I’m Loving Quinoa

The sun was shining bright today and the sky was a brilliant blue. It’s been a while since we’ve seen that around here and it made for such a positive atmosphere. It was still quite cold out, but there’s something to say for Mr. Sun, no? I started out my day by trying out Erin’s All Bran pancake recipe. I only changed one item because I didn’t realize that I was out of cottage cheese until it was too late. I used kefir instead. That was probably a mistake as it’s no where near thick enough so my ‘cake didn’t want to set up right. After mangling it in the pan trying to flip it, I managed to serve myself up a half decent looking, yet delicious breakfast. 100_8034
As you can see I added some thawed blueberries and peach slices. What you don’t see is the drizzle of maple syrup and cinnamon sugar. 100_8035 This was a great alternative way to eating plain ole All Bran and kept me full for hours. Go, Erin!

Backing up to last night for a minute…I made another smoothie using kefir for a snack. 100_8030

This one had my favourite fruit combo in it; peaches and blueberries! There was also 1 cup of kefir and a tbsp of honey. I swear, kefir makes the best smoothies ever!

I ate 2 of the Clementine’s and ½ the bar in the morn, the rest in the afternoon. Gotta space them out, right? ;)

I decided it would be a good day to get my rear on the treadmill for a run. I did 30 minutes at 6mph then another 15 at 4mph with a 7% incline. I swear the incline is the hardest thing ever!

Lunch, of course, was leftovers from dinner. The only difference is that there’s no white balsamic on today’s meal. Instead, it was dressed with some hot sauce. Gave it a whole new dimension of flavour….in a good way! 100_8043

Back before Christmas DS had an out of town hockey game but the ref’s didn’t show so it was to be rescheduled. Well, we found out late Sunday night that tonight is game night! YIKES! I didn’t want to miss Pilates tonight because there is another out of town game on a Tuesday at the end of the month that’s farther away which is the one I’d rather go to. All that aside, this info meant that dinner had to be super fast as the fam had to be on the road by 5pm to get to the 6:30 game (he needs to be at the arena 45 minutes ahead of time). I had my hubby pick the kids up so I could get straight home to start supper. I decided that pasta was the quickest route and the best carb loaded meal for my boy before the game. I whipped up a meat sauce for them, but mine was made with a chopped up Yves veggie sausage and vegetables that included the following:
-mushrooms
-onions
-garlic
-red pepper
Once the base was cooked through I added a healthy dose of homemade marinara sauce then poured most of it over quinoa; 100_8050

I know that’s quinoa twice today, but I can’t get enough of it lately!! Bet ya can’t guess what I’ll be having for lunch tomorrow!! LOL!

I just got back from a killer Pilate’s class. I think my butt is gonna be very sore in the morning! I’ve got a coffee waiting on me and I’m just waiting for the Biggest Loser at 8. Tomorrow’s Wednesday!! Half way to the weekend….

  1. I have been craving pancakes for awhile now, yours look super! And with all the cooking I do, I still haven't ventured to quinoa.

  8. so many people have been enjoying quinoa lately! I feel like I see iteverywhere and it looks SO good! I havent had it in so long!

    I love peacches in any smoothie, it adds such great flavor!
