Goat’s Milk Yogurt

Considering that there’s still issues with our computers at work, the day moved along pretty fast. Just the way I like Monday’s to go! My breakfast had an odd mix of ingredients, but the managed to all come together into a tasty dish… 100_6682

  • 1 cup coffee
  • 1/3 cup Quaker oats
  • 1/2 cup pumpkin puree
  • Enjoy Life Foods Mountain mix trail mix
  • cinnamon sugar

This was a whole lot of yumminess!

I got tied up away from my desk for most of the morning so missed my morning snack. I grabbed a handful of these grapes on my way to the gym; 100_6683

Delicious, but not really enough fuel and I sure felt that on my run. The last 15 minutes felt REALLY long! And to boot, I washed the strap to my HRM and forgot it at home so no stats. Ah, well. I know I ran for 45 minutes and went 4.6 miles. Pretty standard stuff.

Lunch was a great fresh tasting wrap. I stuffed a flatout with pepper jack cheese, red bella pepper, romaine lettuce, fig balsamic dressing and chicken from last night’s beer butt chicken; 100_6684

The remainder of the grapes followed this.

It was just DD and I for dinner as DS was on the ice from 4:30-5:50. Before I got started I folded some laundry, tended to the cat litter and cleaned up some dishes in the sink. I felt calmer and ready to cook after that! :D I had decided earlier today to try a recipe for a delicious sounding soup. It’s called Curried Red Lentil Soup with Chickpeas & Quinoa. 100_6686

As you can see I added a dollop of yogurt to the top. I actually used goat’s milk yogurt which I have never tried before and was really impressed with it! This is the brand I used; 100_6685

It was thicker than regular yogurt and more tart. I’ll be buying this again for sure. All in all this supper was awesome.

After driving DD to dance class I had my dessert. Nothing new….banana cranberry pumpkin cake with cranberry sauce again. 100_6689

How good does that look?! There may also have been some dark chocolate covered coffee beans while typing out this post!! 100_6687

I can’t believe it’s already 8pm! One of the Mom’s from hockey sent my hubby home with some homemade, sugar free chocolate pudding to try. I hear it’s made with dates…you just know I’m off to try it out! I’ll post about it tomorrow along with a photo.

  2. ughh! hate runs where you can feel a lack of fuel! You really have to push push push through them! Great eats. You're making me want to go out and find some cranberry sauce. I hope the pudding is delicious

  6. I've never tried Goat's milk yogurt. I love goat cheese and I love yogurt but I'm not sure I'd like it. I like goat cheese as an addition to savory things like in your soup!

    I hope that pudding tasted great - I always think it's kind of fun when people not on the blogs use 'blogger staples' like dates, agave, etc.

  10. Yum, yum, yum!!! I've never had chocolate covered coffee beans, but i'm sure i'd love them! lol!! The pumpkin/cranberry cake looks amazing! YUM!

  11. Your pumpkin cake pic is so pretty! I haven't had chocolate covered coffee beans in so long! The store I used to get them at stopped carrying them, and I haven't been able to find a good replacement.

    Can't wait to hear about the chocolate pudding with dates...sounds incredible!
