Phew! What a busy day! It all started off with a 4 hour training session at work this morning. To be honest, I was dreading it with a capitol D, but it turned out just fine. My breakfast held me over really well, too!
-1/4 cup POM Wonderful
-3/4 cup water
-cinnamon
-1/3 cup oat bran
-2 tbsp dried fruit
-banana
-peanuts
The POM Wonderful gave the oat bran a great tart kick! Loved it. My hubby and I have been working our way through a bottle of the original POM and the blueberry infused one. I will do a full review in a few days.
I dug into my Parnoosh dates about 11am, during a short break from the training;

I had to leave work a 1/2 hour early today to get DD ready on time for rehearsal so lunch was cut short. I packed a scrumptious salad that got topped off with blueberries, raspberries, 1/2 cup green lentils and there are some cukes and tomatoes hiding in there, too!
I topped it off with the last bit of my strawberry pomegranate dressing. I cooked up a big batch of lentils last night you you shouldn't be surprised to see them pop up on the blog in some form or another this week. :)
Lunch dessert was a banana rhubarb muffin;
Here's the recipe in case you missed it on Oh She Glows;
Banana Rhubarb Muffins
-2 cups whole wheat flour
-1/4 cup of brown sugar (not packed)
-2 ¼ tsp baking powder
-1 ½ tsp cinnamon
-1/4 tsp nutmeg
-1/4 tsp salt
-1/2 cup Egg Beaters (or 2 eggs)
-1/4 cup agave nectar
-1 tsp vanilla extract
-2 cups very ripe pureed bananas
-1/2 cup diced fresh rhubarb
*Preheat the oven to 350 deg and lightly grease 12 cup muffin pan
*In a large bowl, combine dry ingredients (first 6)
*In a smaller bowl combine wet ingredients (next 4)
*Add wet to dry stirring just until it comes together
*Fold in rhubarb
*Disperse batter into muffin cups. They will be quite full
*Bake for 30 minutes, allow to cool in pan for 10 minutes and then transfer to a wire rack to cool completely
Enjoy! Just a quick side note here. Three bananas should do the trick in getting you 2 cups pureed. I pureed the bananas in my Magic Bullet with a splash of water which worked out perfectly!
As soon as I got home I changed into some comfortable clothes and gathered all the dance stuff together. The kids cabbed it to my parents as usual for a Monday and were eating an early dinner there. I grabbed a container of mango that I cut up last night and off I went to Mom's.
I also cooked up a SOL veggie burger last night and popped it on an English muffin with a LC wedge and some fig preserves once cool. I took this along in my bag to eat at the studio while I watched the dancers.
Not pretty, but darn tasty. You're not really allowed to eat in the theatre, but I was starving by 7pm so every time they lowered the lights, I snuck a bite! Such a rebel, I know. :) We left to come home at 8:30 and I ate a cinnamon apple z bar en route;
