So here we are pretty much at the end of day 2 of the work week. How did it go for you? The sun was shining in my neck of the woods so you won’t hear any complaints from me! As I was eating my polenta at dinner last night I was struck by the though that it would be pretty darn good with a sunny side up egg over top. I promptly put some that was left in the pot into a bowl for my breakfast:
Beautiful and just as delicious as I imagined it would be!
Being Italian, I grew up eating polenta. Mom usually made it as a base for stews and meals with sauces. My favourite way to eat it by far is when it is prepared the night before and spread out on a cookie sheet, then cut into rectangles the next day and grilled on the BBQ. The middle stays creamy while the outside forms a delicious crust. Yum.
It was a keypunching kind of day at work today. I was just glad the Italian shower cookies had disappeared since I left yesterday! I started getting hungry around 11 so I pulled out a trusty Clif Mojo bar:
It was slightly squished from being in my gym bag, but that’s never stopped me before! HA!
I must admit that my abs and legs were quite stiff from my vigorous Pilates class last night so I opted to spend my time at the gym on the elliptical. I also did some really deep stretching. Even at that, my legs protested.

Note to self; although kale chips still taste good reheated, they are impossible to chew. Later in the day I had a generous serving of fruit salad:
I find I eat fruit a lot more if it’s already peeled and cut up.
DS had hockey try outs from 5:30-7pm so I knew that dinner would be way later than what we’re used to. I also knew I’d never make it that long without gnawing an arm off so I grabbed a granola bar for the road:
Tryouts are stressful. There’s 3 skates to make the triple A team for the fall and DS has made it through 2. Friday is the last skate so keep your fingers crossed for him! LOL!
I had pulled ground beef out for burgers, but none of us were feeling them when we got home so the fam had eggs and seeing as I ate one for breakie, I had oats. I just had to! Hehe!

- 1/2 cup Old Wessex 5 Grain cereal
- cinnamon
- blueberries
- almond butter
- granola
Hit the spot, baby! Well, The Biggest Loser is on so I’m peacing out, friends! Enjoy the rest of the evening…

I made sweet polenta for breakfast one weekend and it was amazinnnnng. I should totally make it again. That is my favorite clif bar :)Good luck DS!! We're all keeping our fingers crossed for ya ;)

mmm my mom used to make polenta pancakes.. but i havent had them in forever!
