So, to all of you who guessed that ice cream was the treat last night, you would be right!!! Not just any ice cream though….I indulged in a Blizzard! I had 2 BOGO free coupons that turned out to be for medium treats! So we got 4 for $9.82 instead of $19.20. SCORE! Not sure that there is a formal name for the one I had. The location we were at seemed to only have chocolaty flavours and I abhor cold chocolate. The only fruity one they had was strawberry cheesequake and I wasn’t feeling it. I asked if they could make me a Hawaiian and she told me they don’t make it anymore. I then politely reminded her that they should have all the ingredients for one so she conceded. Well, all she put in it was strawberries and pineapple!
Oh, well…it was good and I did finish it! You will likely see a few more Blizzards over the next few months!
I didn’t bring dates for my morning sugar hit….I brought dried figs!
Missed these little nuggets!
The gym was pretty busy today and I was lucky to snag the elliptical for 30 minutes. I thought about doing some strength, but the area was just too busy so I bailed at that point. I spent the last ½ hour of my lunch at home flipping some laundry that I put in the machine this morning and going through the mail. Here are my workout stats;
Time: 30 minutes
Avg HR: 158
Max HR: 174
Calories Burned: 282
Distance: 3.4 miles
Lunch today was a serving of chickpea curry over fresh broccoli.
This lunch always does its job filling me up. And later in the day I ate part of this orange….
On to more rhubarb! After getting the kids tucked in last night I decided it was time to try this recipe out for rhubarb squares. I of course made some changes because that’s just me. I can not bring myself to bake anything with butter or oil anymore so I subbed out the butter for ½ cup of unsweetened applesauce. I also used WW flour instead of white and I only had orange jello powder so that’s what I used. Last but not least, I cut the glaze recipe in half and drizzled it over top of the bars. Here we are pre-cutting….
And this is the square that I brought to work with me;

I split it in half and enjoyed part n the morning and part in the afternoon. I really like the way this recipe turned out! Most delicious. I ran it through the Spark People recipe builder came came up with 119 calories, .8g fat, 2.1 for both fibre and protein. Not bad! Thanks for pointing me your way, CaSaundraLeigh!
For dinner tonight I cubed up a chicken breast and cooked it through. Then I added some TJ's Mojito simmering sauce to it. While that was cooking, I prepared a serving of TJ's Harvest Blend Grains as a base. All together now....
My sweet end was a bowl of stewed rhubarb with a dollop of Cool Whip Free on top,
I just now got back from physio where I had another round of acupuncture. Once I'm done posting I have that laundry to fold, rhubarb to clean and chop and kitty litter to scoop. I know you're all green with envy over this! May you all enjoy and more pleasurable evening!
