Solo Monday

Happy Monday everybody!

Before I went to bed last night I decided to try an envelope of this Emergen-C vitamin C to try and get rid of this sore throat business I had going on.

I DID NOT like this. It tasted like ass. That being said, I choked back 3/4 of it and although I still woke up with an unhappy throat, it cleared up by mid morning. I guess I have to give it props for that.

On to breakfast, shall we? 100_5116

  • 1 cup water
  • 1/3 cup Red River cereal
  • cinnamon
  • blueberries
  • TJ’s raw almond butter
  • cinnamon honey
  • hemp seeds

Now this was all kinds of good…if off centre!

I was the only one in the payroll department today and regardless of the never ending phone calls, I got a lot of stuff done! Before I knew it, it was 11:15—time for my snack-a-roo! I enjoyed half of this Banana Nut Bread Clif Bar along with a handful of cherries; 100_5117

I saved the rest of the bar for after lunch. I didn’t take any breaks today so I utilized some of that time on my lunch hour in the gym. I went with a set interval program on the treadmill today for 1 hour. Being mindful of my body not being 100%, I kept the speeds relatively slow. The intervals were one minute in length with a 3% incline at 5mph and flat at 6.1mph.

  • Time: 1 hour
  • Avg Hr: 160
  • Max Hr: 170
  • Calories Burned: 587
  • Distance: 5.6 miles

I felt really good after doing this. I was worried that I’d wipe myself out, but it only made me feel better!

Lunch was a big, beautiful salad; 100_5121

  • romaine & red leaf lettuce
  • red, yellow and orange bell peppers
  • carrot
  • hard boiled egg
  • Kraft Fig Balsamic dressing

Lots of vegetables = Krista feeling mighty fine! Much later in the afternoon…like 4pm….I finally dug into my sweet mango, which I managed to mangle while cutting! 100_5122

I had pulled chicken breasts out for dinner but my hubby didn’t see them in the sink (not sure how he missed them!) and already had store bought pizza in the oven for them. Without much time to get something ready for myself, I threw together a toasted Ezekiel English muffin with a 1/4 cup of egg beaters, Sabra hummus and a slice of pepper Jack cheese. There was also half a peach on the side that I had split with DD. Dinner is served! 100_5123

And for dessert I ate my cherry pistachio cookie that has been patiently waiting for me! 100_5125

I <3 this flavour like no tomorrow! Pretty much as soon as we finished eating we were out the door for soccer. I can’t believe the season is almost over! YIKES! Before I know it, we’ll be back into cold hockey rinks. **SHUDDER**

Lunch is figured out for tomorrow already. I just need to chop up the watermelon that I bought at the market on Saturday and then it’s Law & Order time. Hope you’re all having a fabulous evening!

Bye for now!!

  5. I don't really know how effective those Emergen-C's are - you will just end up peeing out any excess vitamin C your body doesn't need, and a dose of 1000mg is way more than you would ever need. Might be better off spending your money on an orange instead? But that's just me.

And I'm excited it's closer to hockey season! I live for the rink :D

  6. My mom used to make me take Emergen-C whenever she though I was coming down with something. I hate the taste! That mango looks like it made up for it though.

  8. your dinner looks like one of my favorite breakfast combo, it's sooo good! :)

I hate packaged C too, they are really gross. What about natural shot of vitamin C like a very lemon lemonade?

  11. Uhh I hate Emergen-C! I made myself drink it in college last year constantly to try to ward of potential illnesses--I think it worked ha.

Hope your soar throat goes away though--they are never fun, but fresh food always makes me feel better :-)

P.s. I don't like the mention of hockey rinks!!! Brrr!
