Veggies? Check!

Well, I did a much better job of getting some produce into my system today. And I made sure to start with my breakfast. 100_7679

  • 1 cup water
  • 1/3 cup sunrise blend with quinoa
  • cinnamon, pumpkin pie spice
  • 1/2 cup pumpkin puree
  • raisins
  • walnuts

Backing up to last night for a second, after I posted I snacked on a cup of this cereal;

My body thanked me for the apple right away!!

DS’s out of town game was a bust today. The referee’s didn’t show so the game was forfeited. The boys were pretty bummed out about it, too. We’re not sure yet if the game will be re scheduled or if our team will just get a “win” out of it. Thankfully it was in the closest town that we have our games in being only 30 minutes away. I did come prepared with a very green lunch to have on the way home.

Just before leaving the house I whipped up this beauty. I had steamed a whole bag of spinach earlier and I added half of it to the cup along with a cup of frozen mango, half a banana and a good few glugs of USVAB. I poured it into a water bottle and enjoyed it on the drive home.

DD and I spent a good part of the afternoon on the hunt for an ugly Christmas sweater. Lemme tell you….NOT easy to find!!! See, we’re having a “wear your ugliest Christmas sweater to work day” on Tuesday and I said I’d participate thinking it’d be a piece of cake to find one. I finally found something passable at the 4th store we tried. It’s not really ugly, per se, but certainly not something I’d ever be caught dead in. I’ll be posting pictures Tuesday night if you’re interested in checking it out.

In keeping with the “getting my veggies” theme, I made this white chicken chili for dinner tonight from Eat Drink & Be Merry; 100_7680

I have all 3 of the Podleski sisters cookbooks and I realized tonight that it’s been FAR too long since I’ve made anything from them! Anyways, I’ve made this recipe before so I knew the fam would approve. I served each bowl with some mozzarella cheese shreds… 100_7682

Cookies, Cookies

I can’t be the only one that wishes the work week went by as fast as the weekend, can I? I’m sitting here amazed that in less that 12 hours I’ll be back at my desk. Yelp! :/

I had a pumpkiny breakfast again this morning, but this one was in the form of pancakes! Another breezy Hungry Girl recipe to be exact. 100_5839I added blueberries to the mix and just look at how good these turned out! 100_5841

It says the recipe makes 3 pancakes, but I got 5. I think it’s because instead of just hand mixing the ingredients, I whip them up in the Magic Bullet which in turn makes the batter runnier. Hey, the more the better, right??? 100_5840

Out at the farm this morning I got involved in a bit of a cookie feast. My MIL brought up 4 different kinds….almond, chocolate, gingerbread and maple……and I enjoyed one of each. Yum! This ruined my lunch appetite so I made up a small GM to sip on. 100_5842

  • 2 big handfuls baby spinach
  • 1/2 cup USAB
  • 1/2 frozen banana

I got showered after this and then we drove over to Costco which we haven’t been to since April. We used to go once a month at least but couldn’t justify the money over the summer this year. I picked up house stuff like toilet paper and Kleenex and the such. I also bought a box of Kashi granola bars, sliced baby Portobello mushrooms and salmon burgers. The best deal by far was a flat of blueberries for $5.99. 100_5850

DS and I LOVE blueberries so I know these will get eaten fairly quickly. On the drive over I ate a pumpkin cupcake “frosted” with some almond butter; 100_5845

Once everything was put away I went down to the garden to pick some veggies. Here’s what I brought up; 100_5847

DD picked my butternut squash and let me tell you that I was not impressed as it’s not ready yet. :( I’m going to see if it’ll ripen a bit more in the sun, but I have a feeling not. There are 3 more still on the vine and I told her once again to NOT touch anything in the garden. Kids.

I had some time before dinner so I decided to put some of the berries to use in another Hungry Girl recipe….Big Fat Blueberry Muffins. 100_5849

I’ve made these before but this time I doubled the recipe and omitted the Splenda. I didn’t replace it, either and they turned out just fine! Check it out! 100_5855

These’ll make great lunch snacks this week.

For dinner we did up another beer butt chicken. Loving this cooking method! It’s pretty much 20mins per pound. So easy! I served my juicy breast with leftover grilled zucchini and sautéed sliced Portobello mushrooms; 100_5851

I didn’t have a sweet end because we were going to Mom’s and she always puts cookies out. After this mornings cookie fest, I was kinda glad that she put out crappy ones this week!!! :) I did enjoy a blueberry muffin when we got home, though.

Gonna Make You Smile!

