Plans Down The Drain

Last night before going to bed I mapped out some grand plans for today. Waking up a bit earlier than I usually do on a Saturday to go to the Farmers Market, coming home with a basket loaded with veggies, farm fresh eggs and locally raised meat, spending the rest of the morning cleaning the house, taking a drive to Ikea (45 minutes away) for some new curtains for the rec room, grocery shopping…..it was to be a full one. Reality had a different plan for me, though. Just before getting ready to hit the sack at 11pm, I hear DD pound into the bathroom. Never a good sign. Leaving out the details, I’ll just say that I was up with her until 4:30am. OMG….I didn’t think morning would EVER arrive! And when I crawled out of bed at 9, it was raining. Instant downer. I’ll let you read on to see what I got done and what didn’t. IMG_1420

  • 3/4 cup water
  • 1/2 cup spelt flakes
  • cinnamon
  • carob chips, pecan pieces, hazelnut sprinkles
  • kefir

The local market is only open until noon and the rain just got worse so those plans were nixed for this week. I did, however, get all the housework done. Not my favourite job, but it’s gotta be done.

I wasn’t terribly hungry for lunch, but knew I needed something in my system to fuel my body after a night of no sleep. I scrambled a 1/2 cup of egg whites with some kalamata olives, roasted red peppers and a LC cheese wedge. On the side was a Dr. Kracker Seedlander cracker: IMG_1423

I also took a photo of some lilacs that I picked last night while DD and I were walking KC. I just adore how they smell! IMG_1421

After lunch DS and I hit the grocery store and stocked up for the week. It was 3pm by the time we got home and the rain had stopped so I pulled up a chair on my front porch and tucked in with an orange and a magazine. IMG_1425

We did a beer butt chicken tonight for dinner so while that was cooking I whipped up a batch of Erica’s granola bars. IMG_1427

I doubled the batch today because these don’t last long at my house. I’ve had a few requests for this recipe so with Erica’s permission, I’ll post it here for you.

Nut & Fruit Granola Bars

Ingredients:
1 1/4 cups dry oats
3/4 cup puffed rice cereal
1/4 cup whole wheat flour
½ cup all-purpose flour
1/2 cup packed brown sugar
1/2 cup applesauce
2 eggs or ½ cup egg substitute (or equivalent- check your egg substitute container)
1/2 tsp cinnamon
¼ cup sunflower seeds
¼ cup pumpkin seeds
1/4 cup dried cherries (or other dried fruit)
½ cup chocolate chips

Directions:
Preheat oven to 350 degrees. Mix together oats, cereal, flours, sugar, cinnamon, sunflower & pumpkin seeds, cherries and chocolate chips. Add in apple sauce (or oil) and eggs (or egg substitute), mix until well combined. Spray a 2.5 qt baking dish with pam. Spread mixture into bottom- bake for ~ 25 minutes. IMG_1426

Back to dinner….I ate my very moist chicken with some ginger wasabi sauce, asparagus and grilled zucchini: IMG_1428

And a granola bar finished the meal off.

My parents left a few minutes ago and I just made myself a sugar cookie latte using a 1/2 cup USVAB, 1 cup water and the tea bag, IMG_1377

It smells wonderful and I’m hoping that it helps me sleep later on. HA! Anyways, enjoy whatever it is you may be doing this weekend!!

  1. oh no! that sounds like it was quite draining! heres hoping you can sleep like a baby. soon u'll be back on ur feet and feeling good as new. but it def. sucks when plans get switched around or tossed out- it can throw ur whole balance out of whack.

  2. aw! poor dd! I hope she is feeling much much better. That does not sound like fun. Glad you still managed to get the housework done despite the tired-ness. And I'm so glad you are enjoying the bars. I make them pretty much every week too ;)

    I've been meaning to try those bars...my cooking has got a bit boring lately, free time is dwindling...
