-1 cup water
-1/2 cup soft tofu
-1 tsp matcha powder
-splash of vanilla extract
-1/2 cup Quaker oats
-PC Sweet Cinnamon Sprinkles
I hauled out my trusty immersion blender and whipped up the water, tofu and matcha. Once that was up to a simmer, I dumped in the oats and vanilla extract. When it was nice and thick I creamed it all up with the blender, poured it in the bowl and doused it with the sprinkles. So incredible!
I made another green monster last night to “eat” while watching the Biggest Loser. I used the same ingredients as the night before, only a bit more of each…..spinach, strawberries, unsweetened almond breeze, agave and ground flax seed.
I must admit that I am really enjoy these and have already started looking forward to one each night!
As per yesterday, I nibbled on some dried figs as I worked.
I also noshed on these bad boys throughout the day…
I “hid” the handful in my desk drawer so that I didn’t inhale them! In doing this, I enjoyed them over the course of the day. I didn’t go back for more and I hope that the bowl is EMPTY when I get to work tomorrow!! :)
My back has been giving me a bit of grief since the weekend so I decided it would be best to take my run down a notch today. I ran at 6.2 with no incline for 50 minutes. It was a really nice pace for me (9.4 minute mile) and it didn’t aggravate my back issues!

Lunch today was a Spicy Szechuan Style Vegetables & Chicken Weight Watchers Smart Ones.
These meals are always good in a pinch as far as I’m concerned. I thought about bringing some chili for lunch, but wasn’t really feeling it. This guy was pretty tasty although I wish I had thought to bring extra veggies to bulk it up.
Lunch "dessert" was another bowl of sweet strawberries....
Just before leaving work I snacked on a handful (literally) of Nature's Path Optimum Cinnamon Blueberry cereal. I really needed something with crunch as I was good and ready to leave but the clock was moving so s-l-o-w!! :)
