Simple Meals

You'd think that being childless for the night would see me sleeping in some. Nope! I was wide awake at 7:15am! I did pull out some pumpkin pie crock pot oats from the freezer before bed in anticipation of some extra shut eye;
I re hydrated it with a splash of water and when it was heated through I poured in some Silk and a sprinkle of chia seeds.
After a few minutes it really thickened up. I didn't find and change in the texture, though. I'm gonna have to do some experimenting with these little seeds.

We picked the kids up around 9:30 and made our way to the farm. Turns out that one of the baby horses is very sick so we rubbed him up to try to keep him comfortable while waiting for the vet. It was still pretty touch and go when we left so I'm really crossing my fingers that when I call over there tonight I get some good news.

I made a great wrap using my left over dinner for lunch. I smashed up a 1/4 of an avocado with a LC wedge and topped it off with the rest of the tilapia and some of the zucchini;
On the side was a bowl of sliced strawberries, green grapes and raspberries. All together now!
I spent 2 hours and many mosquito bites weeding and loosening up soil in my veggie garden. Everything seems to be growing well considering the influx of rain with not too much sun. Once I cleaned up I made a tea and dug into a cherry pistachio vegan cookie...
Love this combination! There's still a caramel chunk and chocolate chip shortbread left. DD took care of the ginger cookie and my hubby ate the PB & choco chunk one. DS ate the mud puddle (chocolate) one. After my treat was done I took DS down to the park to shoot some hoops. DD went of to a b-day party and he was feeling a loose ends. After that, I was tuckered out. I spent the next hour in the sunshine with a book. So, relaxing.

For dinner we BBQ'd up the fresh pork chops I bought at the market yesterday. I served mine with some lentils that were cooked up with a small piece of cured back bacon and a tsp of hulled hemp seeds. There was also a 1/4 cup of cottage cheese with S & P to go with it.
Straight after dinner we went to my parent's place for a visit. I had a few Peek Frean coconut lime cookies there but forgot my camera so no picture. The kids are just having showers now and once they're in bed I gonna go sit out on the porch with a tea and my book. I'm off work again tomorrow and am thinking about a trip to Whole Foods and hopefully an nice run weather permitting. See you all tomorrow!

  7. I can never sleep in either! Even if I go to bed at 2 a.m., I will wake up by 7:30 a.m. no matter what!

    Oh well, I gotta listen to my body, right?

  11. Krista, great blog - I really enjoyed reading the last few posts you've done. I too, try to eat mostly whole, 'real' foods. And...Clean Eating is my favorite magazine right now, I think I discovered it on it's second edition. Great mag!
