Enjoying A Quiet Night Off

Today was pretty average. The sun hid for a good chunk of the day but made an appearance by the time I left work which was pretty much perfect timing. :) IMG_0732

  • 2/3 cup water
  • 1/3 cup Quaker oats
  • cinnamon
  • craisins
  • almond butter
  • kefir
  • mocha hazelnut sprinkles IMG_0731

I’m always struck by how creamy the almond butter makes the oats. Especially when it’s been a bit since I’ve used it.

I tired this chocolate macaroon One Organic Food Bar before hitting the gym today: IMG_0733

It was pretty decent. I really like that there was loads of coconut jammed in it. I think it coulda done with a little more chocolate, though. IMG_0734 It had a great texture, too which we all know is a must for me! All in all, I’d buy it if I could find it around here! (I got this one from Cassie)

I had a really good workout at the gym today. Cardio & weights.

Lunch was simple dimple! A toasted Ezekiel muffin with a 1/4 cup microwaved egg whites and a LC cheese wedge: IMG_0735

Then, later in the day, I noshed a beautiful pink grapefruit. IMG_0736

From work I went straight down to the school for parent teacher interviews. Those are always fun. HA…I kid! Aside from DS being restless in a classroom all day, the kids are progressing just fine. ;) My hubby got dinner started while I was gone. We had chicken done on the GF grill, corn, cauliflower and I had quinoa, them a Sidekick noodle pack: IMG_0740

After I took this picture I added some pomegranate chutney to my plate: IMG_0738

I didn’t eat all my chicken so what was left got put away for lunch tomorrow. Dessert was a Cravings cheesecake, the last one, might I add. IMG_0741

So, this is our first free Wednesday since the first week of January. Swimming lessons ended last week and don’t start up again until April 21. I am enjoying some quiet TV and computer time while the kids watch TV downstairs. After posting I’m gonna make myself a vanilla chai: IMG_0692 What are you up to tonight?

  1. Sounds like a nice day overall! Its always sweet to have a night off. I just bought a grapefruit today and cannot wait to eat it! We ate tons when we were in Jamaica and I had forgotten how good they are.

  2. Enjoy your nice evening free! I just bought a grapefruit as well for the first time in awhile. My mom always used to prep them for us to share - cut in half, bowl style, with a sprinkle of sugar. My hubs hates them so I have no one to share with, I might have to try eating them orange style!

  3. That grapefruit looks so good. I can't even remember the last time I had a grapefruit. I even have a fancy little knife especially made for them, I'm going to pick one up this weekend when I go to the grocery.

    Can you tell me what Kefir is? I've never used it.

  5. Mmm I love grapefruit- you peeled it so well! Mine is usually covered in the white pithe. And dinner looks like spring- the grilled chicken and all.
    Sounds like you had a great workout too!
    My night has been baking and watching American Idol. Nothing too exiting, just relaxation!

  7. Great eats today girl! I like the lunch egg sandwich idea. I'm really trying to get into the habit of packing my lunch (attempt at "frugality") and am in need of ideas!

    Thanks for your opinion on the Organic Food bar, I've been eyeing them in the grocery store, unsure as to whether or not to try. Do you have any fave bars you'd recommend?

  8. pomegranate chutney sounds delish~~~ i bet it pairs well with chicken.
    relaxing night sounds good. I had a relaxing night as well... as watched TV and therefore I had a solid 9 hours sleep. :)

  12. Mmmmm.... Chocolate macaroon.. That has got to best creation on earth... lol! Yum! It's gorgeous here today, 14+!! I'm off to see Alice tonight with my oldest daughter, can't wait to see my Johnny in a new movie!! :)

  13. I thought the same about the bar actually--they could've been a bit more generous with the chocolate, however the coconut flavor was my selling point for the bar anyway :-)

    I love adding new sauces to my collection--that pomegranate one sounds heavenly!
