Raw Chocolate Pudding Recipe

I had a few appointments today so I booked the day off work. And what a beautiful day it was! Warm (er) and sunny….perfect. I enjoyed an extra hour of sleep before getting the day started. I also decided to eat my breakfast after the kids were at school so I could do so in peace. 100_6691

  • 1 cup water
  • 1/3 cup sunrise blend with quinoa
  • cinnamon, pumpkin pie spice
  • raisins
  • pumpkin puree
  • almond butter
  • agave

This seems to be quickly becoming my favourite flavour combo this fall…

My first appointment of the day was to the allergist. I got the usual skin scrapes… 100_6693

Bumps=allergies. These ones indicate environmental allergies. Dust, mites, CATS (!!!) I’ve had cats my whole life and just now find out that I’m allergic to them! I was a little disappointed because I went there hoping to find something food related that would shed some light on my digestive problems. No go. **sigh** He does suspect that because I have an allergy to pollen, certain fruits (pears in my case) may cause me issues. Next step is to see a “stomach” doctor and to start some allergy medication to see if that helps. I go back in 3 months and will hopefully have the other specialist appointment set up soon.

I stopped by a natural food store on my way home and picked up a few goodies: 100_6698

Goat’s cheese mozzarella and pumpkin seed/cheddar Doctor Kracker flat breads! I saw the crackers on Coco’s blog and although they weren’t her fave, I knew I would like the combo. As soon as I got home I warmed up some curried red lentil soup with chickpeas & quinoa and topped it with some grated goat cheese. A cracker sat pretty on the side of the bowl! 100_6699

What a GREAT lunch! I savoured every single bite. Since the day was so gorgeous I decided to go out and rake the leaves off the front yard. Once that was cleaned up I grabbed my ipod and went to steal KC for a nice long walk. Glorious!

I had enough time before I had to pick the kids up from school for some blog reading and snacking! I finished off the raw chocolate pudding that one of the hockey Mom’s , Manon, sent home for me. DD and I shared some last night and let me tell you, it is fabulous! 100_6701

This photo does not do the pudding justice. Manon was kind enough to let me share the recipe with all of you. The ingredients are all simple yet come together easily to make one tasty, good for you treat!

Chocolate Mousse Pudding

Makes 2 servings.

1/4 cup pitted medjool dates, soaked
1/2 cup raspberries
3/4 cup or more water
1/3 cup pure maple syrup
1/2 tsp. vanilla extract
1 avocado
1/4 cup raw chocolate powder or carob powder

Place the dates, water, maple syrup and vanilla in a food processor or blender and
process until smooth.

Add avocado, raspberries and chocolate powder and process until creamy.

I can’t wait to make this myself.

Next stop was the eye doctor. I’m happy to report that there’s been no change in my vision since 2006. PHEW! I ordered some “better” contacts and new frames which I LOVE! I get to pick them up in 4 days so I’ll be sure to post a picture of the ones I have now and the new ones.

Dinner was rush rush because by the time I got home from the doctor I only had 45mins before Pilate’s started. I whipped up a toasted WW Arnold Thin with egg whites and pepper jack cheese. A honey crisp apple was on the side; 100_6703

Now I’m back home, watching SYTYCD Canada and blogging, of course! The boys are downstairs watching Transformers 2 so it’s nice and quiet. :D The Biggest Loser is on in a bit and I plan to eat the last piece of banana cranberry pumpkin cake. And guess what? I finished Twilight last night so I’ll be diving in to New Moon when I go to bed. I’ve read thousands of books over the years and I can honestly say that Twilight was in my top 10 best reads ever. What a poignant love story…. **sigh** I’ve decided to let DD read it, but not the other 3. I think Twilight will be a good read for her.

Off to watch some tube!

  2. What kind of stomach issues are you having? I was diagnosed with IBS about 3 years ago...its not 100 percent now but its definitely better than it was, I know a lot more what I can eat/can't eat.

  3. Today would have been a great day for me to play hookie. It was 80 degrees and sunny here in TX. That pudding looks beyond good...I should try that recipe soon.

  4. Wow! I've never had an allergy test. i'd be afraid they'd tell me I was allergic to a food I really loved like cantaloupe haha. I want those Dr. Krackers so bad! They look amazing. The pudding looks jammin

    congrats on that your vision didn't change! I should check out mine. Better contacts? which ones? do you use 1 month disposable ones?

    so glad that you liked the Dr. Krackers.... I know a lot of people would give it a better review than me (I'm a little harsh sometimes).

  14. Allergies are no fun at all - and I know that all too well unfortunately.
    I am also allergic to certain pollens (alder and birtch) and definitely have issues with certain fruits. I can't have raw apples, pears, plums, peaches, nectarines or cherries! It sort of sucks. But I can have them cooked/heated, so maybe you have to cook your fruits like I do?

    That chocolate pudding looks AH-Mazing. I will be making it. Thanks so much for the recipe!
