Bringing Back The Hummus

I had a great start to a new week. The sun shining out there today helped tremendously! Was the sun shining where you are?? I was too lazy to get the kids lunches ready last night so that was a priority this morning. I had some leftover pasta sauce in the fridge so I made them sloppy joe wraps with that and some mozzarella cheese. They both love this type of lunch. While doing that I got my OIAJ cooking in the microwave! IMG_0198

-1/2 cup Quaker oats

I had to use an extra large spoon to get to the bottom of this baby, but it was worth every bite! The kids laughed when they saw that I’d eaten right out of the jar. I’m sure they’ll tell everyone about it, just like DS told his hockey team and most of the parents that “his Mom” can do over 100 push ups! As if. Thank God I wasn’t in the change room when he made that announcement! *BLUSH*

The chai tea was wonderful and that was my very last pineapple flax muffin.

Yoga was going on in the gym today but we can still go in until 12:40 so I made good use of the time with a nice run.

I also did some great stretching which felt just amazing. Especially in my back. Due to the type of job I have, that area tends to be the tensest in my bod.

I didn’t dig into lunch until almost 2pm. I just wasn’t feeling very hungry today for some reason. I polished off the last of Mama Peas lemon lentil soup: IMG_0204

The boys were on the ice from 4:30-6pm tonight so it was just DD and I for dinner before she had to go to dance class. I pulled out the George Foreman grill and loaded it up with turkey sausages stuffed with spinach and feta (from Costco), sweet potato disks a la Allie and re heated the broccoli from last night. I also broke out a new container of Sabra hummus: IMG_0208

It’s been so long since I’ve had hummus that I forgot how much I enjoy it! I used it as a dip for the sweet potato and broccoli: IMG_0210

I L-O-V-E-D the sweet potato on the grill! Brilliant idea, Allie! And check out the feta oozing out of the sausage… IMG_0212

These were also great. I have 5 more left for another night. My sweet end was 2 squares of 70% dark chocolate with cacao nibs. IMG_0214

Not sure what the funny little glare is on it. Meh, no matter!

I just got back home and am enjoying a small mug of Bellagio white hot chocolate. I didn’t take a picture because I just know that the flash woulda killed it. Now I’m off to help DS count out 100 pennies for school tomorrow as it is day 100 of classes and they’re doing a fun assignment, apparently. Fun times. :D

  1. That is so cute about DS and the pushups! Do you microwave the jar itself? I wasn't sure if there would be a reason not to...I have a big empty jar of Maranatha to use up too!

    The sun was definitely shining and I took full of advantage of it despite the chilly temps :) Read-walkin'....you know it!

    Aren't those sweet potato discs great!? I love how they cook so fast in the GF/Panini press. SO fast!

  7. Hey chicky! Sounds like a nice Monday to me :) I just bought one of those maranatha jars from Costco last weekend! I'm finishing up my TJs AB jar, but can't wait to dig into it! I think its wonderful that your kids are so proud of you! How adorable. Great dinner. I have a sweet potato I plan to cook into crispy disks later this week (can't wait!!)Hope the rest of your week goes well

  9. I thought I was the only one that couldn't find the yogurt!!!!

    I have tried Superstore, Safeway, and Save-On foods. No luck. I don't even know where people are finding Liberte.

    In more positive news I found Fage at Safeway in Idaho this weekend. It's pretty good but I prefer Oikos (which is what they used to carry). Mind you it's significantly cheaper which is a definite bonus! :o)

  11. That's funny about what your son said! lol! Gotta love kids.. I think you should do a video for us of your 100 push-ups, Krista... ;) LOL!! I can do 1/2 that, but they're all girl ones!! After that, I die. haha!!

  18. Those look like the sausages I eat too--except mine are chicken, not turkey! I like cutting them up and mixing them with a mixture of au gratin potatoes and a bag of frozen broccoli (thawed). Really good!
