2 Thumbs Up!

We actually had to turn the furnace on last night! That makes me want to cry! I had a fantastic sleep, though! I put my fuzzy socks on and an extra blanket and that was that for 8 hours straight! I just LOVE being warm! Whether it’s a cozy blanket or the warm sunshine, heat makes me a happy girl. I do not like the feeling of being cold….at all. Makes me very cranky. I always say I was born in the wrong part of the world!

I had some almond butter on 2 slices of whole wheat bread for a snack last night...one with jam, one without. I really liked it this way!

On to breakfast! I was pretty eager to try the almond butter in my oats this morning! I kept it pretty simple so that I was sure to the essence of almonds would come through.

-1 cup water
-1/2 cup Quaker oats
-dash cinnamon
-1 Tbsp almond butter
-drizzle of agave

WOW! I LOVED the consistency the almond butter gave the oats! It made them very creamy somehow. Like I mentioned last night, I’m not a huge nut butter fan. I like peanut butter and all his cousins, but it’s definitely something I could live without. So I was a little nervous when I started to eat this. I must say, the first half of the bowl knocked my socks off, but by the end it started to be a bit much. I think I can fix this tiny bump in the road by using 1 ½ teaspoons of almond butter instead of the full tablespoon. This meal scored major points in the “stick to my ribs” department! I didn’t even think about (eating) food until 1pm! Now, that’s my normal lunch time, but on some days I will have a snack at 11am and on the days I don’t, I at least get a grumble in my tummy by noon. For that reason, this breakfast gets 2 thumbs up!

Look at the gorgeous flower arrangement that my co-worker received today! Isn’t that just something to sit and stare at? Her man sent them “just because”! Her man needs to have a talk with my man! They’re just the perfect fall colors! Sigh!

My lunch run today was great! My legs were a little tired, but I think it’s because I’ve been chained to my desk for the past 2 days. I found myself deep in thought on the treadmill today about how I still sometimes beat myself up over my body image. I gently reminded myself of all the wonderful things my body has accomplished, past and present. After all, I’ve been pregnant, given birth, had a few surgeries, had a few sprains, bumps and bruises (no broken bones, thank goodness!). On a daily basis, my body takes the brunt of daily activities such as numerous trips up & down stairs, the stress of a sit down job, my run, etc. When I look at life this way, I feel proud of my body and all that it does, because you know what? It hasn’t failed me yet!

My lunch today was the leftover butternut squash and zucchini from last night…

Doesn’t look so pretty today, but it was lip-smacking! I paired it up with a “silken” apple.

This was one good apple! It had a mellow flavor and lots of crunch! Crunch is a major requirement for me when it comes to apples. In my opinion, there's nothing worse than biting into a mushy apple. EEWW! At around 4pm I started getting a bit hungry so I ate my blueberry Vita Muffin. There's only one more of these little puppies left!

I had pulled out a package of chicken tenders for dinner tonight but I wasn't sure what to do with them. I decided on this recipe from GreenLiteBites.
Here's a shot of my hubby's plate because I forgot to take a picture of mine before I rolled them up in a wrap!

Quick, easy and flavors all our taste buds enjoy. As I mentioned, I turned mine into a wrap using a sun dried tomato Flatout wrap, a laughing cow cheese wedge, cranberry chutney and some romaine. I served it with a side of steamed vegetables.

Here's cross section shot!

For dessert I had a piece of whole wheat bread with a generous helping of date & nut spread. I am in love with this stuff!

After dinner I walked on the treadmill for 50 minutes while watching the top 10 countdown. I love how good music gets me up and moving!

Lunches are done and backpacks are ready....I'm going to watch The Biggest Loser premiere. Four shows that I enjoy watching are 1)Biggest Loser 2) So You Think You Can Dance 3) The Amazing race and 4) Dancing With The Stars. I also like to watch anything related to medicine like Dr.G and Mystery Diagnosis. What do you guys like to watch?

There a 2 peach bars left and I think they will turn into my evening snack...along with a coffee! And I have an interesting idea for my oats in the morning......

Bye for now!
