Wanna Know Where to Find the Muffins?

Hi, everybody! I had such a productive day today, but I have a few things to get to before I start to tell you about it. Curious about the recipe for Banana Rhubarb Muffins??? Yipee!

Back tracking to last night for a second. After I posted I went for a 1/2 hour walk to burn off some nervous energy I had going on. When I came back I felt hungry but decided to wait it out for a bit. After spending about an hour on the computer I realized the grumbles were not going away and I was really craving a bowl of cereal. I made a massive bowl of fluff to make my belly happy;
This is 1 cup each puffed wheat and millet and a handful of Three Sisters Honey Oaties and a 1/2 cup each of Silk (which I like!) and USVAB (which I am now out of).

OK...on to today. You guys will be shocked when you see that I did not eat oats for breakfast today! Every now and again I just don't feel like them and today was one of those rare occasions. Instead, I made an egg white omlette using 3 whites and chopped up pieces of tri coloured bell peppers. On the side was a toasted Ezekiel English muffin with a little spray butta. Here it is before I mangled it!

The omlette broke up but I wasn't offended. This was super tasty and filling. I didn't take long to make, but longer than oats so I don't think it's something I would take the time to do on a week day. A lot of bloggers out there have been setting up challenges for themselves and while quite a few have intrigued me, it's very hard for me to commit to any with a family and busy schedule. I decided while eating this breakfast that a challenge I could do for myself would be to eat something other than oats 1 day a week for the month of June. Baby steps, yes, but also doable for me. So today marks a quarter of the challenge done! :)

I spent the morning making the house presentable and before I knew it lunch time had rolled around! I made a superb meal for myself. I mashed up a 1/4 of an avocado with a LC wedge and spread it on 2 pieces of WW bread. That was topped with a thick slice of tomato and then the whole shebang went into the sandwich maker. Before;
And after with the rest of the salad that I brought home from work last night and a little reading material....
This was so good. I never wanted it to end. I can't wait to make another one!!!

My hubby spent most of the day building a fence between our properties and I put a solid 2 hours of gardening in as well as driving DS across town as it was photo day for soccer. He found a pretty cool rock in the yard in the shape of a heart. Check it out...
Once my back decided it was not bending over one more time, I went inside and made myself a delicious iced coffee in the Magic Bullet.
Mmm, hit the spot for sure. For dinner we ate baked salmon, rice and steamed broccoli.
You can always tell at my house when the whole family is hungry because there's no chatter, just chewing. :) Before bed last night I put some plain yogurt in the fridge to strain so i opted to have a bit of that for dessert with some pineapple jam and a sprinkle of Nature's Path Agave granola.
Who needs ice cream when you can eat this???

The kids and I are off to ride our bikes to my parents place because my niece and nephew are there and we haven't seen them in forever. My hubby will stay home to finish up the fence as it looks like rain tomorrow and the next day and the next, and on and on.

  1. Great post Krista! I like the June challenge you are doing for yourself! When I set up the 'drink more challenge' for myself last week it really worked and I've stuck with it!!

    you really shocked me with the no-oatmeal breakfast, although it looks scrumptious.... but really shocking! hahaha.... but I totally understand your life with work, kids and being a wife can be really hard in term of schedule, so your mini-challenge sounds great! :)
    I want a sandwich maker to make your lunch combo!!!!!

  7. Love your June challenge! I am doing a similar thing with dinner because I seem to be rotating the same few things all the time!

    Avocado and LC sounds really good! I've been looking for a way to get avocado into my diet (I LOVE the taste but not the texture so this is right up my street!)

  8. Wow no oats!! I actually eat some type of eggs, usually in the form of an omlette for brekfast! Can't wait for this muffin recipe!
