The Next 2 Days

Hey all! Friday and today have been pretty low key so I can guarantee that this post won’t be as long as the last one. :)

FRIDAY

Before taking DS to his last day of hockey camp I made myself some breakfast: IMG_0894

  • 1 cup Kashi U
  • 1/2 cup coconut milk

My opinion of the coconut milk? LOVED it! I was instantly struck by how white it is! And it didn’t seem any thicker than normal when I poured it, but it felt creamier than I would have thought while eating it. Here are the stats. IMG_0899

It’s just too darn bad I can’t get this here. BOO!

I caught up on some blogs before DD and I had to get to Pilate’s for a make up class. I want to thank everyone for the Happy Birthday’s that you sent! They made my day that much brighter. :) YAY! We hopped to the mall after class so I could renew the plate stickers for the car…fun times….and while we were there my hubby called and asked if we wanted to meet him for Thai at lunch. Hell ya! We shared some fresh shrimp rolls: IMG_0896

I had 2 of these guys. Then I enjoyed a lunch sized veggie Pad Thai. I was about half way through when DD realized I hadn’t taken a picture. We should all thank her for reminding me. Hehe!! IMG_0897

After getting home we took KC for an hour long walk. Great way to digest lunch AND enjoy the sun. I wanted to take my b-day present from my hubby for a spin: IMG_0900

But I couldn’t convince DD who doesn’t like to “sweat”. Sucky pants! Anyways, isn’t this bike smoking????? You may (or may not) remember that on our last bike ride of the season I killed the back tire on my (OLD) bike with a spike. R.I.P old bike…you have been replaced!

Dinner was a good one. I grilled some spinach & feta stuffed turkey sausage and served it with spinach sautéed with garlic, OJ and topped with walnut pieces and WW couscous. IMG_0903

Believe it or not, but DS wasn’t too tired to make his 1.5hr hockey practice last night so while the boys were at the rink I went and did the groceries. As I was putting some meat in the chest freezer I came across a tub of bacio gelato that had less than a cup left inside:

I polished that off as a sweet end! The rest of the night was spent online blog reading. I’m pretty much caught up now, but in order to read all the wonderful things you guys have been up to, I didn’t comment as much as I usually do.

TODAY

What can I say about today? Well, I was a lazy bones supreme. I did shower. I did get dressed. But that was about the extent of it. I watched many an episode of Property Ladder and read magazines. DS and I played Wii for a bit. That’s it. I used a new honey in my breakie today. That was exciting! IMG_0907

I thawed some blueberries with a tbsp of this honey and used it to top my oats. IMG_0909

  • 1/2 cup each water and coconut milk
  • 1/2 cup Old Wessex 5 Grain cereal
  • cinnamon
  • blueberries
  • apple cinnamon honey
  • pecan pieces

I had to buy the Old Wessex again because the store that was stocking our Canadian version doesn’t appear to carry it anymore. Boo!

For lunch I plumped up a blueberry Chobani with fresh blueberries and a 1/4 cup of the maple walnut granola I bought at the market Thursday. IMG_0911

Not long after I made a cinnamon raisin PB sammie using some bakery made whole grain bread: IMG_0914

I like this bread from the bakery because the slices are not too big or sliced too thick. Perfect for a gal like me that isn’t crazy about bread.

The fam had lasagna for dinner and I had my own version. I layered sliced tofu with tomato sauce, roasted red peppers, Kalamata olives, jalapeno Havarti and freshly grated Romano cheese. I covered and baked it for 30mins at 375* then let it go another 5mins uncovered. I served myself half: IMG_0915

Awesomeness! And filling! I’m still pretty stuffed but if I do fell snacky later I’ve already chopped some pineapples and strawberries for easy grabage.

  2. I got that same coconut milk once but then I realized I can just get canned coconut milk and water it down....so much cheaper!!! I feel like there wouldn't be that much of a difference.

  5. Your bike is so cool. You'll look pretty great on it! I just resurrected my highschool bike from my parents barn and it needs a little work. I'm scared to ride on the road but think I can off road around the farm.

    I bet the coconut milk is delicious! Totally jealous of your shopping trip.

  7. I'm about to crack open a can of light coconut milk for my breakfast but I seriously wish we could get that carton here. I need to make a US grocery store trip one of these days :)

  8. Wow--great stats on that coconut milk--I've never tried it, I will have to keep my eyes peeled. So jealous of your nice bike--I am actually looking for a new one because mine got stolen on campus last fall :0(

  9. Wow, the coconut milk looks so creamy and delicious! I'll have to give that a try! Do you like it as much as other non-dairy milks?

  11. Sounds like it's been a fantastic couple of days...and full of delicious eats! That coconut milk sounds delicious, and I'm loving the stats! I haven't seen it at the store, but next time I'm at Weggies I'll be on the lookout! ;)
