Dinner for One

Before I get started on the day, I wanted to mention another GREAT give away over at Oh She Glows! I tried something a wee bit different with my oats today. I bought a box of Weetabix cereal for my boy (who calls them snowflakes) and when I got home I realized that they were in biscuit form!


He doesn’t realize this because I break it all up when he’s not looking! Anyways, I had the brilliant idea to break one up into my oats while they were on the stove top. This is what went into the pot!

-1 cup water
-1/4 cup Quaker oats
-1 weetabix biscuit
-cinnamon
-blueberries
-cashew Sahale snack mix

This was fan-TASTE-ic! (I stole that word from a commercial!) The cereal “melted” while cooking and gave the oats a nice hearty consistency. You’ll be seeing more of this combo!! :)

The morning sped along quite nicely at work. I ate a muffin around 11:30-ish.

I ate it more to put something in my tummy before my run than anything else. When I take my lunch at 12:30, I tend to get hungry during my run and then some sort of random food finds its way into my mouth as I trek through the kitchen to get back upstairs! Counter productive is what that is!

Speaking of running, no shin splints today!! Here’s my stats;

I brought a container of my bean soup for lunch today. I topped it with some jalapeno Havarti and used some Ryvita crackers to scoop it out because it was quite thick!

This soup just gets better as it sits. I think I still have 3 servings left in the freezer. DD has been taking it in her thermos, too. I also ate this apple a little later on in the day. It was a small one but packed a ton of flava!

Before I knew it the afternoon was over! YAY! I never did go out last night for milk so I stopped at the grocery store on my way home from work. I had a few glorious hours to myself as DS had extra ice time from 4:30-5:50 which my hubby took him (and DD by default) to and then they made their way to the pool for a 6:30 swimming lesson. I’m so not use to having the house to myself! It’s kinda nice every now and again!

Supper was all over the board with the fam being scattered to the 4 corners of the earth. I ended up having to make only my own supper so I decided to make a platter of veggies with a side of protein. I roasted some butternut squash fries, steamed some asparagus and sauteed some purple kale. I found some chicken in a can....probably not the most nutritious item, but it worked!

Isn't that one colourful plate?! We stopped at our favourite country store on the way home from the farm on Sunday and bought this beautiful strawberry rhubarb pie;

I decided to have a piece for dessert and I'm glad I did because there were only 2 slices left!!

The boys are home now and I bet DS is a starvin Marvin so I'm gonna go get him some grub before he fades away! :) Then it's Biggest Loser night! Hope everyone had a great day!!

  2. I love strawberry rhubarb pie! Well, I pretty much love anything rhubarb really. Mmmmm.

  3. I love that you freeze your soups and bring them in for lunch! I do the same thing. It just goes to prove that there are ways to eat healthy that don't require tons of time every day! mm I haven't had a ryvita cracker in forever- so good. Have a great night
