Here’s To A Good Monday!

So it’s Monday again. Did everybody have a great weekend or what? I had the BEST sleep in my own bed last night. T’was lovely. And you bet I did not want to leave the warmth this morning. Because I lingered, I made my oats in the microwave. 100_8023
-1 cup water
-1/2 cup PC 5 grain oats
-trail mix
-splash of almond breeze 100_8022
The mornings are getting brighter sooner, but not soon enough for me to turn that crappy flash off to take my breakfast pictures!

Work was thankfully low key today. Here are my snacks du jour: 100_8028 100_8024 100_8025

I hopped on the elliptical over the noon hour and got caught up with Ms. Rachael Ray.

Rach made some coconut crusted chicken breasts today that I want to try out. I was drooling all over the machine as she was preparing them! I’m hoping to have some time for that this week. I also want to get back on track with my meal planning as I’ve left it far too long. Things have been pretty nutso since the holidays and I need to ground myself again.

Lunch was pretty cut and dry today. I used the last WW bun from the weekend and made a honeyed ham and Swiss cheese sandwich. 100_8027

Plain, simple, delicious! This is DD’s absolute favourite sandwich combo so I made her one, too, only in a WW bagel.

The photographers who were at the tournament this weekend have already posted all the photos online so I spent a good part of my afternoon weeding through the 5 games that DS played to find the best shots of him. I’m eager to place the order for my disc. Like I mentioned, good thing work wasn’t busy today!! If you missed my post from yesterday, please check it out! There’s a hilarious shot of DS with his very first hockey trophy!! LOL!

I made a stir fry for dinner tonight with a red pepper, mushrooms, chicken breast and some mango that I didn’t finish today. I served it with a side of quinoa and a sprinkle of white balsamic vinegar: 100_8029

Damn tasty! I’ve already packed the last of it for my lunch tomorrow.

After dinner I dropped DD off at dance and then went to get the grocery shopping done. The fridge was looking pretty bare. When I got back my neighbour was out so I chatted with her for a bit. It’s snowing out but not too cold and looks really nice out. My hubby just finished taking the Christmas tree down. I know, we’ve been slacking on that but we’ve been busy people! :) I think I’m gonna settle in for some TV time now so I’ll catch you later!

Bye for now!!

  1. oh i LOVE that you added mango to your stirfy! what an awesome idea :) i bet it gave it an extra sweet little zing zang.

  2. I saw that photo while I was at the gym but never got a chance to comment. He's adorable!!! Love watching the Food Network while working out! Can't wait for good ol' morning sunshine.

  3. Glad you had such a nice weekend and got some sleep in your own bed! Nothing like it!! Great job on dinner- love a good stir fry. I am thinking about giving mushrooms a second chance, I have claimed to hate them for years.... Have a good night!

  4. I wish my gym had Rachel Ray playing. All they have is ESPN and news. BORRRRING! Will definitely have to try a Cliff Bar...

  5. Glad you settle back into your routine after a busy weekend!

I haven't had a ham and cheese sandwich in forever, and now all of a sudden I want one! :)

  6. LOVE MANGO!! esp in stirfry, that in pineapple!!

  7. Your dinner looks scrumptious! I hope you get to make that coconut-crusted chicken, it sounds fantastic!

  8. Glad you had a great weekend! Sleeping in your own bed after a long weekend on the go is the best feeling.
Loving that stir fry, I haven't made one in a while. I'll have to try the mango addition one of these times!

  9. I saw Rach making those too--drool! I gotta try em soon too.

I'd love to hear from you!! Please leave a comment!
