Baking Demon

Sunday morning I was like a Tasmanian devil in the kitchen!  I had a 28oz can of pumpkin puree that I wanted to use and found 3 recipes that used every last drop.  First up was Mama Peas pumpkin spice bars. IMG_4122
The only thing I switched up was subbing macadamia nut oil for the canola oil.  I also used a 1/3 cup of dark chocolate chips because I didn’t have some of the icing ingredients.IMG_4123
I had to bake the batch longer than what was called for, but they were worth the wait.  I mean, look at the goodness here!IMG_4124
Next was Faith’s pumpkin spice syrup! IMG_4129
My photos do not do it justice.  Again, I simmered it longer than suggested because I wanted a thicker syrup.IMG_4127
I promptly made myself a cup of coffee with the syrup and milk.  To. Die. For.   The last cup of pumpkin went into another one of Faith’s recipes; pumpkin donuts!IMG_4132
Well, mine were “timbits” or “donut holes” because I don’t own a donut tin.  I used my mini muffin pan instead and ended up with 40 yummy bites!IMG_4131
I also subbed macadamia nut oil in this recipe (more on that to come!).IMG_4135
And in place of vanilla bean paste for the glaze I used 1 tsp of the pumpkin spice syrup.IMG_4134  
DS was shoving these in his mouth faster than I could get the glaze on them!  Too bad my hands were sticky or I would’ve taken a picture of him in action!   To say these were a big hit would be an understatement.  By the time I went to bed Sunday night there were 4 of the 40 left.  LOL  And here I was thinking to share with the girls at work!  Yeah, right.  :)   Have you baked up any amazing blogger recipes lately?  Do share!
FOOD!  IMG_4141 IMG_4137 See the pumpkin spice syrup on the oats?  Mmmmm….IMG_4142 IMG_4143 IMG_4138 IMG_4139 **Now that the time has changed I can take breakfast photos in the sun.  Unfortunately, by the time we eat dinner its dark so now those pictures are blah.  I can’t win!** IMG_4144 IMG_4140 NEWSFLASH!!  I just saw a commercial over the weekend that Tim Horton’s is now selling oatmeal!!!  BONUS, especially because I really don’t like much of the “food” that they serve there.  But I’m thrilled about the oats.  And that there’s a Timmy’s within walking distance of my house and the office!  YAY!

  1. FANTASTIC baking. Those bars look gooey and amazing. That Mama Pea- she know sher stuff. I made this pumpkin cornbread today - awesome (http://www.recipegirl.com/2008/10/01/pumpkin-cornbread/). And I hear you about dinner lighting :( I really want a better camera that will make that a non-issue.

  2. Those pumpkin recipes looks amazing! Especially those doughnuts. I think I would have followed in DS's footsteps and shoved them in my mouth once the icing was on. :P

  5. I also feel like I can't ever win with daylight!!!!! Summertime's daylight is so amazing for food pictures. All of your eats look absolutely spectacular. Great job :)

  7. im eating a coffee crisp right now as I write this!!! talk about following my tummy to this post haha <3

    Whenever I bake I usually have to keep the dish in longer than required too. My oven is fairly new, but I think its just not as powerful as many peoples. The bars definitely were worth the wait, it's crazy how moist they turned out too! <3

    BTW thank you so much for telling me about tim hortons oatmeal!! at first i was thinking "WHAT!!!!...strange!!" but now i really wanna test it out!! <3

    the site says: "Try our new Homestyle Oatmeal in Maple or Mixed Berries. It's slow cooked, the way you would make it at home and it's whole grain, low in fat, and high in fibre."

    WOOHOO! ur mornings at work are gonna be much more fun now huh!

  11. My dad just mentioned to me that he saw the commercial for T Ho's as well. Not sure how I feel about "to go" oatmeal. I know Starbucks carries it, but I've never bothered to try it. Seems expensive. But could be a good option for those who do need to eat out for breakfast often.

    I have sadly done minimal baking recently. And I love baking!