Hi everybody! I’m a little late getting this post started as we were out picking up our new wheels and then showing them off out at the farm. I’ve got about 20 minutes before SYTYCD is on, so here we go!

Breakfast was a little different this morning! 100_5140

This here is a combination of the following;

  • 2 Weetabix biscuits
  • 1/2 cup USVAB
  • splash mocha almond fudge coffee creamer
  • 1/2 pint raspberries
  • walnut pieces

I warmed the whole lot in the microwave for 1 minutes and then stirred it all up. What a fantastic concoction! 100_5136

No gym for me today because I had to run some errands over the lunch hour in order to be able to pick the Jeep up. Here are the snacks I munched on randomly throughout the day; 100_5144

Lunch was a very green, delicious salad mix! 100_5149

  • red leaf lettuce
  • chicken breast
  • edamame
  • Swiss cheese cubes
  • honey Dijon dressing

While I was out at lunch I stopped by the health food store as I was in the area and picked up a few new goodies to try out; 100_5153

I tried a small piece of the chocolate after dinner and it was fabulous! There was a real distinct espresso flavour that came through. My Dad would LOVE it! The tea will be finding it’s way into my travel mug in the morning and those tasty sounding caramel apple chips are destined for a meeting with my oats first thing! :)

We picked up the jeep before the kids! :) Can you believe I didn’t get a chance to get any picture’s yet? By the time we got home, there wasn’t enough light for a good photo. I promise to post some tomorrow.

Dinner was a quick affair consisting of a toasted WW bun with a Gardenburger tomato basil patty, jalapeno Sabra hummus, pepper jack cheese, ketchup, Dijon and some lettuce. On the side was some pan cooked zucchini from the garden!!! 100_5154

I decided to pick the 3 that I did because the cooler temps had done a number on their growth pattern and I knew they’d rot sooner rather than later. 100_5151

See what I mean? They tasted great, though! There a lots more on the plants that seem to be growing just fine.

As I mentioned, we drove it out to the farm which is about 20 minutes away. DD was able to feed Lacey again and I did film it with the camera, now I my husband just has to figure out how to convert it so I can upload it! I took a picture, though…100_5158

Too Old For Cavities

Today was another stormy, wet day. Le sigh. What can ya do? I enjoyed a great breakfast, though!

  • 1 cup water
  • 1/3 cup PC 5 grain cereal
  • mashed up strawberries & raspberries
  • hemp seeds
  • sprinkle of sunflower seeds
  • splash of vanilla coffee creamer

I let the berries soften up in the water and then hit them up with the immersion blender before adding the oats. This was mucho delicious!

I ran out of any type of dried fruit for my morning nibbles and I survived! I’m trying to get away from that type of snack because I normally am only eating it out of boredom. Instead, I ate 1/2 of this Clif bar about 11:30;

Yum, yum! I have about 10 more Clif bars that I need to get eaten up before I can buy anymore bars. This may take awhile considering that I typically only eat half at a time.

I had some errands to run over my lunch hour so no gym for me today. If the weather holds I may get out for a run later on tonight.

I tried a new tuna product at lunch today. Gold Seal Smoked Light Tuna Slices packed in water.

I added half of this to the leftover roasted asparagus and steamed veggies from dinner last night. It was kinda boring. I really should have added some salt & pepper to it!

Not sure if I’d buy this tuna again. It was the same as the regular canned stuff only “cut” differently. Let me tell you that the canned tuna is much cheaper than this stuff!

I sat around most of the afternoon DREADING my 4:20 dentist appointment. You see, my kids were cavity free. Me on the other hand? TWO of them. What the heck? As the title of this post says, I’m too darn old for cavities. Alas, I sucked it up and got’em filled.

My mouth was pretty frozen but I was a starvin Marvin by 6pm so I whipped up a tasty green brown monster that I drank with a very classy straw;

  • frozen mixed berries
  • frozen mango
  • spinach
  • 1/2 cup water/unsweetened almond breeze
  • 1/3 cup oats

YUMMY! I got it all down without drooling all over the place, too! :) Once I can actually feel my face I’ll be diving into this bowl of sweet tasting honeydew melon…

Before I sign off, I need some Live Writer help. I would like my photos to be bigger but even the “medium” setting puts them out of the margins on my blog template. I manually adjusted them this time, but I’m sure they’re slightly distorted because of it. How do you all get your pictures to fit larger? Can anyone help a girl out? THANKS!

I’m off work tomorrow for Canada Day and what a feeling that is! I hope the rain holds off because the city always holds a big party in the park that involves fire works. I’d love a sunny day to enjoy it. Any of my fellow Canucks have plans for the day???
