Muffins and Chili

Man, oh man did I ever sleep in today! I didn't wake up until 9am! Mind you, I was up until 1am, so I guess I got the same amount of sleep as usual. It goes without saying that I was starving when I woke up. After a pit stop in the washroom to brush my teeth so my breath didn't kill anyone, I bounded into the kitchen to whip up a pot of oats. Not much made it in the pot in my haste to eat!

-1 cup water
-1/2 cup Old Wessex 5-Grain cereal
-2 Tbsp wheat berries
-1/2 mashed banana
-cinnamon
-southern pecan International Delight coffee creamer

You know how food tastes extra good when you are hungry? That was how I felt about this bowl of oats.....delicious!!!

Once I was done, I settle in to make a batch of muffins. I based this recipe off of this version that I found online.

Raspberry Oatmeal Muffins

Makes 9 nice sized muffins

-2 packets of hot breakfast cereal
-1/4 cup oats
-2 tsp baking powder
-1 tsp baking soda
-1/4 tsp salt
-2 Tbsp agave nectar
-1/2 cup unsweetened vanilla almond breeze
-1/4 cup plain yogurt
-1/4 cup Egg Beaters
-1 cup frozen raspberries

*preheat oven to 400 deg
*combine all dry ingredients in a large bowl
*combine wet ingredients in a separate bowl
*Add wet to dry
*fold in raspberries
*Bake for 20 minutes

You could use any frozen berries you want...I just happened to have raspberries in the freezer. Same goes for the oatmeal. This is the kind that I used;

I did the dishes and sorted some laundry while the muffins were baking. Once they were done, I set to vacuuming the house. This usually take me 45 minutes to an hour to do. Blah. When all the cat fur was dealt with, DD and I got ready to do groceries. While we were out, we dropped 4 big bags of clothes off at a community closet by our house. By the time we got back it was after 1pm and I was starving! I whipped up a quick bagel with Sabra hummus, a Laughing Cow cheese wedge and topped it with about a 1/4 cup of egg beaters.

So much better than usual, but like breakfast, I was H-U-N-G-R-Y!!! For a sweet end I broke into one of the muffins. I put a little bit of butter on it. They taste as good as they look!

We spent the afternoon running errands. We happened to be on the side of town where Metro is so I popped in to grab a few things that I can't get at my regular grocery store.

Bob's Red Mill 7 Grain cereal and 5 grain cereal. I was psyched to see that the 5 grain stuff has the exact same ingredients as Old Wessex! Here it was available to me the whole time and I've always fretted about running out of the Old Wessex. Definitely a super find! I also bought edamame, Amy's California burgers and 5 Cravings cheesecake cups. I'm very glad I decided to make the stop!

I found a wicked chili recipe on Mara's blog, What's For Dinner, that I knew I had to try! I actually woulda made it sooner but I didn't have all the beans that I needed! Let me tell ya, it made one HUGE pot of chili! I have tons of leftovers which is just great for night's where dinner needs to be quick. It was definitely VERY good chili! I left the hot stuff out so I didn't kill my kids and I had to swap out the northern beans for more kidney beans. Those were the only changes I made. I'll post 2 photos...the one with the flash show off the chili, the one without shows off the yogurt and mozzarella cheese topping!

I'm not sure what's up for the rest of the evening. I think my parents are coming by and I might try out an energy bar recipe if I have the time, too. The boys have an early game tomorrow....6:30am....so I said that DD and I would be up on time to make pancakes for when they come home. That means no going to bed at 1am for me tonight!! Catch ya'll tomorrow!!

    I know I said this before when you donating the dog treats, but I love how you teach your children about giving. I think that is just so wonderful!

  10. That egg sandwich looks divine! I've noticed that whenever I add Sabra hummus to my sandwich it immediately gives it a ton of flavour. Love it!
