I woke up to fabulous weather for a Friday! Going to work was a bit of a bummer, though because the kids were off school today and my hubby was off work. No play for Krista! I got some steel cut oats started last night for my breakie today;
-2/3 cup water
-1/3 cup steel cut oats
-cinnamon, salt, vanilla extract
-2 tbsp dried fruit
-peanuts and vanilla coffee creamer
Ready, set, go in three minutes! Sorry the bowl looks so messy. It never stays clean when I cook my oats in the microwave.
Because dinner was a little earlier last night I was feeling hangry by 9 so I finished off the container of cottage cheese (about a 1/3 cup) with a scoop of raspberry jam.
I love fruit preserves mixed in my cottage cheese. I ate my last 3 figs before the gym today. I remembered to take a picture of the seeds, too!
Between the nice weather and the fam being at home, I really, really didn’t want to go to the gym, but I figured going home and having to come back would be worse so I went. Turned out that I had a great run plus 5 minutes of beautiful stretching!

I went to the kitchen straight from the gym to heat up my lunch and found a massive amount of food set out for grabs! Healthy stuff, too! I garnered my inner Sarah and stocked right the heck up. Girl, I think I might’ve made you proud! Check it out;
Gorgeous wraps, bread and tomatoes and a banana muffin.
Salad! There’s strawberries, blueberries and pecans in there, too.
Another wrap, melon and a few treats. I went back a few hours later and there was still food there so I helped myself to another wrap, bread and salad.
I almost feel like Miss Piggy posting all this, but it would’ve just gone to waste and I’m sure there were some who took way more than me. I had to give my head a little shake when I went back the second time and noticed that while there was a lot of salad and sandwiches left, the dessert trays were empty. Unfortunately, 95% of the staff here is overweight and I don’t mean that in a smart ass way at all. It’s just a fact and I wasn’t really surprised that the sweets were MIA. Meh, more of the good stuff for moi! :)
Can you believe I managed to mostly eat the lunch that I packed? The only thing I traded was my berries for the melon which I ate later in the day. Read on to see what I saved for my dinner. You can bet the fam was happy with their “take out”. :)
So here’s what I DID eat for lunch, as planned;
Last night’s pork tenderloin, couscous and veg leftovers and ½ of this Blueberry Crisp Clif Bar.
Oddly enough (for me), my packed lunch kept me satisfied enough that all that food sitting at my finger tips didn’t tempt me at all over the afternoon. A few years ago I would’ve eaten most of it, hungry or not! Man, I’ve come a long way!
I spent the remainder of the day working myself out of a stack of paperwork and before I new it, it was time to go home! I changed into my Pilate’s attire straight away and settled on the deck with my new Eating Clean magazine and a green monster to tide me over until dinner.
You can bet I was eager to dive into my eats when I got home! I ate one of the grilled veggie wraps with salad on the side;
In the wrap was grilled eggplant, zucchini, bell peppers and onions. Close up...
My sweet end was this fancy pants butter tart square, well, triangle;
Oh, yeah! That’s what I’m talking about!
So, I’m able to reveal the name of my mystery muffins to you all tonight, but you’ll have to wait until Saturday before I tell you where you can find the recipe for them! It’s a top secret location for now!!! **WINK WINK** Without further ado, I made a terrific batch of BANANA RHUBARB MUFFINS. They were fantastic! So good in fact, that a dozen only lasted 3 days at my place. That’s a record! And one last thing before I go enjoy the remainder of my Friday night, do not forget to enter my Full Bar Contest!

Not very often do you find FREE HEALTHY FOOD, it seems to always be the desserts and unhealthy stuff, so you were one lucky gal! Do you enjoy the Clean Eating magazine? I have only browsed one issue but am considering adding it to my subscription list.
