Just What I Needed

Happy Sunday, everyone. I did a whole lot of nothing today which, as the title of this post indicates, was just what I needed. Looking back, the fam and I had quite a busy week which would explain my lack of motivation today. I can roll with that!

I made something for breakfast today that I’ve been wanting to try for a while but keep forgetting about….polenta. 100_6399

  • 1/2 USVAB/water
  • 1/4 cup polenta (corn meal)
  • cinnamon
  • dried blueberries
  • walnut pieces and cinnamon honey 100_6398

Oh, my…was this ever good! I’ll be using polenta at breakfast time a lot more from now on.

After spending a few hours out at the farm this morning, we came home and got some lunch into us. I had an open can of chickpeas in the fridge which I mixed with some homemade marinara sauce and heated through. I served it up with a slice of toasted multi grain bread; 100_6401

Then I smeared some cinnamon honey on a piece of banana butternut bread; 100_6402

Don’t mind that little black dot! It’s a piece of nut…This is one tasty bread. It is very moist and dense and packs a great punch. I’m thinking of turning it into muffins next go around…

DD was invited to go to the movies to see “Cloudy With A Chance Of Meatballs” this afternoon so after lunch was done I drove her over to her friend’s place. Upon arriving home I made a coffee, plopped myself on the couch and dove into the third book I ordered from Amazon.ca which arrived in the mail on Friday; 100_6392

WOOT!! Veganomicon!!! What a GREAT cookbook! I’ve tagged many a recipe to try over the next few weeks. If you have this book (and/or ED&BV), let me know in the comment section what your favourite recipes are!

Speaking of ED&BV, I did get off the couch long enough to bake these here cookies; 100_6403

I was a tad worried at first because the dough was really dry, but they baked up great! 100_6404

Of course I tried one three and loved how rich they are. I didn’t eat the 3 all at the same time…that would’ve been too much! Definitely a great way to curb a sugar craving!

Dinner tonight was baked salmon and green beans; 100_6405

I buttered up the beans a bit and they were cooked to perfection, in my opinion. See above for my sweet end. :D

I’ll be going to bed right after the Amazing Race tonight because DS is on the ice at 6am until 7:20 for practice tomorrow. I’ll be meeting my hubby there at 7:15 so he can get to work. Tomorrow is a PD Day for the kids and DS will be at hockey camp at the same rink from 8-4:30, so I still have to figure out what to do for his breakfast. Hmmm….We should all be good and tired this time tomorrow!

    I love polenta, but have never had it "sweet". I'll have to try that!

    I got Veganomicon out of the library a few weeks ago. There are so many great recipes in there! Cookies look yummy!

  3. So jealous of your Sunday!! Ours has been crazy /busy with driving back from the wedding and catching up with house work. Isn't marinara sauce just awesome? I love it with just about anything. Yummy cookies

  8. such a great relaxing sunday! polenta at breakfast? wooo... I need to try that, I'm sure it fuels you well! And those cookies seem really good too, I've been wanting to buy that cookbook, but.... for some reason I haven't yet... :(

  10. I've never had polenta but it always looks so creamy and delicious! I need to try breakfast polenta - yum!

  11. Sounds like another great cookbook--can't wait to see what you make outta it. I need to put in a book order at the library soon and ED&BV is already on my list! :-) Sometimes I get a little leary about baking from cookbooks though because I like the real feedback on sites like AllRecipes! Ha.

    As for the pizza dough--I actually used my bread machine for it, which made it a heck of a lot easier! As for refrigerating it, I can't see why not. It can be frozen though.Just follow directions for kneading dough, and shape dough into 2 balls. Coat balls with cooking spray and place into a ziptop plastic freezer bag. Thaw overnight in a refrigerator. Cover and let rise in a warm place free from drafts' 1 1/2 hours or until doubled in size.

  12. I have Veganomicon and I must say that although all the recipes sound good, many of them call for some obscure ingredients! The chickpea cutlets that everyone was raving about on their blogs not too long ago are pretty good, though somewhat labor-intensive (all the garbanzo-smashing). But if you enjoy "stringy" foods, you'll definitely love these babies. Mmm, I can smell them now....

  13. I don't know how you do it all Krista! So glad you had some couch time :) Your polenta looks beautiful. Those cookies are to die. How could you only eat three?! Teach me! Do you listen to your body or something crazy like that? :)
