A Day of Quick Eats

Happy Saturday! The weather continues to be fantastic although a wind has popped up that has me thinking we’re in for some rain tomorrow. I just keep telling myself that the rain is good for getting rid of some remaining sand and salt on the roads from winter. IMG_1059

  • 1 cup water
  • 1/2 cup Old Wessex 5 Grain cereal
  • cinnamon
  • PB&Co cinnamon raisin PB
  • kefir

I wasn’t too sure what I wanted for breakfast this morning and ended up with this. It filled my empty belly but was less than satisfying. Did I just say that????

I showered and got ready right away this morning because I had to take DS on a shopping excursion for a suit for his First Communion which is on April 25. If you’ve been reading this blog for awhile you will understand that I was dreading this trip a wee bit because DS would rather be in hockey gear than a suit. HA! He did pretty well and we found something satisfactory for both of us at the first store, on sale to boot. Before going home we walked over to the farmers market to buy some fresh donuts for the fam.

Lunch came late at almost 2pm because DS had a one hour skating session to go to. We had to grab something quick because DS had plans with a friend at 3 an we needed to run some errands beforehand. IMG_1063

This is a toasted English muffin with egg beaters and a LC cheese wedge and the last of the buttercup & butternut squash. Tasty! I also ate a mini key lime Lara bar while we were out. IMG_1064

The boys had to be out the door again by 5:30 for a lacrosse game. Yes, DS plays some lacrosse, too, although not competitively. He would love to play at a higher level and probably could, but lacrosse is one sport that makes me uneasy as it is pretty rough. Anyways, we decided to use up some leftovers from the fridge instead of me cooking a big dinner. I wasn’t too hungry so I made a chicken sandwich on a burger thin with a LC cheese wedge and some of this ginger wasabi sauce: IMG_1065

Yum-a!!! Dessert was a caramel Oikos with some granola on top. IMG_1068

I’ve got some frozen spinach thawing out for smoothies later that DD and I have plans to share. Look how it was frozen: IMG_1066

In blocks! How convenient is that? Anywho, I’m signing off for the night. Hope you’ve all enjoyed a wonderful Saturday and may the Easter bunny make a pit stop at your house tonight!

  2. I want a mini Larabar so badly. As if I can't cut a full one in half or anything... :)

    Frozen spinach is so easy for smoothies. I don't think it tastes as good as fresh but it's cheaper and I don't have to worry about it going bad.

  3. You're so funny Krista! I love that lacrosse makes you nervous and hockey doesn't :) I think I"ll be fearful when/if my future kids play anything. Great eats- love the squash at lunch. The caramel oikos does rock! It is a perfect dessert. Hope you have a wonderful Easter

  9. Isn't the weather fabulus! This is the first time I've been on the computer since Friday morning!
    I wish we had the mini bars the US gals get to have! It's a struggle to break my Cliff bars in half!
    I can't wait for the farmers market. My fingers are crossed I can start selling by the end of May...probably mid June.
    First Communion...man, that seems like SO long ago!

  12. Krista, even though your eats may have been quick, they were nothing short of delicious!! I just love them all- especially the caramel oikos and egg/laughing cow english muffin!!
    I'm so glad that the shopping trip went well. I bet it can be hard to get a boy to want to try on suits for more than 15 minutes!
