Today got off to a bit of a rough start. I woke up at 3am and had trouble falling back asleep so when the alarm went off I could feel the sass oozing out of my pores. Top that off with DS throwing a fit over not wanting to brush his teeth and DD “forgetting” about a test she had today and I was one sour puss. Breakfast helped relax me, though….and the fact that I strongly suggested both kids go watch TV downstairs!

By the time I got to work I was feeling more like myself. And I was busy so that was good, too! Phew! Before heading off to the gym I snacked on a raspberry oatmeal muffin:
To be 100% honest, I did not feel like going to the gym today. But I went. And I was mostly glad I did. I never quite got into the groove, but ya never regret going, am I right?? My machine of choice today was the elliptical.

I was looking forward to lunch all day because last night while preparing dinner I also made chickpea/brown rice burgers! This was my first attempt at something like this and they turned out splendidly! I mashed up about ½ a cup of chickpeas then added a ¼ cup of panko bread crumbs, ½ cup jasmine brown rice, salt, pepper, cumin and chili powder all to taste, about 1 tbsp fresh parsley and lastly, 1/3 cup of egg whites. Here they are hanging out pre cooking:
Note: I let them chill in the fridge about 15 minutes before placing them on the George Foreman. Here they be after 10 minutes of cooking time:
DD took one in her lunch and I packed the other. So here’s mine today all dressed up in a WW English muffin with lettuce, cherry tomatoes and spicy Dijon mustard:
Drool! I also ate the rest of last night sweet potato dipped in Sabra hummus:
All together now!! :D
Later on in the afternoon I feasted on some strawberries but my camera seems to have eaten the picture!! Can’t wait for June so I can get these sweet babies local.
For dinner tonight I made this stir fry from the newest issue of Clean Eating Magazine:
The only item that I changed up was the beef. I used pre cooked chicken breast instead to make the dish come together faster. Cuz you all just know that we were back out tonight!! ;) I served the fam’s with cork screw pasta and mine with brown jasmine rice…
This meal was freaking awesome. Not only did it taste great, but it came together in less than a half hour! I highly recommend it. For a bit of a sweet end I ate an All Bran bar:
DD and I left at 5:30 for Pilate’s. We only did the one class tonight because DS’s hockey team had their first play off game at 6:30 at the rink by our place and I didn’t want to miss it. They ended up losing 1-0, but played a fabulous game none the less.
Anyways, off to watch The Biggest Loser. I hear there’s suppose to be some “big” announcement tonight…

Sorry about the rough morning! Sleep issues seem to be going around the blogs these days. That chickpea burger sounds fantastic!! Boo to the loss but his team will get them next time :)

ReplyDeleteHaving trouble sleeping is the worst. Definitely not the greatest for setting up a happy day the next day. Those homemade burgers would have pepped me right back up though, they look SO delicious.
