Here’s To A Good Monday!

So it’s Monday again. Did everybody have a great weekend or what? I had the BEST sleep in my own bed last night. T’was lovely. And you bet I did not want to leave the warmth this morning. Because I lingered, I made my oats in the microwave. 100_8023

The mornings are getting brighter sooner, but not soon enough for me to turn that crappy flash off to take my breakfast pictures!

I hopped on the elliptical over the noon hour and got caught up with Ms. Rachael Ray.

Rach made some coconut crusted chicken breasts today that I want to try out. I was drooling all over the machine as she was preparing them! I’m hoping to have some time for that this week. I also want to get back on track with my meal planning as I’ve left it far too long. Things have been pretty nutso since the holidays and I need to ground myself again.

Lunch was pretty cut and dry today. I used the last WW bun from the weekend and made a honeyed ham and Swiss cheese sandwich. 100_8027

Plain, simple, delicious! This is DD’s absolute favourite sandwich combo so I made her one, too, only in a WW bagel.

The photographers who were at the tournament this weekend have already posted all the photos online so I spent a good part of my afternoon weeding through the 5 games that DS played to find the best shots of him. I’m eager to place the order for my disc. Like I mentioned, good thing work wasn’t busy today!! If you missed my post from yesterday, please check it out! I made a stir fry for dinner tonight with a red pepper, mushrooms, chicken breast and some mango that I didn’t finish today. I served it with a side of quinoa and a sprinkle of white balsamic vinegar: 100_8029

Damn tasty! I’ve already packed the last of it for my lunch tomorrow.

After dinner I dropped DD off at dance and then went to get the grocery shopping done. The fridge was looking pretty bare. When I got back my neighbour was out so I chatted with her for a bit. It’s snowing out but not too cold and looks really nice out. My hubby just finished taking the Christmas tree down. I know, we’ve been slacking on that but we’ve been busy people! :) I think I’m gonna settle in for some TV time now so I’ll catch you later!

  8. Glad you had a great weekend! Sleeping in your own bed after a long weekend on the go is the best feeling.
    Loving that stir fry, I haven't made one in a while. I'll have to try the mango addition one of these times!
