Happy Monday, all! Have you had a good day? I know I have. Yesterday, too which is why I didn’t get to the computer to post. My hubby enjoyed a wonderful Father’s Day yesterday. It all started with DS making him breakfast. My hubby doesn’t particularly like his breakie in bed so he made DS a deal that breakfast could be made as soon as he woke up. First they set to work on the coffee:
Then presents were given out;
Finally, breakfast was served!
See the blob ob butter between the toast? Yeah, my hubby had to scrape that off. Apparently DS thought he was laying cement. :) For my breakfast I made French toast with the last 2 pieces of whole grain bread, egg beaters, almond breeze, vanilla and cinnamon.
The egg slices were topped with coconut butter and strawberries.
Next up was a trip to the farm. The kids brought my Father in law his first bag of peanuts for the year (he gets them on his b-day and Christmas, too!) and then we went to the barn to see how the babies were going along. No new ones yet, but the others are growing just perfect!
When we got home I made big salads for DD and myself. I really didn’t get enough green stuff in this weekend. The salad had spring mix from the garden, tomatoes, avocado, carrots, mozzarella cheese and Parmesan Caesar dressing;
Then I ate a chocolate chip All Bran bar.
The afternoon was mostly spent lounging on the deck. I don’t do so well at lounging for long so I got up and made some muffins using this recipe. I made a few substitutions, but the main one was fresh blueberries for raisins. There is a photo further along in the post! While they were baking I cleaned up and enjoyed a slice of juicy watermelon:
Soon enough it was time to head over to my parents place for Father’s Day dinner. There were grilled zucchini, sweet potato fries, salad, buns, sausages and steak. Here’s my plate with an empty spot because I was sharing a steak with my sis and was waiting for her to cut it.

I just wasn’t feeling it! Dessert was a lemon “affair” cake that my sister picked up:
She was after a lemon meringue, but couldn’t find one to save her soul. Meh, everyone liked this one well enough! Here’s my piece.
I also ate one brownie. Yes, I can’t believe it….only one!! We sat out until 8pm enjoying the gorgeous evening, but alas, we had to get the kids home to bed. Much to their displeasure of course! I got a great photo of my Dad with the kids, though!
Because they’re both sitting ahead of him, he looks like a munchkin!! LOL! Once settled at home I parked it on the couch to watch the MMVA’s while sipping on a mug of David’s Tea:
Sleep was not my friend last night. I tossed and turned most of the night and true to form had a helluva time getting out of bed this morning. Ugh. I’ve never been a morning person! My shower did a good job of shaking the cobwebs loose and by the time I was dressed and had my face on I was ready for some eats. I made the same bowl for breakfast that I attempted last Friday only this one didn’t blow over in the microwave! I had to keep a close eye on it, though because it sure tried too! HA!
-2/3 cup water
-1/3 cup Quaker oats
-vanilla chai tea powder (about a tbsp)
-strawberries (thawed out)
-pecans
SO good! I’ll have to do this again sometime.
Worked whipped by so fast today! I love that. A one point I looked at the clock and it was already 11:20! SNACK TIME! I brought one of the blueberry muffins that I baked yesterday:
What a treat! Dense and flavourful with burst of blueberry goodness. My kind of muffin! I did an interval session on the treadmill today. It worked out to 2 minutes of walking on an incline of 7% with the speed at 4mph and 2 minutes of running with a .5% incline with a speed of 6mph. T’was a sweaty one!!

I really wanted to bring a big salad today, but I had some spinach and veggie pizza from Friday night that I didn’t want to waste so I took that instead:
I like my leftover pizza cold. How do you prefer it? Reheated or stone cold??? My afternoon delight was a bowl of watermelon.
I never get sick of watermelon in the summer!
Dinner was chicken done on the BBQ, grilled zucchini and steamed broccoli. The broc had some sweet onion salad dressing drizzled on top!
Tasty dinner! Mom, DD and I went to a blow out clothing sale after dinner (I ended up coming out with only a tank top!!) but before leaving I had a palmful of mint chocolate chips to curb my sweet tooth.
We were a bit early picking Mom up so I made a pit stop at the health food store because I received a coupon in the mail for a free loaf of Silver Hills bread that I wanted to use. You’ll have to come back tomorrow to see which one I bought, though! Hehe! I will show you a funky chocolate bar that I scooped up, though!
Interesting, no? Can’t wait to try it tomorrow! I dropped Mom off to change and then she walked to my place and we borrowed KC and went for a 3 mile walk. I didn’t get back in until 9:15pm! I love warm summer nights!
I can’t remember now if it was Friday or Saturday night, but I gave the famous “chocolate cherry bomb” a go!
Into my MB went approx a 1/4 cup Greek yogurt, 1 cup USVAB, 10 frozen cherries and 1 scoop of cocoa Camino dark chocolate powder. It. Was. Wonderful!
And I think that’s it! I’ll catch you all tomorrow!!

That lemon cake looks pretty amazing. I'd eat that instead of meringue, no problem! Although, I do love a good meringue as well.
ReplyDeleteI usually eat leftover pizza cold as well. Sometimes I have the urge to heat it up, but usually I'm too lazy for that ;)

So cute that the kids always want to make you both breakfast--I bet your hubby enjoyed it, minus the over-do of butter haha. I prefer my leftover pizza just warmed up a bit actually.
