I loved today! It was Family Day here in Ontario which meant no workie for me today. DS had a 6am hockey practice and then hockey camp afterwards until 4pm (sounds like a lot, but we’re hard pressed to get that kid off the ice!) so I got a lot of odds and ends done.
It was just DD and I for breakfast because my hubby was still at the rink so I decided to make us a batch of Hungry Girl pancakes with raspberry sauce:
The sauce was simply 1 cup frozen raspberries, 1 cup of water and 2 tbsp of agave. I brought it to a boil and let it go until thick…about 10 minutes.
These were awesome and a nice switch from my usual.
Next on the agenda was a game of Upwards with DD along with video watching and then I spent some time on the computer. The baking bug eventually caught up with me so I made a batch of Mama Peas Vegan Pumpkin Bars. Only I did them as muffins…and with chocolate chips!
I also got a pot of quinoa going to use throughout the week. I set some aside to cool so I could use it in my lunch. I had some leftover raspberry sauce, too and decided that a parfait sounded appealing.
I layered goat’s milk yogurt, quinoa and raspberry sauce to create a delicious lunch.
Then I had 3 mini cinnamon chia muffins leftover from the potluck at work on Friday.
I had some time to myself this afternoon because my hubby took DD back to the outdoor rink. I decided to use it quietly by reading some magazines that have been piling up. I also made myself a mix of Bellagio white hot chocolate with some instant coffee to sip on.
The silence in the house was a nice change. I know there may be some out there who think that a house filled with the noise of a healthy family trumps all, and I agree. But I also think that sometimes you need a little solitude, too.
I finally peeled myself off the couch at 3 to go with my hubby and DD to pick my boy up from camp. He had a great time which isn’t a huge surprise to us.
We had grilled feta & spinach stuffed turkey sausages for dinner tonight with sweet potato discs (also done on the George Foreman) and quinoa. I drizzled some turkey gravy from the fam’s mashed potatoes on my quinoa for a little flava. :D
And one of the ^above^ muffins for a sweet end. They are moist and delicious, BTW! I’ll be tuning in to the Olympics again tonight. I have been watching quite a bit, I just haven’t mentioned it! Can’t wait to see the figure skaters. What is your favourite event to watch???

ReplyDeleteSound like a fabulous day! Wonderful that you had time to just cook & bake! Great creations- the muffins look amazing. I love cooking up a big batch of grains to use throughout the week!! I usually love watching figure skating but I haven't really watched any of the olympics this year!

Wish we had a family day in the US--I'd take any occasion to get a day or two off! :-) I have yet to try the Hungry Girl pancakes--I have had a few of her recipes I don't like and a lot that I do, but I usually end up making some switches and substitutions to my liking. I can't wait for the new cookbook to come out!
