Hooray, It’s Friday!

Happy Friday! Aren’t you glad the weekend has finally arrived??? I know I am. I decided to put my baking hat on last night and whipped up a batch of Hungry Girl Caramel Pumpkin Pudding Cupcakes; 100_5818

These were easy to make and I had all the ingredients on hand. I doubled the recipe to justify starting the oven in the heat. They turned out pretty darn tasty. I tasted tested 2 of them (a few hours apart) just to make sure! :D The first one I ate had a bit of macadamia nut butter on top. 100_5806

The second, which I have no picture of, had some cinnamon honey on it. The fam ate theirs straight up and liked them that way.

Seeing as I had some leftover pumpkin puree in the fridge, I went with a bowl of pumpkin pie oats this morning; 100_5809

  • 1 cup water
  • 1/3 cup Quaker oats
  • cinnamon, pumpkin pie spice, nutmeg
  • raisins
  • pecan pieces, shredded coconut & carob chips

Mmmm…a taste of fall!

I took the afternoon off work today so I was only there for 3 hours. BONUS! I did still go to the gym before leaving, though. Talk about dedication! I munched on a cranberry apple cherry Clif Bar before heading there. 100_5810

This was not too bad but I think I’ve come to the conclusion that I prefer the non-fruit ones. I just find them cloying sweet by the time I’m half way through.

I got my sweat on using Mr. Elliptical today.

I cleaned up and made my way home to eat some lunch. The tomatoes I used couldn’t get any fresher than these were. 100_5807

I picked them off the plant, washed them and mixed them up with tuna and feta for a quick little salad. 100_5811

The reason I took the afternoon off work was so that I could go to DS’s final hockey game at camp. My hubby and DD were there, too. We could see that he improved on his skating and stick handling while at camp this week. He had a blast and was sad that the week was over. We were home in time to start preparing dinner. We went the burger route again tonight….bison burgers to be exact! Mine was served up on a WW bun with pepper jack cheese, lettuce, mayo, chipotle mustard and pickles. On the side was grilled zucchini, also picked fresh out of the garden! 100_5817

While waiting on the burgers, I finished off a bag of Pop Chips. There wasn’t much more than a serving left anyways! :/ 100_5816

These salt & pepper ones are my favourite flavour. We also tried the multi grain cheddar the other night which I did not enjoy at all. They had a horrible consistency to them and the cheddar flavour tasted really fake. All the other kinds are light and crisp….and addicting!

Tonight will be spent pretty low key. I have plans to read my book until my eyes droop! I’ve also got a bowl of Maple Walnut froyo with my name on it. Mmmmmm….

  5. I love Clif bars, but I think that flavor was actually my least favorite of them all. I much prefer the chocolate chip:)

  6. I've been thinking about buying Hungry Girl's book. It just seems like I wouldn't make too many of her things because she uses a lot of packaged, processed foods in her recipes. What do you think?

  8. Haven't tried those cupcakes yet, but they look like they would def justify turning on the oven!! ;-)

    I will keep an eye out for the yellow tomatoes for sure! Maybe our farmer's market will have em'. Have a good weekend!

  13. It's too bad that Clif bar is too sweet, because the apple/cranberry/cherry combo sounds like it would be rather tasty.
