Couldn’t Wait For Lunch

If I didn’t work I could lounge around in bed each morning for as long as my little heart desired. It would be so luxurious. Instead, I wake up to what feels like the middle of the night because it’s still dark outside and d-r-a-g my bootie to the shower so I can at least be coherent. Hmmmm…..maybe getting up early 5 days a week is what makes the weekend “sleep ins” so appealing! IMG_0382
-1 cup water
-1/2 cup kamut flakes
-cinnamon
-kefir
-raspberries & hemp seeds

Before I popped the berries into the microwave I stirred in about a teaspoon of honey to sweeten them up a tad. YUM-O!

This was the last raspberry oatmeal muffin. Looks like I’ll be doing some more baking this weekend. Actually, I received a special tool in the mail yesterday that will help me out with my baking! And in my world, not much beats fresh, sweet, juicy pineapple.

My goal at the gym today was just to move. I was feeling pretty stiff when I woke up this morning and just needed to work the kinks out of my body. Time on the elliptical = mission accomplished.

This is Ryvita pumpkin & oat crackers topped with avocado/LC mash, sliced, grilled chicken breast and sweet potato rounds.
How fabulous does that look? IMG_0384 These were OUTSTANDING! And because it was basically finger food, it took awhile to eat so the goodness was stretched out. LOL! BTW, the avocado mash was basically a half an avocado and LC cheese wedge smooshed together to make a “spread”.

The kids were both on the ice today (or so I thought) from 5:30-6:20, but at opposite ends of town, of course. HA! I needed something fairly quick for an early dinner and decided to make homemade burgers on the George Foreman (GF). I used a pound of extra lean ground beef, 2 egg whites, parsley, salt & pepper. I realized too late that I was out of bread crumbs so I crushed about 1 cup of these “chips”.

These worked really well and gave the burgers great flavour without having to add too much else. I topped my burger with Dijonnaise, ketchup, pickles, hot pepper rings and lettuce. The bread was an Arnold Thin: IMG_0388 IMG_0387

When DD and I arrived at the rink I knew something was up because the lot was pretty empty and usually it’s hard to find a spot. Turns out lessons were cancelled this week! At least wasn’t the only parent to not realize it….there were quite a few of us there. I decided to head to the other rink to catch DS’s practice.

I was feeling a piece of chocolate banana cake when I got home so I cut myself a small slice: IMG_0390

Once I’m done here I’ll be making a tea and settling in to watch my eye candy for the week in the form of The Vampire Diaries. I’ll be checking up on our awesome Canadian hockey team, too! And I just heard that Canada got another gold! WOOT!! :D The only thing better than that right now is the fact that tomorrow is Friday. Bring it on….

  3. I agree! You can never go wrong with pineapple- so delicious! Can't wait to see what you bake up this weekend- your creations always look INCREDIBLE. I have been so bad- I haven't watched like ANY of the olympics..Hope you have a wonderful Friday

  8. I cherish weekends and my Thursdays off to get some R&R--the week can definitely catch up to you fast!

    and just as i was reading your post, i found that you would be such an inspiration to mothers on the run! now a days they've signed their kids up for so many activities and get lazy making thing at home, ending up buying take out...leading to all of todays problems. but look at you! making burgers when you have to be out the door! i hope i can do that when i'm in a crunch! you make it look easy!

  11. That lunch combo sounds fantastic! How fun and unique! I live for the days that I don't have to jump out of bed and get moving. Aw man to going all the way to the rink only to find out that it was cancelled! Hope you have a great Friday :)

    We know what mornings can be like, especially in Montana because it is usually dark when you get up and dark when you come home. We love to see people wake up with a little KAMUT.
