20 Days Rain Free!

It was a damp, dreary day in the neighbourhood, but I’m not complaining about it. This is the first time we’ve had rain in September! I was actually looking forward to it because I had some “inside” stuff to do that wouldn’t have been done if the sun was shining. Due to the dull day, I had to use the flash for most of my pictures. Kinda sucky, but whatcha gonna do?? 100_6307

-2/3 cup water
-1/3 cup Quaker oats
-cinnamon
-frozen berry blend
-1 tbsp of cashew butter 100_6306

Luckily the rain held off until I was sitting at my desk because I forgot my umbrella!! Yeah, smart bone-head Monday morning move! :/

For some reason or other I was starving by 10:30. I dug out my butternut squash muffin from the batch that I made yesterday. 100_6308

It was g-o-o-d! The squash flavour definitely comes through stronger than the zucchini, but I loved it! We’ll see what the fam thinks, though!

So, health wise I’m feeling pretty normal again. And because of that I rocked it on the treadmill today!

Once again I was lazy with my lunch last night. I packed the last of my Oikos (and shed a tear about it), a 1/2 cup of TJ’s muesli and a small scoop of pumpkin butter. Everything got mixed together at the last minute; 100_6310

You can’t really tell, but there was quite a bit in there. I also ate a few melon chunks; 100_6311

When I saw this recipe for tomato soup that Andrea posted yesterday, I knew I had to make it. You guys saw all the maters I picked yesterday, right??? I followed her instructions to a tee and was rewarded with a creamy, delicious, fresh tasting soup. I used 2lbs of Roma tomatoes in mine. And even though I cut up those beautiful butternut squash fries yesterday, I forgot that I had bought a bag of sweet potato fries on the weekend. I had to bake those up first because I find they get slimy pretty fast. And the other component to my meal was a salmon burger, naked! 100_6312

As you can see, I sprinkled some sharp cheddar on to the soup. There’s also some honey mustard hiding that I used to dip my fries. This meal stuffed me up proper!

I just got back from dropping DD off at dance. I’ll be heading back out to get her in 30 minutes. The boys just arrived home from hockey practice so it’ll be their turn to eat now. I plan on a low key night in front of the TV. After homework is done and lunches are made and the laundry is folded, of course!! ;) Have a wonderful evening!

  8. It's a mighty dreary day here too! First time for rain in a LONG time--they said we won't be getting too many pretty fall leaves due to the lack of moisture--boo! That soup would be perf for a day like today!

  9. I really like rain days too, especially when they haven't come along for a while! There's just something so comforting about hanging inside during a drizzly day.

    Loving the squash muffins. I need to get some muffin baking happening over here, it's been a while!

  10. We had rain yesterday too.. calling for thunderstorms here today. We needed the rain so badly... even if it was dull & dreary, better that we get some rain! All your meals look soooo good! I missed the Tomato soup recipe, going to have to go grab that.. looks amazing!! I love cheese on my tomato soup too.. perfection!

  13. Your dinner there sounds right up my alley. I'm a big fan of tomato soup, even if I don't like tomatoes. I could see growing tomatoes myself if only to make soup with. LOL.
