901

The gym was stinking hot again today. UGH. Right near the end of my run I ended up with a killer stitch in my right side and had to walk the last 4 minutes out. I made sure to do some extra stretching when I was done.

I made one tasty salad for my lunch today!100_4902

  • lotsa mixed lettuce
  • cherry tomatoes
  • cucumber slices
  • 6 bean medley
  • blueberry acai pomegranate dressing

The beans were a mix of red & white kidney beans, chickpeas, black eyed peas,Romano and lima beans. I gave them a really good rinse to rinse the sodium off them.100_4903

I ate this while keypunching and it took me a good hour and a half to down it! Then I ate my very last cherry pistachio cookie;100_4904

I need to get on making another batch of these stat.

Summer hours started this week so for the rest of the summer I’m working 8-4:30 and taking Friday’s off. I love summer hours, but getting home a half hour later takes a bit of getting used to! Dinner was BBQ’d chicken breast, steamed broccoli and this lemon spinach couscous;

100_4906

Yum…this was gooood stuff! It made a great side dish! I also added some of Ruth’s mole to my plate for dipping purposes; 100_4907

I was stuffed after this meal! Pretty much as soon as we were done we had to head out to soccer. At least it wasn’t pouring this week, but we still had to wear pants and jackets. We all had a good laugh at DS because in the last 5 minutes of the game he hit the goal post 3 times! Boy, was he frustrated! Here’s a shot of him before we left for the game…

100_4909

As I type this out I’m snacking on some fresh, local strawberries with some Cool Whip Free…

100_4912

I’ll be sad when the season is over. :( Anywho, I’m off to get some vacuuming done. Not sure what the cats were up to today, but there is fur everywhere! Fun times. My lunch is already put together so that’s a plus. I’ll be hitting the sack much earlier than last night, too. Take care, y’all!

Bye for now!

Sun, Glorious Sun

Ahhhh…finally some sunshine today! Put me in a fantastic mood, I’m telling ya. My awesome breakfast had a hand in that, too. Check it out…

100_4816

  • 1/2 cup water and USAB
  • 1/3 cup oat bran
  • banana
  • cinnamon, vanilla
  • 1 tbsp carob powder
  • pecan pieces
  • sprinkle of dorset cereal

100_4815

I bought some carob powder at the Bulk Barn last week and is it ever amazing! I whisked it into the liquid before adding the oat bran and it turned out fabulous. It’s also much cheaper than buying carob chips. I can’t wait to use this in more creations.

We took advantage of the warmer temps by taking a family trip out to the St. Jacobs market. It was mad busy, but I got some GREAT stuff! The first picture is a mix of fresh nectarines and plums that I got for $5.00;

100_4819

Next up is 2 pints of local strawberries ($7.00), green and yellow zucchini ($2.00) and 2 of the biggest carrots I have ever seen in my whole life ($2.00)…

100_4818

This picture does not do these carrots justice. Even my Dad was amazed and he’s been growing vegetables for over 40 years!

I couldn’t pass up something sweet so when I came across a lady selling biscotti who was more than generous with her samples, I knew I wanted to buy from her. I got a bag of her Hazelnut Espresso Biscotti Bites…

100_4817

They melted a wee bit on the drive home…oops! Nothing that changed the deliciousness of these chocolate coated cookie pieces!

It was lunch by the time we got home so I made good use of the salmon and veggies that I didn’t finish at dinner last night. I plopped both into a wrap with a slice of pepper jack cheese and grilled it up in a dry pan until toasty and melty On the side I chopped up a plum and added a few strawberries;

100_4820

DS and my hubby went to my parents for the afternoon to help Dad out with siding his shed so I took advantage of the quiet (DD is my mellow kid!) and finished up the rest of the weeding in the back and front yards. Then I cleaned up and we scooted over to Wal-Mart for a few necessities.

Before I knew it, dinner time had arrived. My hubby had picked up some sirloin steaks at the market for the BBQ and after reading Ruth’s last few posts, I decided to break out my mandolin so I could get some uniform slices of one of the huge carrots and 3 of the zucchini to add to the grill. I also polished off the rest of the sweet potato and some onions from Wednesday night.

100_4854

I know that’s a tiny piece of steak, but I’m not a huge red meat fan and this was plenty for me. I actually didn’t even like ANY red meat until I got preggers with DS. As a kid my Mom would automatically make me hotdogs for dinner if they were having red meat. I just would not touch it! I even hated serving it when I worked as a waitress! Funny how taste buds can change.

My sweet end was a cherry pistachio cookie of which I will spare you the picture today. I do urge you to click HERE for the recipe and make them for yourself because they are pretty stellar if I do say so myself.

My parents came by for a visit after dinner and when they left I whipped up my last Amazing Grass sample, a chocolate one.

100_4855

I blended this with unsweetened almond breeze, water and spinach. Delish!

100_4856

I’m going to order a few more of the samples because it’s pretty cheap and I get a bit of both that way. It’s pushing 9pm here and I’m hoping all my American friends are enjoying a most fantastic 4th of July!!! Good night, all!

Bye for now!!
