Fire Up That Oven!

I finally slept in a little bit this morning. I actually woke up at 6:30, but laid around in bed until 8:30. NICE! I decided to go the strawberry banana route with my breakfast today...
-1 cup water
-1/3 cup Sunrise Blend w/ quinoa
-cinnamon, vanilla, salt
-banana
-strawberry banana jam
-strawberries and a dried banana as toppings
This turned out to be dessert for breakfast! YUM! Here's a closer look at the jam I used. I bought it yesterday and although it definitely has sugar in it, there are very few ingredients otherwise...

I really liked these! You all know that I love the taste of banana, but not the mushiness of them. These were full of banana flavour and more chewy than anything. I'm glad I decided to buy some to try.

I enjoyed a very laid back morning and even got some baking done. I reasoned that it was raining out and the temps were cooler so it would be OK to fire the oven up. I made these cookies from a recipe on the Hungry Girl website. They're PB cookies but I added a few carob chips and used PB&Co. Mighty Maple PB in place of regular.
Soft and delish! The recipe is for 6 cookies, but I got 7 of them. I also baked up the kobucha squash along with the big green zucchini from yesterday's adventure's. How on earth do you girls cut the squash on your own? I had to get my hubby to do it and even he struggled! I roasted it at 400* for 40 minutes. It made an appearance at dinner time.

DD had a friend over for part of the day and DS was at a b-day party so it was quiet in the house. A definite rarity around here. I didn't leave until 2:30 and only because I had to get the grocery shopping done. I had a light lunch around 1pm. I wasn't terribly hungry but I didn't want to be grazing all afternoon either so I made some pumpkin yogurt (equal parts NF plain yogurt and pumpkin puree with cinnamon and a squirt of agave) and sprinkled it with some dorset cereal for crunch;This is also the point where I enjoyed one of the above cookies! :)

I bumped into a friend at the grocery store so shopping took a lot longer than usual. We were busy gabbing! By the time I got home it was time to get dinner started. We grilled up some pre marinated pork tenderloins and I served mine with some baked zucchini, tomato & feta salad and a wedge of kabocha that I just sprinkled with salt & pepper...

I really liked the kabocha although I wouldn't eat it as "dessert" per se. Next I'll try it with some sweetness added, then I may change my mind! For dessert I ate a cinnamon bun that I bought yesterday;
I ate this half, then went back for the other! :) YUM! I'm off to the neighbours place now. They have a pool and the kids have been invited for a dip. There seems to be another rain cloud moving in, though so I hope they actually make it in the pool!

  1. Haha, I dodn't find it particularly difficult to cut the squash, but now that I think of it, that might be the reason that my favourite knife has decided to fall apart!

  2. Sounds like you got a lot of you time today- which is fabulous! We have some dried bananas in the house and they ARE incredible! Have fun at the pool

  3. Those cookies look great! I love how in the winter I bake all the time because I love the heat but the summer - it's just out of the question!!

    Hope the rain didn't squash any pool plans!!

  4. You finally tried Kabocha!!! wooooo... although you didn't like it as dessert but you liked it right?! think adding sugar and cinnamon might make it more dessert like! :)

  7. I was thinking those kabocha would be a pain in the ass to cut. Plus I have crap knives, so I'm not looking forward to trying to hack mine up. Good to hear it's tasty :)

  8. I have been meaning to try out that Hungry Girl cookie recipe! Looks like they turned out super :-) I will def have to get on that stat!
