Winner, Winner, Chicken Dinner

Bonjour! How was everyone’s day? I woke up to heavy rain this morning and my first thought was that I wouldn’t have to worry about the sun in my face all morning! HA! I’m just glad that it held off enough to give us a spectacular weekend. I was thinking last night that I hadn’t used carob chips in my oats for some time so I set them out for today breakfast: IMG_1104
-1 cup water
-½ cup kamut flakes
-cinnamon
-almond butter
-carob chips/coconut

Messy microwave bowl! Back tracking a bit to last night for a second….by 8pm I was hungry. I tried a mug of tea and when that didn’t help I busted out a smallish bowl of Alpen cereal with USVAB: IMG_1102
That was enough to take my min off my stomach, anyways!

Seeing as today was my Monday, it went by nice and fast. It also helped that there was extra work that accumulated over the 4 days we had off. If I have to be at work I prefer to be busy. My pre gym snack was my favourite Clif bar flavour, Maple Nut: IMG_1105
The treadmills were in use today so I hopped on the elliptical and bumped the resistance up higher than I would normally set it. That made for a heart pumping session! I also did 5 minutes of really good stretching in my legs because they ere felling a bit tight.

I’m going to have to set aside some time soon to make another batch of stew, soup or chilli so that I can replenish my freezer with on the go lunches. I find them so convenient when there’s no leftovers or I’ve just been to lazy the night before to get something ready.

Just before going home I ate a bowl of pineapple and strawberries…AKA summer in a bowl. IMG_1107
Dinner tonight was a chicken & rice type dish. I trimmed and cubed 6 chicken thighs and gave them a quick sear in a pan. Then I added a good 2 handfuls of mushrooms and a ¼ cup of Vidalia peach salsa. After letting that simmer for a few minutes I added some dried oregano, basil, chilli powder, salt & pepper, 1 cup of tomato sauce, 1 cup of water and 1 cup of brown Minute rice. I let that simmer for 5 minutes, then turned off the heat and left it covered for another 5. Dinner in no time! I served mine over the last of last night’s steamed veg: IMG_1108
Dessert was a double chocolate biscotti. IMG_1109

After dinner I went off to Pilates. I really enjoy my 2 classes so I signed up for another 10 week session. WOOT! As soon as I got home at 7:30 I made the kids lunches as well as my own so that I don’t have to worry about it after The Biggest Loser finishes. I just made a coffee and am settling in to watch some TV. Can’t wait! Hope you’re all enjoying some downtime, too!

  2. Glad work went by quickly- thats always nice :) And of course you know I'm wishing I had that bowl of fruit right now. Great quick dinner and the biscotti looks awesome. What do you have on tap for the rest of the week?

  10. what a wonderful and creative dinner! I love the sounds of it and it seems relatively easy to prepare!! Your summery bowl of pineapple and strawberries looked so refreshing! I'm loving fruit salads in the warmer weather!
