Simple Sunday

Hi all! The kids asked for pancakes for breakfast this morning so I decided to have some, too. I used a standard Bisquick mix but used almond breeze instead of milk and egg beaters instead of eggs. Also, the kids had chocolate chip, I had blueberry. IMG_1228

What you see on top there is thawed blueberries with some agave, coconut butter and walnut pieces. It was divine! IMG_1227

After making myself presentable we made our way over to Costco. I re stocked on a few things including quinoa: IMG_1229

We chilled on the deck for a bit before heading out to hockey. Looks like we may be done with the rink by Wednesday. Keep your fingers crossed!

My dinner was leftover roasted red pepper and goat cheese chicken and taters from last night, some quinoa and veg: IMG_1234

Then I ate an almond biscotti! IMG_1235

Now we’re kicking back to relax for the last bit of our Sunday. Did you do anything exciting this weekend or was it the same ole, same ole?

  1. Those are some gorgeous pancakes! I love your toppings. We need to renew our Costco membership. Love that place. Nice dinner and yummy dessert. Ummm we had Body Step practice this morning...then I went to the usual Brunch

  4. Simple Sundays are good... :) We explored a new (to us) park with the toddler, and he loved it. It was great seeing him well again... :)

  7. I love the combo of coconut and blueberries--I bet it was to die for on pancakes too!

    We don't have a Costco around here, just Sam's Club--but they still have stellar deals!

  9. We had a great weekend visiting my family. I stuffed myself. Ate and ate and ate. Moms can cook so well! And she just kept serving more and more, making sure we sat and relaxed. Your pancakes look great, I need to get more creative, I'm in a food rut these days.

  15. How funny is this? We were at Costco on Sunday as well, and bought the exact same quinoa and the falafel balls. Talk about coincidence!
