Well, today wraps up the most fabulous 4 day weekend! I started it out with a super bowl of oats (after showering and dressing!).
-1 cup water
-1/3 cup Quaker oats
-cinnamon, vanilla, salt
-banana
-chocolate PB2
-carob chips
This time I made up the PB2 and used at as a topping instead of mixing the power right in. This was purely for the photo as I'm one of those people that mixes all my toppings in as soon as the photo shoot is over! :)
I went to pick my sister up after dropping the kids off at school and we made our way to Whole Foods! She's the only person who truly enjoys going there with me, but our schedules don't usually jive so we don't go much. That may be a good thing for my bank account, though! Whole Foods is an hour away from me so we had some time to catch up before the fun began! I was really hoping to find some kabocha squash there because I can not find it in my town, but no such luck. The produce girl told me they'll get them in in late August. Huh. I did buy one pricey, but very worthy, honey crisp apple;
This is my absolute favourite breed of apple with ginger gold coming in a close second. I also picked up some Sahale snack mix for my boy, Pukka tea for my hubby, a 1/2lb of ground bison to try, 2 packets of Emergen-C vitamin C and some outrageously good raw cow's milk Swiss cheese;
I also bought 2 carton's of Unsweetened Almond Breeze for $2.99. I was very disturbed on Friday when I went to my 2 local haunts for the stuff only to find that the price has gone from $2.59 to $3.99. WTF???? So I was pleasantly surprised to find it cheaper at Whole Foods. The only down fall was that they were pretty much sold out so I did get any USVAB. Meh, I'll live! :)
I can't forget about the amazing grilled veggies that I brought home for my lunch. They went into a WW wrap with some of the new cheese. There was carrot, red onion, red & yellow bell pepper;
I paired it up with a bowl of grapes.
I saved some of the veg for supper. My sis and I had also planned a nice long walk to enjoy the weather. I grabbed a "mud puddle" vegan cookie and walked down to Mom and Dad's.
We ended up walking for 1.5hrs in the glorious sunshine. It would've been nice to go further, but I had to get back to pick the kids up from school. According to Google Pedometer, we walked 5.5 miles. Awesome.
I used the bison to make burgers for dinner. I mixed the meat with some onion, spices, breadcrumbs and an egg and let the patty's rest in the fridge for a bit. I ate mine on a toasted Ezekiel English muffin with a 1/4 of an avocado, a LC cheese wedge and hot peppers, mustard and mayo. I had all my grilled veggies and lone piece of roasted potato on the side;
The bison was not bad. I'm not a red meat lover so it didn't blow me away but I would buy it again. I think it would make a phenomenal chili. My hubby really enjoyed it, though! I made my burger 4oz and his was 7oz (raw)! Dessert was a piece of apple raspberry pie that eluded the camera!
Before I even ate dinner I went to my very last physio appointment! WAHOO! I'm glad to be done with that! My ankles are good to go! Well, it's time for me to go get things organized for tomorrow. Back to the work routine, ya know. I haven't had time to comment as much as I like to, but I have been reading all you fabulous blogs so if you've been missing me, I'm here! Things will be back to normal tomorrow. Have a great night!

Sounds like it was a fun weekend! Love your AM oats, I think I may have to order some of the chocolate PB2! I love when Almond Breeze goes on sale for 2/$4 at WF, I always try to stock up. USVAB is my fav too!
